Banana Bundt Cake

Another Monday. Another exhaustive start to the week.

Pricer and I kicked some garden butt this weekend. He worked in back attacking weeds and digging out the million rocks and chunks of broken concrete in the ground there. (Major thanks to the contractors, who instead of having the chunks of the driveway they dug into hauled away, just threw all of it into the garden. THANKS d-bags.) I worked in front digging up part of the lawn to plant some flowers and some seeds for 5 varieties of flowers, including moon flowers and canterbury bells. Plus some container work transplanting some little trees into bigger pots and prepping for some summer veggies and herbs.

Moist banana cake topped with a dreamy cream cheese frosting. It would totally work for dessert or breakfast. Right?!?!

I just made this cake last week but I’ve already planned on making it again soon. I bought more bananas for them to chill out and get nice and soft so they can be whipped up into this stunning cake.

This month’s Secret Recipe Club recipe is from K&K Test Kitchen. Mother and daughter duo, Kim and Kelesy, started the blog in 2010 as a creative outlet to be able to document and share cooking adventures with family and friends. Since they they have made some fantastic recipes that had me really interested when i was browsing their blog.

It’s funny tho. As I scrolled through the recipe index I saw their Banana Bundt Cake and immediatly knew that tthe recipe that I would make. Still I browsed aorund and saw some great recipes that I wrote down just to give a try one day. Like this Sun-dried Tomato, Corn, and Bacon Pasta sounds awesome. And I think I’ll have to make this Strawberry Peach Sangria one day for Thirsty Thursday.

Banana Bundt Cake

Makes 8-12 servings

Ingredients

  • 1 cup all-purpose flour
  • 2 cups cake flour
  • 1 package vanilla instant pudding
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter at room temperature
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 2 teaspoons pure vanilla extract
  • 2 large eggs
  • 3 very ripe bananas, mashed
  • 1 cup greek yogurt

Process

  1. Preheat the oven to 350°F. Prepare a large Bundt Pan by generously buttering and then lightly dusting the sides with flour.
  2. Whisk the flours, pudding mix, baking soda, and salt together.
  3. Beat the butter until creamy. Add the sugars and beat at medium speed until pale and fluffy. Beat in the vanilla extract. Then add the eggs, one at a time, beating for about 1 minute after each egg.
  4. Reduce the mixer speed to low and mix in the bananas. Finally, mix in half the dry ingredients, all the greek yogurt, and then the rest of the flour mixture.
  5. Scrape the batter into the pan, rap the pan on the counter to de-bubble the batter and smooth the top.
  6. Bake for 65 to 75 minutes, or until a thin knife inserted deep into the center of the cake comes out clean. Check the cake after about 30 minutes, if it is browning too quickly, cover it loosely with a foil tent.
  7. Transfer the cake to a rack and cool for 10 minutes before unmolding on the rack to cool to room temp.

Cream Cheese Frosting

Ingredients

  • 8 ounces cream cheese
  • 1 cup powdered sugar
  • 1/3 cup milk
  • 1 teaspoon vanilla extract

Process

  1. Beat cream cheese and the powdered sugar until smooth.
  2. Add the milk and vanilla extract, beat again until it is thoroughly mixed and spreadable. Add more cream if you want a thinner icing.
  3. Spread onto the cooled cake.

No Bake Peanut Butter Bars

I’m totally loving following along the different races to create a new recipe for each race in my Sprint Cup Snacks series. I’m learning more about regional foods and trying out new things as well. Like I had never made BBQ sauce before when I made the Homemade Jack Daniel’s BBQ Sauce for the Food City 500 @ Bristol Motor Speedway in Bristol, TN. What was I waiting for? So good! And I’ve been seriously addicted to the Ham and Cheese Sliders I made for the STP Gas Booster 500 @ Martinsville Speedway in  Martinsville, VA. I think they are going to make another appearance at our house this weekend. Total noms.

So we’re back to the “Old Dominion” state with this weekend’s race in Richmond, VA. I looked into what foods Virginia is famous for and of course there were plenty of seafood options for the area along the Atlantic coast and wines in the mountains in the Western part of the state. And then I found out there are peanut farms! Oh my so in love with peanut butter right now. I found these no bake peanut butter bars and knew that I had to make them for this race.

These no bake peanut butter bars are soo super easy and soo good. In all it took me about 10 minutes to put together and then I just had to wait for it to chill and set up. That’s it! I love how simple they were to make but I love jsut how good they are even more. They taste just like a Reese’s peanut butter cup!!

So here’s the thing… the first piece that you cut out of the pan will get all ugly from you scooping it out. That is your piece to sneak while you are in the kitchen before you serve them. See you were just looking out for your guests and you couldn’t give them them an ‘ugly’ bar. Gotta take one for the team!  😛

No Bake Peanut Butter Bars

Makes up to 32 squares

Ingredients

  • 1 cup butter melted
  • 2 cups graham cracker crumbs
  • 2 cups powdered sugar
  • 1 cup + 4 tablespoons peanut butter
  • 1 1/2 cups semisweet chocolate chips

Process

  1. In a medium bowl, mix together the melted butter, graham cracker crumbs, powdered sugar, and 1 cup of the peanut butter until well blended.
  2. Press evenly into the bottom of an ungreased 9×13 inch pan.
  3. Melt the chocolate chips with the remaining 4 tablespoons of peanut butter, stirring occasionally until smooth. Spread the melted chocolate over the peanut butter layer.
  4. Refrigerate for at least one hour before cutting into squares.

{Sprint Cup Snacks Track Facts}

Another great night race this weekend! All of the races held at Richmond International Raceway are ‘held under the lights’. Richmond was built in 1946 and since then has evolved to become a state of the art facility with a Video Scoring Tower that boasts more LED square footage than any other track in the motorsports industry. There are four high definition LED screens that come together to measure 38-feet wide by 24-feet high. Are we going to see Kyle Busch on that screen in the winner’s circle again this year? The younger Busch has won the last 4 Toyota Owners 400 races at Richmond International Raceway. Can he do it again this year?!?!

Banking: 8 degree banking in the front stretch, 2 degree in the back stretch, and 14 degrees in the turns

Low Carb Peanut Butter Chocolate Chunk Cookies & a Party!!

Low Carb Peanut Butter Chocolate Chunk Cookies

Ever since we got our dog Kemper we’ve been dipping into the peanut butter jar for a little treat for him. And, of course, we slip our spoon in once more for an extra bit for ourselves. I’ve fallen head over heels back in love with peanut butter.

So when I had a chance to make these Low Carb Peanut Butter Chocolate Chunk Cookies from Harvard Sweet Boutique I could not pass it up! Peanut Butter & Chocolate are always a win but then you can say you’re being healthy since they are low carb!!! Seriously, such good cookies with only 12grams of carbs per 1-oz cookie!

Low Carb Peanut Butter Chocolate Chunk Cookies

Makes 30 1-oz cookies

Ingredients

  • 8 ounces (1 stick) unsalted butter (room temperature)
  • 1/2 cup peanut butter (creamy)
  • 1/2 cup light brown sugar
  • 1/2 cup sugar
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 1 1/4 cup flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup semisweet chocolate chunks

Process

  1. Preheat oven to 350 degrees and prepare baking sheets with parchment paper.
  2. Sift together flour, baking soda and salt and whisk to mix. Set aside.
  3. Cream together the butter, peanut butter, light brown sugar and sugar with mixer.
  4. Add the egg and vanilla extract, mix well.
  5. Add the flour mixture to the peanut butter mixture and stir until just blended.
  6. Add the chocolate chunks and mix well.
  7. Portion out 30 1-oz cookies onto baking sheets and bake 12-14 minutes, until golden brown.

You know who loves bacon? Our dog! Well, he loves the smell of it and sits in the kitchen desperately hoping he will get it. I see his little squish nose smelling the air frantically taking it all in. I’m sure he’s hoping that I’d use that to train him to ‘come’, ‘sit’ or ‘gimme paw’ but no way Jose!

Poor little Kempers had to endure while I made this Bacon Jalapeno Cornbread. Those poor little puppy eyes. But I didn’t crack! That bacon was for our cornbread!

And man, this cornbread is so good! It’s a very nice texture and of course the flavor is great. While I love sweet, dense cornbread this is savory and very light in density. The jalapeno gives it a nice little spicy edge. And of course anything with bacon kicks ass.

So, how did I pick cornbread for this week’s Sprint Cup Snack for this weekend’s race in Kansas? Well, Kansas is located in the bread basket and is known for their corn production. Well didn’t that just work out perfectly?

Bacon Jalapeno Cornbread_B

Eat ’em up!

Bacon Jalapeno Cornbread

Makes 6 servings

Ingredients

  • 2 tablespoons canola oil
  • 2 cups corn meal
  • 1 cup flour
  • 1 tablespoon baking powder
  • 1 teaspoon kosher salt
  • 1/4 cup sugar
  • 2 cups buttermilk
  • 2 large eggs, lightly beaten
  • 1/2 stick of butter, melted and cooled
  • 2 jalapenos, minced
  • 6 strips of cooked bacon, diced

Process

  1. Cover the surface of the 10-inch cast iron skillet with the canola oil. 
  2. Place the skillet in the oven while preheating the oven to 400 degrees.
  3. Combine the corn meal, flour, baking soda, salt, and sugar in a large bowl.
  4. Combine the buttermilk, eggs, and butter together.
  5. Gently mix the wet ingredients into the dry ingredients. Do not over mix.
  6. Carefully remove the hot skillet from the oven and pour the batter into the skillet. Bake for 25-30 minutes, until golden brown.

*I used a Scone & Cornbread Pan so I had some extra batter that I used to make 12 additional mini muffins, that I cooked for about 7 minutes.

This is just the 3rd STP400 being held. When NASCAR changed up their schedule in 2011 this race was added to the schedule, in addition to the fall race at Kansas Motor Speedway. The speedway was built in 2001 to fulfill the need to have another Midwest track. Since then the economy in the area has been booming with new shopping center developments and hotels.

Banking: 10.4-11 degree banking in the front stretch, 5 degree in the back stretch, and 17-20 degrees in the turns.

My city

Boston (and the surrounding towns of Brookline, Newton, and Chelsea) has been my home since late August 2003. I am approaching my 10 yr anniversary of when we packed up my stuff into a u-haul and my mom and step dad moved me up to my cute studio apartment at Beacon Street and Mass Ave. I left everything I knew behind in CT to go to a new to me city to attend Boston Architectural College.

I was setting forth on my own little adventure in Boston.

I always joke/whine that Boston is not a city all because of its size and my long-standing relationship with NYC. But it is a great little city that has captured my heart. I love to wander around the different neighborhoods when we have time to. While I joke how small it is, I also enjoy that it is so small and you can practically walk end to end taking it all in.

It is well-known that I do not like winter but when the snow is lightly falling on The Common or at the old cemeteries across from where I work I can’t help but smile as the city gets a new white start that day.

Then in the spring as the magnolia blossoms are opening wide along the Commonwealth Avenue Mall I take that in. I loved it the first spring I was here and I love it still. I push the limits and wear flip-flops far to soon but love the warm days that are woven between the days that still have a chill in the air.

My favorite season is summer with heat radiating off the pavement and  my hair sticks to my neck from the humidity. The city is alive with events and people all around soakng up the summer sun. I can’t miss an opportunity to sit on the greenway and watch kids run through the fountains while I enjoy a lunch from a food truck.

And the fall is lovely in New England so it goes without a doubt to say that Boston has a special feel about it when the air gets crisp and cool again.

I’m still quite in shock when I think about the attack on Boston yesterday along the Boston Marathon route. I find attacks like this cowardly. How dare you harm innocent people cheering on family and friends doing something they love? How dare you?!?

As much as this incident is horrible, horrific, and senseless, I am reminded of how much good there is in the world as I hear stories and see images of people helping out at the explosion sites or by opening their homes up to people who couldn’t get back to their hotels.

This will only make us stronger.

We took the Chicago Architectural River Cruise run by the  Chicago Architecture Foundation when we went to Chicago for Price’s 30th birthday back in September. I wanted to share the pictures now as the 2013 season kicked off yesterday.

We had so much fun and learned so much while on the tour from our tour guide. I’m so glad we went and I would go again the in future as it was just a nice way to see Chicago.

Stitch Fix- April (1)

So another month, another Stitch Fix order!!!

This month my package arrived on Monday, but arrived to my desk on Tuesday after it was sorted in our office building to get to our offices. Anyway, happy clap when I got into work and saw it waiting for me. 🙂

I immediately went through this month’s package to take a peak at everything. Some of my first impressions were correct and others were off. Either way, fun to get a surprise every month and discover something new for yourself.

Here are my reviews for each item:

Stitch Fix_April_1- Skinny Jeans

Coral color skinny jeans- $88

Loved the color, but I didn’t like that they were skinny jeans and their price. I’m too damn short and curvy for skinny jeans that are that skinny. Plus I can get a pair of Loft Curvy Skinny’s for much less.

Stitch Fix_April_1- Necklace

Long gold necklace- $33

I kept this because I liked the length, texture, and design. I liked that it was fairly simple and affordable for a necklace. I’ve already worn it 4 times. win

Stitch Fix_April_1- Navy Blouse

Navy tie front blouse- $65

Oh, a blouse. Oh, a blouse that doesn’t fit. Big surprise. Stupid boobs.  The top fit in my waist and arms but not where the melons reside. I loved the material and the color. Shame it was a blouse.

So I put this on and fell in love with it. Loved the fit and style and really liked the collar detail. I wanted to keep this so badly. But when I wore it down and Price stared at me. I couldn’t pull off a SHEER top to work. I even tried by putting a tank under it but it looked awful that way too. Had this top been white but not sheer I would have considered keeping it a lot more, although white makes this spill proned klutz very nervous. I was thinking about it and if this was the navy like the blouse (above) I would have kept it without a second though. Too bad.

Stitch Fix_April_1- Sweater

Striped Sweater- $75

Loved the texture, weight, and cut of the sweater. Not sold on stripes, esp in those colors but I did like it. And then, I put it on and showed Pricer and I got a “hmm, not my favorite.” Well I’m not gonna spend $75 on something that neither of us are 100% on.

I sent back the 4 items I wasn’t keeping and I gave feedback for each item, similar to what I did above, as well as some overall statements. I requested…

  • not to get any more button down blouses as they don’t fit me in the bust but fit me in the waist and arms. I would rather not have to go up a size and deal with other areas that don’t fit well just to make a blouse work. 
  • more dresses. loved the dress from my first fix and I love to wear dresses in spring summer so i’m hoping to see them more in my stitch fixes.
  • more accessories. i’m hoping to get some fun rings, necklaces, and earrings.
  • flowy things. I loved how flowy the contrast collar top was so I’d love more things similar to that.
  • open front sweaters. not cardis with buttons (similar situation to blouses), but open sweaters like this and this

I would have had pictures of everything on me this time but I just didn’t have time like before to try everything on at once and take pictures. I barely even had time to take this pictures- such a crazy week. I promise to have the try on pictures next time.  Since I only kept the necklace I requested to get my next box earlier so I will get another Stitch Fix package in April.
