Summer is my favorite season, and for so many good reasons.
I love that summer is when I can sleep with the windows open, allowing a gently breeze to come in and ruffle the curtains.
Friends come over for BBQ’s that last late into the night. We hang in the backyard enjoying drinks, laughing too loud, and enjoying the contrasting stars against the dark sky.
And that I get to stroll the farmers’ market selecting great ripe fruit and vegetables. Then I get to use the best that summer has to offer to make a delicious dinner.

Watermelon, Tomato and Feta Salad
This Watermelon, Tomato, Feta Salad is the a salad that you can easily mix up for your busy week night dinner, but is impressing enough to serve it for a big BBQ.
The simplicity doesn’t matter in the end because all that matters is that it is so good. The combination of flavors and textures makes for a great salad.
It compliments so many dinners from grilled chicken, ribs, and hearty steak. The sweet from the watermelon goes to sweet with the salty feta, which means it goes really well is so many dishes.
Cut the ripe watermelon and tomatoes to be similar in size
I use cherry or grape tomatoes when I make this, but you can easily use a heirloom tomato that is cut into pieces that are similar in size to the watermelon. For a fun visual experience, select tomatoes that are yellow and orange to give it a variety amount eh pink and red tones.
Besides the watermelon and cucumber, the salad has English cucumber and red onion. The cucumber is diced and the red onion is thinly sliced so they can be mixed well with the watermelon and tomatoes.
The combination of these ingredients makes for an interesting experience with the mix of textures from the crisp cucumber to the soft, yet crunchy, watermelon.
I love the feta in the simple Greek horiatiki salad because it goes to well with the tomatoes. Equally, it goes well with the watermelon because it contrasts with the sweetness of the juicy melon.
The dressing is so simple with just a few ingredients- lemon juice, lime juice, and Extra Virgin Olive Oil. It doesn’t need anything complicate the great, flavorful ingredients.

You’ll love this Watermelon, Tomato, Feta Salad all summer long. It simple to make and goes so well with so many great dishes that you’ll wipe it up often to savor that perfect summery bite.
