I am so ready for Halloween!!! This cheesecake is so ready for Halloween too!! It is just begging for you to cover it up with yummy Halloween candy.

I am trying to figure out what to wear for Halloween parties. My husband and I tend to go as related things. Like I was a mermaid and he was a pirate a few years ago. I’m trying to think of fun things that we could do. I was thinking of Wreck it Ralph and Vanelope, but every price I see is like $60 per costume. Cute, but not sure about the pricing for them. Then I look at flapper costumes that I saw for a good price on Amazon. They are so pretty, and I figure a bit more practical since there always seems to be some random theme party/fundraiser that has that 20’s gatsby theme. Always thinking of ROI & CPW (cost per wear). Basically, I’m just not sure what to do.

Besides that, I pulled out all the Halloween decorations. And I have been making more trips to the dollar store, Target, and Michael’s for Halloween crafts and decor. I am going to get our lights up this weekend. Our purple lights will go up, Monster door decoration will be DIY’d and installed. I gotta figure out how to hang some bats and spooky drapey stuff off our porch roof. It’s stuccoed- so that should be interesting…

There is plenty of stuff to do between now and then, but I can’t wait for it. The costumes, the drinks, the candy! BRING IT ON!!!!

 

Anyway, I have been on a recent cheesecake kick with making them in all sizes, methods, and flavors. I think they are so fun to make. So when I was planning out all teh fun thigns t that I could make for #HalloweenTreatsWeek, I just knew that I needed to make a cheesecake. I really tossed around a bunch of ideas that I still want to make, so I bed at some point in the near future, you’ll be reading another cheesecake recipe on here.

In the end, I came up with Brownie Bottom Candy Explosion Cheesecake!!!!!!!!!

The brownie bottom was similar to my Buckeye Brownie Cheesecake, then I made a traditional cheesecake filling, that I colored orange. Lastly, I loading it all up with a yummy chocolate drizzle and cut up Halloween candy all over the top.

I debating making the cheesecake a chocolate one, but I wanted the fun orange color and I wanted it to give the candy on the top to shine, without competing flavors.

Now, this Brownie Bottom Candy Explosion Cheesecake is really easy to make. I know that cheesecakes cane seem difficult from the ban marie (water bath) and the fear of it cracking, but it’s actually simple. And if your cheesecake does crack- no worries, it’s getting all covered up by yummy candy!

Once the cheesecake is cooled and you have a chance to load that candy on there… oh man, it’s time for trouble.

This Brownie Bottom Candy Explosion Cheesecake is quite devilish, but in all the right ways. So, I think it’s okay be to a bit naughty with this one. Dig in!

Brownie Bottom Candy Explosion Cheesecake

Brownie Bottom Candy Explosion Cheesecake is the perfect way to use up loads of Halloween candy. The brownie bottom and the candy too- oh my!

Ingredients

For the Brownie Bottom

  • 4 ounces/115g bittersweet chocolate
  • 4 ounces/115g unsalted butter
  • 5 ounces/142g sugar
  • 1 teaspoon  vanilla extract
  • 2 eggs
  • 3 ounces/94g all-purpose flour
  • 3 ounces/94g semi-sweet chocolate chips

For the Cheesecake

  • 2 8 ounce packages cream cheese
  • 7 ounce/100g ounce/100g sugar
  • 1/2 Cup plain whole fat yogurt or sour cream
  • 1 teaspoon vanilla extract
  • 3 drops red food coloring
  • 9 drops yellow food coloring
  • 2 eggs

To decorate

  • white chocolate for a drizzle
  • chocolate candies such a mini Reese's cups, M&M's, Snickers, Reese's Pieces, Milkyway's, Kit Kat, etc

Instructions

  1. Preheat the oven to 350F. Spray the bottom of a 8" springform pan.
  2. Begin by making the brownie base. In a large heat safe bowl, combine the chocolate, butter, and sugar. Microwave on 50% heat until the butter is melted, mix well. (Took 4 min 30 sec to melt at 50% heat)
  3. Add the eggs and vanilla extract; mix well. Fold in the flour and chocolate chips.
  4. Pour into the prepared pan. Bake for 15 minutes, then remove from the oven and let cool for 15 minutes. Turn the heat down to 300F now.
  5. In the bowl of a stand mixer, combine the cream cheese and sugar. Mix well until completely combined. Scrape down the sides of the bowl.
  6. Add the yogurt, vanilla extract, and food coloring. Mix well.
  7. Add the eggs, one at a time, by very gently mixing, or folding in. DO NOT OVER MIX.
  8. Fill a kettle with water, turn on. (It doesn't have to come to a boil, just be hot)
  9. Once the brownie bottom is cooled, pour the cheesecake batter into the pan. Gently shake to remove any air bubbles.
  10. Place in a 9x13 pan. Put it in the oven and pour in hot water up to 1/2" around the pan. Bake of 60-70 minutes, or until the center is set but still jiggly.
  11. Turn off the oven and leave the door ajar, let the cheesecake cool for 15-30 minutes, while still in the oven.
  12. Remove the cheesecake from the oven and water bath, let cool to room temperature completely. This can take up to 4 hours, depending on ambient room temperature.
  13. Carefully remove the cheesecake from the pan by running your knife along the sides. Open the spring and carefully pulling the open form up, away from the cheesecake.
  14. Place the cheesecake on a plate and decorate with melted chocolate and candy pieces. Loosely cover with plastic wrap. Refrigerate at least 8 hours, or over night.
