Chocolatey Banana Burritos

Oh, what a weekend!!!

Our poor Autumn had a rough night on Friday and that continued on with a crummy Saturday. We noticed that she started to get warm, and then hot, and then really hot. I called the Dr and we headed over to see what was going on.

The on-call Dr was impressed with how well she behaved and listened to her requests, especially since she had a fever of 102.6 AND a double ear infection. I was so surprised by that diagnosis as she wasn’t pulling on her ears at all, but the Dr said that everyone shows symptoms and pain differently.

So Saturday was about napping and keeping her propped up to take pressure off her ears. The cuddles were the best, but I really could have done without the almost non-stop whining, crying, screaming. Poor baby!

So after a crummy Saturday I wanted to kick Sunday off with a bang to start off a great day and Father’s Day, so I made dessert for breakfast. Yep!!!

I was so excited to make these Banana Burritos that I skipped breakfast, lunch, and dinner and  jumped right to dessert. Seriously. And it was worth it. So worth it. I mean, breakfast for dinner is awesome, but dessert for dinner is even better.

Moments like that make me really excited to participate in Secret Recipe Club. I love getting ‘forced’ to make recipes from different blogs. It keeps me inspired when I’m feeling blah and don’t feel like doing much of anything, let alone making food, especially something fun and new… like when your toddler has a ranging fever and double ear infection.

But getting Christie’s blog, A Kitchen Hoor’s Adventures, this month really made my weekend. We enjoyed going through all her different recipes. SOOO many recipes. We first considered making the Twice Baked Potato Frittata and Cannoli Ice Cream with Pistachios and Chocolate. I was really set on making her Cordon Blue Skillet Pasta. But at the last minute I changed my mind. I was staring at a pile of 8 bananas and back to the laptop I went to look for some banaa based recipes. Low and behold, Christie loves banana recipes just like me, so I changed things up and picked these Banana Burritos.

I couldn’t resist changing things up slightly. I had to toss in mini chocolate chips just to jazz things up even more. You can totally leave them out. But I was having a moment when I just needed chocolate. You know, the one when you are exhausted because your toddler slept ON you in bed. And your jealous dog whined so much your husband caved and allowed him in bed. Ugh!

Chocolatey Banana Dessert Burritos

Makes 4 burritos

Ingredients

Process

  1. Preheat oven to 350.
  2. Heat a non-stick skillet over medium high heat. Add the butter and brown sugar. Cook stirring constantly, until the sugar has dissolved.
  3. Add bananas and cinnamon. Simmer until bananas are soft; approximately 5 minutes.
  4. Spread about a 1 tablespoon of dulce de leche on a tortilla. Place a quarter of the banana mixture just off center. Fold in the sides and roll up in burrito fashion. Place seam side down on a baking sheet topped with aluminum foil coated with cooking spray or non-stick cooking sheet. Repeat with remaining tortillas.
  5. Spray each burrito with cooking spray and bake for 20 minutes. Flip burritos over and bake an additional 20 minutes, until they are golden brown on top. Sprinkle with cinnamon. Allow to cool slightly before serving with ice cream.
