Slow Roasted Tomatoes

What do you do when you buy 3 dry pints of grape tomatoes only to realize you don’t want to make what you initially planned? You wait several days until you are annoyed that they are sitting on you counter and finally cave about putting the oven on in the summer. Why would you be crazy to put an oven on for hours in the summer? Because you end up with delightful tomato candy morsels!

I have made oven roasted tomatoes previously to toss into pasta, however they have been larger tomatoes and only roasted enough to get a nice intense flavor, without loosing the moisture. In this case, I used the pop in your mouth grape tomato and let them take a long warm sauna in the oven. After they trip to the spa, the emerge has sweet intense tomatoes that are pop in your mouth good. If you have a tiny bit of control and don’t inhale them, then you can toss them in pasta, put on sandwiches, add to salads, or even add to a cream sauce over chicken breasts. Simply put, this is a easy way of making a great add in for recipes or using up a ton of tomatoes you bought on sale.

The tomatoes are joyously easy to make… Halve, slightly coat in olive oil, and a little bit of salt and pepper, toss in the oven. You don’t even need to move them, flip them, think about them much for 2 hours. The ‘hardest’ part it getting them all face up on the cookie sheets. I missed 2 and those suckers burned and are requiring a lot of elbow grease to get off my non-stick cookie sheets.

Slow Roasted Tomatoes

Grape or cherry tomatoes
Olive oil
Salt and pepper

Preheat oven to 250.

Use non-stick baking sheets, or line sheets with parchment paper.

Halve the tomatoes longitudinally.

Toss tomatoes with olive oil, salt, and pepper.

Place tomatoes with their cut face up on the baking sheets.

Bake for 2 hours, our until tomatoes are shriveled and leathery. Be sure not to let them burn!

Eat right away or place in a vessel, cover with olive oil, and store in the refrigerator.

Peter Cottontail

On the first day of summer Price and I headed out for a walk, as previously blogged about HERE. What I did not include in that post were there lovely photos of a handsome/pretty little bun. Truthfully, I have no idea if it was a boy or girl. It had ears and a cute little tail so that is all that matters, but for the purpose of this post the rabbit will be male.

I absolutely love that any time Price sees a rabbit he points it out to me. When he spied this his arm went right in front of me, like how a mom snaps her arm out to guard her kid when she has to slam on the brakes. I was in la-la world enjoying the first day of summer and he broke that la-la moment to point out this little guy.

Once we (I) quieted down, Price started to snap photos of this Peter (obviously that is his name!). He flopped down in the dirt and rolled around. A rabbit that flops is very calm and happy so it was surprising for us to see this from a wild rabbit so close by.

We slowly edged our way closer to get back to our car while trying not to scare it. This took several minutes. This gave Price the perfect opportunity to take pictures and mosquitoes to attack two silent slowly moving warm blooded people.

Peter finally decided that we were just a bit to close to be laying down so he hopped up exposting that lovely white tail of his.

How Martha Were You?

Another weekend went by in a blur. I enjoy that Price and I are starting a Friday night tradition with sushi. The neighborhood is really different than where we were before so I am adjusting to the limited selection of places but this sushi place is really good.

Friday Night-

I got up early and went to Haymarket for veggies and fruit for us and the rabbits

Back home- lots of cleaning and still lots of unpacking. The living room is starting to come together. I unpacked all the books and set them on the bookcases. I need to purge my damn books!!!

Price and I went to Home Depot for a few things, including a MArtha Stewart Mirror for our bathroom.


I set up my crafting station and enjoyed getting crafty. I worked on a scrapbooking page. It felt good to be able to work on a layout- been too long!


We slept in a bit, nice for a change.

Enjoyed Sunday Morning, the paper, breakfast.

More cleaning, laundry, crafts!!

I played around with my new camera taking pictures.

I made oven roasted tomatoes! The oven was on for a long time but it was worth it.

Summer Solstice

Being that yesterday was the ‘longest’ day of the year, Price and I decided to go out for a walk to soak up all the sun. I suggested that we check out Hammond Pond Reservation since it was close by and it seemed large enough for us to wander around without doing loops, like the reservoir.

Another reason I suggested going there was that it could give me a chance to play around with my NEW camera. I picked up a Nikon DSLR D3100 because my point and shoot is dying and I wanted to be able to take some better pictures than what that camera offered. So thanks to my Big G bonus and a target sale I picked up my first DSLR camera!

So we wandered around the area and snapped photos here and there. This is when I noticed that I got some bleach on my pants. awesome.

I wanted to stay and take more pictures of this Mountain Laurel but we were both dumb and didn’t put on any bug spray.  I felt like I was honing my cat like reflexes smacking them off my arms, legs and face.

I’m hoping to come back to the pond mid day on a weekend so see all the lilies in bloom.

Happy Father’s Day weekend!

Friday Night-

happy it was friday and that I wore a knit tank top that my mom made for me

stayed a bit later at work

met Natalie in Coolidge Corner for dinner at Zaftigs

We went to Target where I bought bathroom accessories, in the wrong color needed. I’m a genius!

Natalie dropped me off at poker since Price and Jason were playing. I quietly hung around trying not to impose on guys night so that I could give them a ride when they were done since they were boozing. I painted my nails.

Home a bit before 1am

on my way back home I saw people already waiting for the Bruins parade

put together our sofa.

Comcast came an hour and a half late. I tried not to kill him. Thankfully Price dealt with the guy.
