I think I am neck deep in butter, flour, and sugar at the moment. Holiday baking is in full swing and I love it.

I have been testing recipes and all my friends and husband’s coworkers have been enjoying the baking. I’ve been making this Bourbon Nut Bundt Cake for years but had to make it again for the blog. Boy oh boy! There were some bad photos. ha!!! 

Bourbon Nut Bundt Cake

Bourbon is my favorite spirit so the fact that I love this Bourbon Nut Bundt Cake comes as no surprise to anyone. Bourbon in the cake and on top in the rich white glaze. Yum!

Besides the bourbon, I love the cake because it has such a light texture. It basically reminds me of a donut because it is so fluffy in texture. The vanilla cake mix and the vanilla pudding create a great tasting cake that has a delectable texture. 

I’ve been making this cake for years because it is so easy to make and everyone loves it. You’ll love that you just need a few ingredients. As well, you just need one bowl! 

The most stress thing about this cake is getting it out to the bundt pan in one piece. I find that the best way to ensure that happening is 2 things. One- you need to REALLY grease the bundt pan well so that it doesn’t stick. Two- you need to let the cake completely cool in the pan. If you take it out too soon it tends to break apart. 

I can’t say enough good things about this wonderful cake. Basically, I can never get enough of this cake because of its ease to make and how wonderfully delicious it is. You’ll love having a big bite of it.

This Bourbon Nut Cake is a fluffy, moist vanilla cake that is studded with nuts and loaded with rich bourbon. It packs a delicious flavorful punch!

Ingredients

For the cake

  • 1 box Duncan Hines Classic Yellow Deluxe Cake Mix (16.5 oz)
  • 1 box Jello Instant Vanilla Pudding (5.1 oz)
  • ¼ teaspoon grated nutmeg
  • 4 large eggs
  • ½ cup Bourbon
  • ½ cup water
  • ½ cup oil
  • 2 cups chopped pecans or walnuts

For the glaze

  • 1 cup powdered sugar
  • 1 Tablespoon butter
  • 1 Tablespoon bourbon
  • 1-2 Tablespoons milk

Instructions

  1. Preheat oven to 350 degrees. Grease a bundt pan and sprinkle a 1/2 Cup of nuts into the bottom of the pan.
  2. In a large bowl, mix together all of the ingredients, except the remaining nuts.
  3. Add the remaining nuts and mix again.
  4. Evenly pour into the prepared pan and bake about 1 hour until toothpick comes out clean.
  5. Cool 10 minutes and then invert to cool.
  6. While the cake cools, make the glaze. Whisk together the sugar, butter, Bourbon, and 1 tablespoon of milk. If the glaze is too thick, add more milk.
  7. Drizzle the glaze over top cake after it has cooled.
