This is sure to feed a hungry crowd that will feed a hungry crowd for breakfast and that doesn’t require you waking before the sun to get it on the table in time. Great for sleep overs or big family get togethers.
I grew up by an amazing deli where they made THE BEST bacon, egg, and cheese sandwiches. The 2 eggs were cooked perfectly so they we not runny but still a bit jammy in the middle. The strips of bacon were lightly chewy, slightly crunchy. American cheese getting all melty on those eggs and bacon, rounded out that perfect sandwich. All of that was served on a poppy seed kaiser roll. I’m 1,300 miles away now and I’m still always craving their breakfast sandwiches.
Unfortunately, I am so far away, but it means that I now am a bacon egg and cheese pro. We enjoy them on the weekends, when we aren’t running off doing some fun activity. They are simple, but you have to make them just right to make them perfect. (One day I will blog all my tips to make them!)

I am always looking out for a great deal at the grocery store so I always plan to buying things that are on sale and with coupons. Thankfully, it seems that packages of bacon are BOGO quite often. Whenever I can, I stock up because bacon is great in just about everything from breakfast dishes, in BLTs for lunch, and in soups at dinner.
I also snagged the bagels on sale as they were a bit past their prime, which is perfect for a recipe like this! Snag that day old bread for breakfast casseroles and bread puddings.
My kids like to help in the kitchen and this is a great recipe that they can help with. While you do the things like making the bacon, they can be helping out with other things like cracking the eggs, then beat them with the milk. I cut these bagel pieces but they can do a great job just by ripping them.
It really is great once you have kids old enough to help in the kitchen. They can help make things easier for you, which is great, especially before your coffee has kicked in. LOL! Plus, it helps them connect with the foods they eat, more likely being willing to try something new too.
