For the loooongest time I wouldn’t drink Guinness. Not because I didn’t like it. No, it was because I thought I wouldn’t like it.
Well, I was wrong! It’s great! And it’s even better in these Guinness Ice Cream Floats

Guinness is a dark Irish dry stout that is made with malted barley and roasted unmalted barley. It’s rich, hoppy, and is pretty filling. At least my husband says it feels like you’re drinking a loaf of bread as you always feel so full afterwards. ha!
It’s Ireland’s most successful beer so it’s very popular at St. Patrick’s Day. Just don’t try to make it green! It’s too dark so you would have to add in A LOT of food coloring, which could effect the flavor of the beer.
Instead make this Guiness Ice Cream Float for a fun adult float. yay!
When making this float, you want to make sure all of your ingredients are really cold. Chill the beer in the freezer for about half an hour before making it.
Second, you’ll want to enjoy your float in a pretty glass. There isn’t a real reason beyond that it will just make it feel extra special. ha!

Sure! I used vanilla ice cream but chocolate is equally great for these floats.

Guinness Ice Cream Floats
Guinness Ice Cream Floats are fun way to enjoy a great refreshing beer this St. Patrick's Day. You won't be able to resist this adult ice cream float.
Ingredients
- 12 ounce bottle of Guinness
- 2 scoops of vanilla ice cream
- whipped cream
- chocolate syrup
- sprinkles
Instructions
- Pour most of the beer into the glass.
- Carefully add 2 generous scoops of vanilla ice cream in a glass.
- Slowly pour the remaining beer along the side of the glass and around the ice cream.
- Top with whipped cream. Then add a drizzle of chocolate syrup and sprinkles to the top over the top of the float. Enjoy!

A new one on me!! In my wildest dreams I could never have come up with an idea of beer and ice cream in the same sentence never mind the same glass. I might have to give this a try, although I am not much of a beer drinker. It looks good and I would imagine it is a very addictive drink too. Ice cream and chocolate, yah!
