I certainly enjoyed the coverage of the wedding between Price Harry and Meghan Markle. It was fun getting to watch the preparation, the wedding, and all the recaps of who wore what. Plus… all those hats!
But, I didn’t get to into it since I didn’t have a real “connection” to Meghan Markle. Sure, Prince Harry is cute and it was exciting that he was marrying an American, but I had never seen her in anything. She was on Suits for 7 seasons, but I had never seen that before.
Thankfully, I recently started it on Amazon Prime and I am hooked. I’m currently breezing through the 5th Season because the drama is so, so good.
Meghan Markle’s Zucchini Pasta Sauce
Then I stumbled across her interview where she described what she typically ate in a day. One of the things she mentioned was a slow cooked zucchini pasta sauce. Just zucchini, a bouillon cube, and some water that has been slow cooked for 4-5 hours. Okay… that’s weird. She said that is was “filthy, sexy mush” that was great on a bowl of pasta.
It did sounds good and with a fridge full of zucchini, I figured that I would give it a try.
Her Royal Highness the Duchess of Sussex didn’t provide a recipe for her Zucchini “Bolognese”, but that didn’t stop various sites from attempting to create one. Meghan Markle’s Zucchini Pasta Sauce was just 3 ingredients, but I wanted to amp up the flavors a bit more so I added my own little spin on it.
I added some onion that was quickly sauteed in olive oil just to amp of the flavors. Then the zucchi goes in and they are cooked together for a few hours.
As well, I added the lemon zest since I love lemon with zucchini (see my Lemony Raspberry Zucchini Bread with Lemony Glaze recipe!).
And a pinch of red pepper flakes always makes things better. Of course this is completely optional so you don’t like a bit of spice, omit it.
You can keep it as simple as just the zucchini, bouillon cube, and water- like what Meghan described. You’ll still get an amazing dish. The one thing that I insist that you do is take the time to finely cut up the zucchini because it will make for a smooth sauce.

What is needed for the Zucchini Pasta Sauce?
Meghan Markle only referenced zucchini, bouillon cube, and water for her recipe. You can make it just like that, but I think that you’ll enjoy the addition of the onion to the zucchini with my version.
I also think that lemon juice is a great way of finishing it off. It gives it a bit of a zippy flavor. Alternatively, you can add a bit of Parmesan cheese.
Do you need a slow cooker?
This recipe can be made on your stove top or in a slow cooker, which ever you prefer. (I personally prefer to make it on my stove top as my slow cooker runs a bit hot and I don’t want it to burn!)

Meghan Markle's Zucchini Pasta Sauce packs a lot of summery flavor. It's slow cooked for 4-5 hours! That sounds crazy, but it makes it crazy good!
Ingredients
For the Sauce
- 2.25-2.5 Pounds medium sized zucchini, 5/6 zucchinis
- 1 yellow onion, chopped
- 1 Tablespoon olive oil
- 1 chicken bouillon cube
- 1-2 Cups water
For the Pasta
- 1 pound spaghetti
- zest of 1 lemon
- Parmesan, optional
- pinch red pepper flakes
Instructions
- Finely chop the zucchinis, set aside.
- Over medium heat, saute the onion in the olive oil.
- Add the zucchini, 1 Cup of water and the bouillon cube. Stir well.
- Cover and cook over very low heat for 4-5 hours, stirring every 20-30 minutes or so. Add water as needed.
- Prior to serving, cook the spaghetti until al dente. Mix the pasta into the sauce, coating all of the noodles. Portion the pasta then zest the lemon over it, sprinkle Parmesan cheese, salt, pepper, and red pepper flakes.

I have been making this for years. I can no longer eat cooked tomatoes or garlic, due to stomach issues. I was craving lasagna one day, and came up with a version of this sauce. I did add some celery as well. I will try your version in a slow cooker. I’m sure it is delicious!
