Pumpkin Muffins with Crumble Topping

Does your kid think you are a short order cook?

My toddler does, esp in the morning. She likes to proclaim “I’d like pancakes and bacon.” Okay, sure, but it’s a Tuesday morning, so… no.

But I can usually talk her into a muffin.

I enjoy whipping up a batch of muffins, even on a week day morning as it’s a quick process when I am using a mix, and then I can hop in the shower while they bake. It’s all about multi-tasking in the mornings and I can manage to make some delish muffins with our favorite mixes from Krusteaz.

 

She likes their blueberry muffins the most but since she just inhaled some pumpkin spice pancakes recently I decided to see if she would love the pumpkin spice muffins as well. And we all won out since she liked them.

I did jazz up the muffins with a yummy crumble on top.

The crumble is quickly made with some melted butter, flour, sugar, cinnamon and pepitas. It adds great flavor and texture to the super soft, airy muffins. Plus, I love pepitas so I use a ridiculous amount of them in my fall baking. #sorrynotsorry

Pumpkin Muffins with Crumble Topping

Makes 12 muffins

Ingredients

Process

  1. Preheat over 350F. Fill a muffin tin with liners.
  2. Mix the muffin batter according to package instructions
  3. In a medium sized bowl, melt the butter in the microwave (I suggest 1 min at 50% power)
  4. Add the flour, brown sugar, pepitas, and cinnamon to the melted butter. Mix well to create crumbles.
  5. Evenly fill the muffin liners with the batter. Then evenly top with the crumble mixture. Gently press into the better to
  6. Bake for 19-21 minutes, until a tooth pick inserted into the center of the muffin.
  7. Let cool enough to handle before enjoying.
