Gingerbread Waffles

So, I am horrible at gift giving. Horrible.

I think the reason I am so bad is that I don’t actually like to get gifts. The whole thing makes me feel rather uncomfortable. I don’t like the exchange portion of the whole thing. It makes me skin crawl. I don’t like sitting there and opening a gift in front of someone since you have to react to the gift and I don’t think I do that properly/enough/I dunno.

Since I generally try to avoid acknowledging the whole gift giving portion of Christmas, I don’t ever properly plan for it. Like now, I’m freaking out thinking about the gifts I need to scramble to get.

But, I love wrapping presents. LOVE it.

Are you bad like me? Or are you done with all your shopping already?

Also, let me know what you think about gingerbread, cuz I hate it. Ugh.

I don’t really hate it, like how I hate olives, but it’s not my favorite of the Christmas flavors. Give me eggnog, peppermint, or red velvet any day over gingerbread. Although, I do have some chocolate gingerbread cookies in mind to bake up this weekend. I think the chocolate will help resolve any of my gingerbread issues.

It’s the molasses. I don’t even like the smell of it. I love the rest of it. Like ginger, yes! I love ginger everything. Same with cinnamon.

But here I go making gingerbread waffles. Nuts I tell you.

Thankfully though, I actually enjoyed these. They had a nice mellow gingerbread flavor. Plus, they are super airy with a nice crisp exterior. The perfect waffle texture.

Anyway, wish me luck with my last minute Christmas shopping this weekend. And be sure to enjoy a waffle this weekend too! Yum!!!

Gingerbread Waffles

Makes 8 waffles, depending on waffle iron

Ingredients

Process

  1. Preheat your waffle iron.
  2. Whisk together the flour, sugar, baking powder, baking soda, salt, and spices in a large bowl.
  3. Whisk together the eggs, butter, milk, sour cream, and molasses in a medium bowl.
  4. Add the egg mixture to flour mixture, and whisk until smooth.
  5. Spoon approximately 1/3 cup batter into your hot waffle iron. Cook until steam stops escaping the waffle iron and waffle is crisp and golden brown.
  6. Serve warm waffles with syrup, butter, preserves, whipped cream. Enjoy!
