Easy Italian Tortellini Pasta Salad
When you feel like doing less cooking in favor for fun easy meals, make this delicious Easy Italian Tortellini Pasta Salad. Serve with your favorite grilled chicken, pork tenderloins, steaks, and more. It will be a hit this summer.
All of the 6 ingredients pack a lot of flavor. The red cabbage, tomatoes, and red onion all have vibrant, fresh flavors. Enjoy 2 kinds of cheese with the tortellini and mozzarella. The dressing is from the marinade and a hearty pesto. Simple but perfect!


In a large pot of salted water, boil the tortelini. Cook it until it is just al dente. Do not over cook!!!!
Drain the pasta, transfer to a large mixing bowl, and very lightly drizzle with extra virgin olive oil. This is not to dress the pasta salad, but just to prevent the pasta from sticking together as it cools.


While the tortellini is cooling, prepare the vegetables. The tomatoes will need to be halved. The red onion and red cabbage both need to be very finely diced.
Once the tortelini has cooled a bit, add the vegetables into mixing bowl.


Pour the entire container of marinated mozzarella balls (including the ressing!)and pesto into the pasta salad. Both of these ingredients pack so much flavor into the pasta salad.

Where can I get marinated mozzarella balls?
Thankfully, finding marinated mozzarella balls is fairly easily now. Even if your grocery store doesn’t have an olive bar, you can just purchase a container of them in your deli department. I typically find them around the cheeses and olives.
What substitutions can be made?
I would not make many substitutions to this receipa as it already is so simple, with just 6 ingredients. But you can make some additions! You can add in olives or diced sun dried tomatoes.

This Easy Italian Tortellini Pasta Salad uses just a few ingredients but is packed full of flavor. You'll love each robust bite.
Ingredients
- 19 ounce bag of frozen tortellini
- 1 1/2 Cups finely diced red cabbage
- 1/2 Cup finely diced red onion (1 small onion)
- 1 pint grape tomatoes, halved
- 12 ounce container of marinated mozzarella balls
- 2-3 Tablespoons of Pesto
Instructions
- Bring a large pot of salted water to a boil for the tortelini. Cook to al dente, drain immediately. Place in a large mixing bowl with a drizzle of extra virgin olive oil (to prevent sticking), gently mix. Let cool for 15 minutes.
- While the tortelini is cooling, finely dice the red onion and red cabbage. Halve the tomatoes. Set all aside.
- Once the tortellini is cooled, add in the prepared vegetables.
- Pour the entire container of the marinated mozzarella balls and pesto into the tortellini and vegetables. Mix well. (ideally it is best to let sit for 1 hour prior to serving)
- Serve chilled.
Notes
Make sure the cabbage and red onion are very finely diced and are the same size.
Store in the refrigerator for up to 3 days.
