Just last week, I took a great virtual cooking class hosted by TheFeedFeed where we made this awesome pasta. The instructor was Chef Marc Murphy. He shared stories and techniques that he learned from growing up in Itay.
His class was fun and fast paced because we were having a great time learning how to make this wonderful pasta sauce. I couldn’t wait to dig right in.
Autumn is doing e-learning through the new year, and then we will evaluate how things are going to determine if we ill continue to do e-learning or send her back to school for brick and mortar program.
We are kick off 3 week this week and so far so good. Things are driving me nuts, but at this point I think everything about 2020 is going to be crazy and difficult so we’re just rolling with it.
The kids have been enjoying overnight oats in the morning, which is great because it’s a healthy and hearty breakfast to keep them full for about 5 minutes… omg how do they eat so much!?!? But seriously, overnight oats are great because they are quick to prepare and they make eating breakfast a breeze in the morning.
Peanut Butter Banana Overnight Oats
Overnight oats is a breakfast that you prepare in advance in advance as you mix the oats, milk, and yogurt together. Flavors are added by the addition of fruit and other mix ins. The oats soften as the mixture chills. It can be enjoyed cold or warmed.
This recipe features peanut butter and banana in overnight oats. The peanut butter is in the oats and the garnish. Perfect for peanut butter lovers!
The preparation for the Peanut Butter Banana Overnight Oats is really simple!
Mix together the oats, milk (of your choice), honey, cinnamon, and peanut butter powder. Let set up for about 30 minutes before portioning the mixture into 6 contieners.
Put half of the oat mixture in the containers. Then layer half of the banana slices on the oats with a drizzle of creamy peanut butter. Add the remaining oat mixture. Lastly, top with the remaining bananas and more peanut butter.
Store in the refrigerator for up to 3 days. Serve cold or warm.
Take the craziness out of your morning routine and having breakfast by making these yummy overnight oats!
What are the ingredients?
- Old fashion oats
- Milk (whatever kind you prefer
- plain or vanilla yogurt, preferably whole milk yogurt
- Peanut butter powder
- Creamy peanut butter
What kind of peanut butter do you use?
Most peanut butters are pretty thick, which makes them really hard to drizzle. I suggest a natural peanut butter which is pretty thin in consistency. My favorite to use is Crazy Richard’s creamy peanut butter.
- 3 Cups old fashion oats
- 3 3/4 Cups milk
- 1 Cup plain or vanilla yogurt, preferably whole milk yogurt
- 2 Tablespoons honey
- 3 Tablespoons peanut butter powder
- 1/2 teaspoon cinnamon
- 3 bananas, thinly sliced
- 6 Tablespoons peanut creamy peanut butter (I suggest Crazy Richard's creamy peanut butter)
- In a large mixing bowl, combine the oats, milk, yogurt, honey, and cinnamon. Mix well. Let sit for 30 minutes.
- Evenly portion HALF the mixture into the 6 serving bowls/containers. Top with half the banana slices, then a drizzle peanut butter.
- Top with the remaining oat mixture. Add remaining bananas and then a healthy drizzle of peanut butter. Cover and store in a refrigerator, up to 3 days.
Serve cold or warmed by microwaving the individual portions.
