Going to sound cliche right now but… HOW IS IT MAY ALREADY?!!?!?
Seriously. This year is just flying by! News Flash! It’s already May. Thankfully, warm weather spring days are edging out the chill that lingers (far too long, according to me) in New England. And now this weekend brings us the Kentucky Derby and Cinco de Mayo. So while we could have enjoyed some Mint Juleps Amanda and I decided to go with a Cinco de Mayo theme to enjoy some Margaritas!!
I decided to make Mango Margaritas and then at the last minute I was thinking about the bag of frozen raspberries I had in the freezer as well. So then it became a Mango Raspberry Margarita. And while that sounded like an awesome combo I wanted to make things a big more festive and instead of combining the fruit together in the blender I would make 2 mixtures and layer them.
So while it does make some more dirty dishes, it is super simple to prepare and makes for a very pretty Marg. It just begs for a big slurp!
And of course, Amanda shares some stunning Fresh Orange Margaritas!!! Amazing right?!? I’ll take 3… ha!
Layered Frozen Mango Raspberry Margaritas
Makes 4 drinks
Ingredients
Mango Layer
- 8 ounces of frozen chopped mango
- 4 ounces of tequila
- 2 ounce orange liqueur, such as triple sec
- 1 ounce of fresh squeezed lime juice
- 1/4 cup simple syrup
- 1 cup crushed ice
- 1/2 cup water
Raspberry Layer
- 6 ounces of frozen raspberries
- 4 ounces of tequila
- 2 ounce orange liqueur, such as triple sec
- 1 ounce of fresh squeezed lime juice
- 1/4 cup simple syrup
- 1 cup crushed ice
- 1/2 cup water
- lime wedges for garnish
Process
- In 2 separate blenders, or done consecutively, combine all of the ingredients for each layer.
- Blend each layer thoroughly.
- Pour the raspberry mix into a large margarita glass, filling it half way. SLOWLY top off with the mango mix so that you maintain the division of layers. Garnish with a lime wedge.
