Welcome to my humble abode on the interwebs.

Glad you stopped by, even it was just by accident. Hope you’ll stay awhile to check out the recipes, our travels, and general life shenanigans.

I’m Nicole, but you can call me Nic. Call me Nicki and you are going to be ignored. It’s just the way it goes.

I am a mom, wife, lover of boston terriers, rabbits, Sperry’s, glasses, chocolate chip cookies, and spin classes. My 9-5 has me designing at an international architecture firm. I love details and construction. When not slaving over drawings or harassing contractors, I cook, bake, get lost in wanderlusty day dreams, design my perfect pantry, and spend too much time on the internet.

Taking on challenges is my idea of fun so I have been doing yearly recipe challenges when I do a weekly post based on a theme. I have done everything from Taco Tuesday to Waffle Wednesday. It’s fun to be so creative.

Additionally, I share about my 18 month 65 pound weight loss experience. I work hard at maintaining it while living a fun, active life that includes wine and chocolate chip cookies.

I grew up in Connecticut, then moved to Boston, MA for college and stayed for 12+ years since I met my husband in class and got a dream job. Eventually we added rabbits, dogs, and a wonderful daughter to our lives. We bought a condo just outside of Boston, but we grew tired of the cost of living, commutes, and snow. Oh, that endless winter snow!!!

We recently moved to the Tampa, FL area and are loving it. Our house is currently under construction. I can’t wait to move in and share all about our process of decorating it.

I could watch Triple D all day every day | Peridot is my favorite stone although garnet is my birth stone | I currently have 4 tattoos | I’m from Greenwich, CT | I REALLY hate the cold, but I like snow | I really like NASCAR… Go Kasey Kahne! | Commercials for scary movies scare me | Tulips are my favorite flower | Waking up to freshly brewed coffee is the best | I sewed my right index finger in high school with a sewing machine and had to go to the ER to get the needle removed | I hate olives. All kinds. | My favorite movie is You’ve Got Mail | Eggs Benedict is my favorite brunch dish | using my label maker  makes me insanely happy | I have horrible hand writing| I named our 2nd Boston Terrier after the dog in You’ve got Mail | I am a morning person | I’ve been to several Backstreet Boys concerts | I used to have a Jeep Wrangler | My favorite Disney movie is The Little Mermaid | I am a morning person | I love big hoop earrings | I have had two spinal taps | I correct people’s grammar in my head | I love cheeseburgers from Shake Shack| I don’t drink soda, except | doing Whole30 is an addicting for me | I love hip hop spin classes | I hate opening gifts in front of people. It makes me very anxious | I know all the words to Shoop from Salt n Peppa | I love peeps. Fresh or old and chewy | I don’t think you can have too many Sperry’s or pairs of sunglasses | I am a pro at making bacon, egg, and cheese sandwiches | I love black coffee

    I really enjoyed you coming to Newport on Saturday. I know you enjoyed the dinner and the harbor cruise. Hopefully the weather will be good this coming Saturday so we can do some boating.

    Can you tell me more about your impressions of BAC? A nephew of mine was just accepted. He’s trying to decide whether he should spend the next five years getting a master’s, and how hard it will be finding an architectural job in Boston because of the economy. He would have to move to the city from upstate New York. Appreciate your feedback. I stumbled on your blog and enjoyed reading about you. Thanks

    Your trail mix cookies sound yummy and a must try my dear! I stumbled upon your site after doing a search for “Trader Joes trail mix cookies” since I am longtime hooked on TJ’s cranberry omega trek mix and always said hmmmm they’d make a fantastic cookie base …..someday. Well today might be the day! I make my own xmas version oatmeal-raisin cookies every year using dried cranberry and pistachio/pepitas for that red/green color thing goin’on, and white raisins. I have also seen Ina Garten’s Dried Fruit Cookies (am so-so on the apricot taste but the color is great), but these actually may be too fruit-cakey for me (still tasting Alton Browns free range fruit cake last year was enough lol). Anyway I like your idea of chewy addition of coconut. But I am also impressed with your honeybee website and all your recipes. How is life going? Have you figured things out yet. Stay well Robt.
