In honor of the new upcoming live action Aladdin movie, by Disney. I’m dedicating the week for recipes that are inspired by the movie. Have a picnic on your magic carpet. 

Making homemade hummus is one of my favorite ways to impress hungry people. It is super simple, but the flavors are far superior to any store-bought hummus you can get. This Roasted Red Pepper Hummus is a real winner!

Have you tried making hummus at home before? It’s so super simple! If you haven’t, then you should give it a try. 

You’ll need a food processor and about 5 minutes! 

While a food processor might not be something that you think you need in your kitchen, I swear you do! I use mine to make hummus, hash browns, mayonnaise, pesto, and soups. It’s also great for shredding cabbage for cole slaw. Skip the jarred salsa, and try making your own as well. See… you need a food processor! 

We just about always have hummus in our house. The kids love it so it’s a great, healthy snack for us to have on hand. Autumn used to shovel it into her mouth just by scooping it out of the container when she was a baby. We got her hooked early on!

Fun fact about me… I love creamy dressings, like ranch and blue cheese. But my jeans don’t. I mean, I could ladle that all over my salads but I try to skip that and use hummus instead. Instead of a fatty dressing, I like using hummus because it’s much lower in calories and fat. When I add it to my salad, I add a bit more vinegar to loosen it up a bit. Then I dig right in!

Now, the kid didn’t love this one because I garnished it with some red pepper flake on top. I did warn Hunter it might be too spicy but he didn’t listen. Ah, buddy! If you feel that it will be more enjoyable without the red pepper flakes, then just skip it. But the drizzle of olive oil on top is a nice finishing touch. 

So this Roasted Red Pepper Hummus would be perfect for your snacking or for when you throw a party. Serving some hummus with warm pita or naan is a great option. Or you can take it further and make a whole spread of yumminess. Serve your hummus with a variety of veggies, olives, nuts, cheeses, and wedges of pita bread. It will be a work of art!

Roasted Red Pepper Hummus

Roasted Red Pepper Hummus- In just 5 minutes you'll have a wonderfully smooth, flavorful hummus that is so much better than store-bought hummus.

Ingredients

For the Hummus

  • 2 15.5 ounce cans chickpeas (garbanzo beans), drained and rinsed
  • 1/2 Cup tahini
  • 2 Tablespoons fresh lemon juice
  • 2 Tablespoons olive oil
  • 1 whole roasted red pepper (or enough pieces to make up 1 pepper)
  • 2 cloves garlic
  • 1 teaspoon cumin
  • 2-3 Tablespoons water

Garnish

  • crushed red pepper flakes
  • extra virgin olive oil

Instructions

  1. Combine all of the ingredients, except the garnish in the bowl of a large food processor. Puree until smooth, add enough water to desired smoothness. Check for seasoning and add more garlic, lemon, or salt, as desired.
  2. When serving, garnish with red pepper flakes and a drizzle of olive oil.

Notes

Store in an airtight container, in the refrigerator for up to seven days.
