Florida has been experiencing winter this week!
It’s basically been unbearable in the mornings! It’s been in the low 40’s!!!! OMG!!! It’s the end of the world!!!
Ha! In reality, I love this bit of reprieve from the HOT temps that ranged all summer (Sept was the hottest month on record here!!!), and I think it’s nice to have some cool morning temps. The funniest is when I go to drop off Autumn and I am wearing shorts and a T shirt, or flip flops and jeans with a tank and all the other parents are so bundled up. It’s not that I am not cold, but I am just enjoying being cold for a little bit.
With lows in the 40’s and highs in the 60’s this week, it’s basically weather to put on the heat, but I am trying my hardest not to. So my solution is to bake and cook. I made a GIANT vat of marina sauce with short ribs, 2 kinds of sausage, and tons of meatballs on Wednesday. And, so much baking! Banana bread from Chrissy Teigen’s new book, cookies, and these awesome Fluffernutter Bars, are just a few things that I have whipped up.
These Fluffernutter Bars are from Untraditional Desserts: 100 Classic Treats with a Twist by Allison Miller. Allison blogs at Tornadough Alli, and her awesome new cookbook just came out. I am in love with it!!!
The book is full fun, extraordinary cakes and cheesecakes. There are plenty of tasty cookies and brownies. And, delicious breakfast treats too! I love how creative Alli is with all of her recipes like her Lemon Zinger Cake, Oatmeal Cream Pie Cheesecake, Snickers Slab Pie, Peach Cobbler Cookies, Mocha Frappe Cupcakes, and Pecan Pie Granola. Best of all, there is a beautiful picture with each recipe. I love cookbooks with photos so this is going to be a favorite of mine.
In the end I selected her Fluffernutter Bars because they sounds so good. I just can’t resist desserts with peanut butter in them! I love peanut butter. I love it in treats and just in sandwiches. Or just from the jar. I even have gotten the kids hooked on peanut butter and jelly sandwiches. Of course, that it a classic, but Flutternutters are even better!
Did you know that Flutternutters were invested in Somerville, MA. That was just a short drive from where I live when I lived in Boston. They even had a flutternutter festival to celebrate the love of Flutternutter Sandwiches. I get it, peanut butter and marshmallow Fluff are so good.
Anyway, Allison’s Fluffernutter Bars recipe rocks! They taste just like the classic sandwich, but with a fun dessert twist. It was just like biting into a sandwich, but it was very fun that it was a dessert.
The only change I made from her recipe is that her recipe says it makes 12-15 bars, but I cut mine into 24 smaller bars. Then I could share with more people! 🙂 Cut into any size bars- just be prepared that they will disappear quickly because everyone will love them.

More Yummy Peanut Butter Recipes
For the bars
- 1 1/2 Cups all-purpose flour
- 1/2 teaspoon salt
- 3/4 Cup unsalted butter, melted
- 1 Cup brown sugar
- 1/2 Cup granulated sugar
- 2 eggs, at room temperature
- 2 teaspoons vanilla extract
- 3/4 creamy peanut butter
- Creamy Peanut Butter
For the Frosting
- 1/2 Cup unsalted butter, at room temperature
- 1 7- ounce container marshmallow fluff
- 2 Cups Powdered Sugar
- 1/2 Cup chopped dry roasted peanuts, unsalted
- Preheat your oven to 350F.
- Prepare your 9x13 pan by spraying with non-stick cooking spray. Set aside.
- In a small bowl, combine the flour and salt. Set aside.
- Using a stand mixer or a hand mixer and a bowl, beat together the butter, brown sugar, and sugar until well blended.
- Beat in the eggs and vanilla extract until incorporated. Add in the peanut butter, and continue to beat until fully incorporated.
- Slowly add in the dry ingredients, mix until just combined.
- Spread into the prepared pan.
- Bake for 25-30 minutes, until golden and a tooth pick inserted into the center is clean upon removal. Let cool on a rack.
- To make the frosting, beat together the butter and marshmallow fluff. Slowly add the powdered sugar; beat until well blended and fluffy.
- Spread the frosting on the cooled bars. Sprinkle with the peanuts on top and then cut.
