This past weekend was spent n Utah getting in trouble with Amanda at Everything Food Conference.
I can’t even get into half of the shenanigans we got ourselves into during the 4 days together. Really, it just makes up for the fact that we hadn’t seen each other in 4 years but msg 24/7.
I will fill you in on one such adventure that all started with a cookie. Ruby Snap, a local cookie bakery, gave out the most incredible cookies during registration. Well, we decided that they were the best damn cookies ever so we would need to get more while still in SLC. We ventured out on Saturday afternoon to enjoy the beautiful afternoon (after a morning of pouring rain!) to get the cookies.
Epic cookies in hand, we then decided that we would need to get ‘cute’ coffees since we were dragging hard after our 2am bedtime. As we ventured over to Blue Copper Coffee we passed by a tattoo shop. Of course, I impulsively said “OMG we should get tattoos!!”
That little joke turned into the real thing later that night. ha!
So, right now, I have a slightly itchy, slightly blurry pineapple on my right wrist. I can’t wait to molt like a snake and get some crisp lines. But for now, I am enjoying my new tattoo so much. And I made these Sparkling Pineapple Coconut Margaritas in honor of our new tattoos.
Sparkling Pineapple Coconut Margaritas
Enjoy tropical flavors with the fun combination of pineapple and coconut in these margaritas.
Pair the light flavors from the fruit juices with silver tequila. It has a lighter flavor, and color, than the golden amber colored varieties.
The carbonation from the seltzer give the margarita a nice fizz. It’s light and bubbly so becomes a nice drink that you can enjoy while laying out and catching some sun.

Now, before someone chimes in and says “your tattoo is upside down!”. Yes, we know. Our tattoo artist at Big Deluxe Tattoo even warned us of that. But it’s more of a reminder for us of the weekend, of our friendship, and that we the most bad ass pineapples around. So whenever we just glance down, we see them- the correct way. 🙂
This Sparkling Pineapple Coconut Margarita is so refreshing. It might just get you in a bit of trouble as it’s light, effervescent, and delicious. But I think that all margaritas can easily get you in trouble! ha!
Do I need to salt the rim?
No, I prefer to enjoy margaritas with a salted rim, but if you don’t, then just skip it. Or you can swap out the salt for sugar.
How do I serve these at a party?
Just before your party guests arrive mix together all of the ingredients, except the seltzer. Leave the pitcher of the margarita mix next to a bottle, or cans of seltzer. Then guests can mix their own drinks and have fresh bubbles.

Sparkling Pineapple Coconut Margaritas
Sparkling Pineapple Coconut Margaritas are fun, refreshing margaritas that you can enjoy all summer. Mix up a pitcher today!
Ingredients
- 3 Cups pineapple juice
- 2 Cups Coconut Water
- 2 Cups silver tequila
- 1Â Cup triple sec
- 1/2 Cup lime juice
- seltzer
- salt, such as Morton's Course Kosher Salt
- Garnish with lime and pineapple wedges
Instructions
- Combine the pineapple juice, coconut water, tequila, triple sec, and lime juice in a large pitcher. Mix well.
- Add some water to a shallow bowl or saucer. Dip the rim of your glass into the water, then dip into a plate of salt. Carefully add ice to the glass, don't knock off all the salt!
- Pour 1 cup of the margarita mixture into your glass. Top off with the seltzer, gently stir to combine. Garnish with the lime and pineapple wedges.
