Sauteed Red Wine Garlic Mushrooms

Well, you can simply make them at home!!!

With just a handful of ingredients you will have a bold, flavorful side dish. I bet that once you make it one time it will be the go to recipe you make when you want hearty, savory side dish. You’ll love it so much that you’ll make a double batch!

These Sauteed Red Wine Garlic Mushrooms are a umami packed side dish that will have you reaching for seconds until you run out.

Umami is one of the five basic tastes. It is also known as the savory taste. It is a rich bold taste that can be found in foods like Parmesan cheese, broths, and mushrooms. 

Mushrooms already have that rich umami flavor, but when you saute them, then add more bold flavors like garlic and red wine, it amplifies that even more. 

One of the best things about these mushrooms is that they are so simple to make. You start by gently sauteing the shallots and garlic. Be sure to not let them burn, otherwise, they will become very bitter. This is just to soften them and make them golden in color. Then you add you mushrooms. Stirring them often let them saute until they have reduced in size a bit. Then you add the wine and let the mushrooms reduce by half. Lastly, you add salt, pepper, and a generous sprinkling of parsley at the end. 

Once you have a bite, you’ll instantly fall in love with these mushrooms. They are hearty, rich, taste meaty, and so incredibly delicious.

Do I need to use shallots?

No, you don’t need to use shallots. You can substitute a yellow onion, but the shallot adds a great flavor that you can’t really replicate, so I strongly encourage using them. 

What kind of wine do I need?

I suggest using a bold red, one that is dry, verse sweet. A Merlot would be great for this recipe. Be sure to enjoy a glass at dinner too!

Sauteed Red Wine Garlic Mushrooms

Ingredients

  • 2 Tablespoons olive oil
  • 2 cloves of garlic
  • 2 large shallots, finely chopped
  • 1 pound sliced white mushrooms
  • 1 Cup red wine
  • fresh parsley
  • salt and pepper

Instructions

  1. Give the mushrooms a quick rinse.
  2. Heat a large skillet over medium heat. Add the oil, garlic and shallots to the pan, stir frequently so the shallots become tender and translucent, about 2-3 minutes.
  3. Add the mushrooms. Cook and stir the mushrooms until they start to brown and caramelize, about 3-5 minutes.
  4. Add the wine. Cook for about 3-5 minutes, until the wine has been absorbed. Stir often.
  5. Season with salt and pepper to taste. Sprinkle with the chopped parsley. Serve warm.

Notes

Do not add salt until the end, or you will sweat the mushrooms too soon.
