There are just a handful of ingredient that you need for this. And, they are ingredients you typically have on hand in your pantry and refrigerator. You’ll need old fashion oats, canned pumpkin puree, pumpkin pie spice, baking powder, maple syrup, butter, milk, and eggs.

Optional ingredients are the raisins and the pecans that you sprinkled on top.

Can this be made in advance?

Absolutely! This Baked Pumpkin Oatmeal is a great breakfast to make in advance and then warm up in individual portions for breakfast.

Portion out the oatmeal in microwave safe bowls, microwave it to warm. If your oatmeal is a bit to dry, you can add a splash of milk and mix that in.

Ingredients

  • 1 3/4 Cups old-fashioned oats
  • 2 teaspoon pumpkin pie spice
  • 1/4 teaspoon salt
  • 1 1/2 teaspoon baking powder
  • 1/4 cup raisins (optional)
  • 1 Cup canned pumpkin puree
  • 1/2 Cup maple syrup
  • 2 Tablespoons butter, melted
  • 1 1/2 Cups milk
  • 2 large eggs
  • 1/4 Cup pecans, chopped

Instructions

  1. Preheat oven to 350F degrees. Spray a 8x8 baking dish with non-stick cooking spray.
  2. In a large bowl, combine the oats, pumpkin pie spice, salt, baking powder, and raisins.
  3. In another bowl, whisk together the pumpkin, maple syrup, butter, milk and eggs.
  4. Add the wet ingredients to the dry ingredients and combine well.
  5. Pour into the prepared dish. Sprinkle with the chopped nuts.
  6. Bake for 38-40 minutes. The middle should be just set to your touch. (Alternately, you could use 1/2 Cup ramekins and bake 25-28 minutes.)
