We were first thinking on finding a 4 day cruise over a weekend, but the logistics and cost involved with that, was just too much. We then decided on a ‘stay-cation’ of sorts by staying in FL and finding a resort. I think we figured out where to go and it is going to be awesome. A beachfront resort with a big suite that has a kitchenette. We can go out or we can pour some wine and just read a book. A book! imagine that!!
I’ve been trying to feed a book for like a year now. I read while sitting on the toilet (not peeing!) when I am giving the kids a bath. So, I get through like 2 pages at a time between ducking splashing and helping out to rinse shampoo. So, I’m dreaming of when I can sit on the beach with a book and actually read it- without having to watch the kids.
Of course, I will need a drink in my hand. I think that I am going to have to enjoy some mojitos. They are refreshing and the perfect summer, getting too much sun sort of drink.
Since I was thinking about my future mojitos, I decided that I needed to whip up a batch to enjoy now. I had a bunch of kiwis at home, so I naturally had to incorporate them into the mojitos as well. Pure perfection.
Kiwis are in season now (Nov- May), but, as we all know, you can get them year round. So you’ll get to enjoy these awesome, refreshing cocktails whenever you feel like it.
The kiwi puree that you make can easily be doubled or tripled, so you can make big batches of cocktails. Perfect for a party. When serving for a party, I suggest that you set up a cocktail making station because the seltzer’s carbonation would go flat. Have a puree made, a bucket of ice, and bottles of seltzer all set up. Provide some instructions so people can make their own refreshing Kiwi Mojito.

Kiwi Mojitos
Kiwi Mojitos is the perfect drink when you want to enjoy a fun spin on the traditional classic. The kiwi gives it great sweetness and a fun color too!
Ingredients
For the Cocktails
- 4 kiwis
- 1/2 Cup sugar
- 20 mint leaves
- 1/2 Cup lime juice
- 1 Cup light rum
- 2 12 ounce cans lime seltzer or club soda
- 1-2 kiwsi, cut into 1/4" thick slices (you don't have to peel it for this)
- 1 lime, cut into 8 wedges
- mint leaves
Instructions
- Cut the ends off 4 kiwis, then remove the fuzzy peel.
- Combine the peeled kiwis, mint, and lime juice into a blender. Blend until smooth. Add the rum and quickly buzz together. This should yeild about 2 Cups of puree.
- Fill 4 glasses half way with ice, pour 1/2 Cup of the puree into each glass. Then finish with the seltzer.
- Garnish each class with 2 slices of kiwi, 2 lime wedges, and some mint leaves.
