So yesterday was the Fourth of July. Yay! America!!!
Happy Birthday to you, Happy Birthday…
We didn’t have any plans, which was perfect since we had been busy on Saturday and Sunday. We first went to my mom’s on Saturday for a visit, and then did some pool time Sunday morning before heading over to a friend’s house for a BBQ.
The true highlight was my inability to judge how fast and strong my mom’s dog is so when I took him out for a walk I thought it would be super fun to get him to run back home with me. Wrong. He is so much faster and stronger than my dogs (combined) that he took me right off my feet so I wiped out in my mom’s neighbor’s drive way. Obviously, he had to be in his garage then and he saw the whole thing. I jumped up and played it cool but GD I tore up my feet since I was wearing flip flops at the time. So now it hurts to walk with shoes on. #theworst
But The Fourth was great with it’s mellowness. It mainly focused on cleaning and cooking. I made 5 recipes for the blog and Price made even more food for the work week. The fridge is STUFFED! It’s great. And the house is clean, the laundry is done. It feels good to be organized for the start of the week.
One of the things I made was this Honeydew Margarita.
I love margaritas. They are just so so so good. I used to steer clear of tequila but I have been enjoying it more and more recently. Especially the silver ones.
Shh, don’t tell but I enjoyed sneaking into lovely margarita the community pool. Not into the pool, but the area. I photographed it, then tossed it into a tumbler, and we were then on our merry way to enjoy the pool with a drink, without having to pay $7 for one at the ones at the concession stand. Which is cheap, but still.
And then of course a few small clouds decided to get together and turn into a mega dark one so we all got kicked out of the pool at the first crack of lightening. Super good to be super safe but we were there just for 15 minutes at the point. It was a bummer, but we just packed up and headed back home. Eh, what are you going to go?
I told myself to ‘suck it up, buttercup! You’re gonna finish off the margarita!” And that is exactly what I did!!
The rest of the day was great. We got a lot done, then we crashed. The sign of a great, successful day!
- 2 Cups chopped honeydew melon (enough to yield 2 Cups melon puree)
- 1/2 cup Silver Tequila
- 1/4 cup Lime Juice
- 2 Tablespoons Triple Sec
- 1 Tablespoon Honey or Agave Nectar
- 2 lime wedges
- 2 Tablespoons Sugar
- 2 Tablespoons Coarse Salt
- In a blender, blend the honeydew melon. If you don’t yield 2 cups of puree, add more melon and blend well. Everything has to be very, very smooth.
- Add the tequila, lime juice, trip sec, and honeey. Give it a quick blend.
- Using a lime wedge, moisten the rim of the glass. Dip the glass onto a plate that has the sugar and salt mixed together on it.
- Carefully add ice- don’t knock off that lovely rim!
- Divide the margarita between the 2 glasses. Enjoy!
