Pumpkin Cake Mix Sandwich Cookies with Maple Cream Cheese Filling- The perfect fall cookie treat that you can whip up in around hour. Fun and yummy!

Ingredients
For the Cookies
  • 1/2 Cup vegetable oil
  • 2 eggs
  • 15.25 ounce package of pumpkin cake mix
For the Maple Cream Cheese Filling
  • 4 ounces of cream cheese
  • 2 + Cups powdered sugar
  • 1 Tablespoon Maple Syrup
  • 1 Teaspoon vanilla extract
Instructions
  1. Preheat oven to 350F degrees. Place a non-stick silicone baking mat on a large cookie sheet. (Preferably, prepare 2 cookie sheets at once)
  2. Combine all the ingredients for the cookies. Mix well.
  3. Using half of the mix, spoon 24 equally sized cookies onto the cookie sheets.
  4. Bake for 8-10 minutes, until just set. Let the cookies cool on the cookie sheet for a few minutes to allow of them to firm up in the center. Remove to continue to cool on a cooling rack.
  5. Repeat for the rest of the cookies.
  6. While the cookies are cooling, combine all of the ingredients for the filling in the bowl of a stand mixer. Beat well, until light and fluffy. Add more powdered sugar, if needed.
  7. Once the cookies are cooled, evening divide the filling onto 12 cookies. Top with the other cookies, making the sandwiches.
  8. Store in an air-tight container in the refrigerator for up to 3 days.
