Ingredients
  • 12 ounces pecans
  • 3 eggs
  • 1 Cup light corn syrup
  • 1 Cup sugar
  • 1/4 Cup melted butter
  • 1 Tablespoon bourbon
  • 1 teaspoon vanilla extract or vanilla bean paste
  • 1 9 " frozen deep dish pie crust
Instructions
  1. Finely chop the pecans, set aside
  2. In a large bowl, beat the eggs. Add the corn syrup, sugar, butter, bourbon, and vanilla extract. Mix well.
  3. Mix in the chopped pecans.
  4. Pour into the pie crust. Place on on sheet pan- to catch any spills if it bubbles over a bit.
  5. Bake for for 60-70 minutes- until just set in the center. Remove from oven and place on a wire rack for cooling. Let cool for at least 2 hours prior to serving.
