These are the Best Glazed Lemon Scones! The very best ones ever. At least that is what my daughter proclaimed after shoveling one in her mouth and reaching for another. She loved them and I bet you will too!
We ended up with a 4 day weekend because the kids are home yesterday too. On Friday afternoon, the school district decided to cancel school on Tuesday because of Hurricane Dorian. At that point, Florida was in the path so they canceled school in order to prep the schools as shelters. Thankfully, the Hurricane managed to finally make it’s turn North and start to nudge itself to the East as well. So, no shelters were needed, and I got an extra day with the kiddos.
Overall, I am just heartbroken for all the people in the Bahamas. Seeing photos and videos of the destruction is unbelievable.
Now, let’s hope that the system brewing in the Atlantic, that has a a 80% chance of developing into a Hurricane goes out to sea. I stress baked these scones and I would like to not need to stress bake anymore stuff. Although, my neighbors enjoyed my yummy stress release! LOL
The Best Glazed Lemon Scones
These are some wonderful Glazed Lemon Scones. I bet you will say they are the best ever. They are light and tender, with a bright lemon flavor.
You’ll really love that they are thick, soft, fluffy, and moist! These lemon scones are so incredibly tender and flavorful. There is lemon throughout the scone and then topped with a tangy lemon glaze!
Some people like to use forks or a pastry tool to work the butter in, but I prefer to us my hands. While the heat of my hands can make the butter melt a bit, I find that I get a better texture when I use my hands. But do whatever you feel most comfortable with.
My biggest tip for making great scones is to work the dough gently!
When incorporating the butter in, you want to do this quickly so the heat from your hands does not melt the butter. Overall the whole process should be done quickly. Once you work the butter in, leaving some big chunks mixed throughout, add the cold cream. Again, work that in quick and gently enough to just incorporate it in.
The glaze is super simple, but I think it’s a must because it adds so much extra lemon flavor.
The lemons you zest for the scones just get cut and squeezed for their juice in the glaze. I like avoiding using milk in a glaze so I don’t have to worry about its shelf life. These can be stored in an airtight container at room temperature for 2 days. But I don’t think they will even last that long since they are so good. I bet they will disappear very quickly.
Make a batch of The Best Glazed Lemon Scones today! You’ll love the light, airy texture. Plus the lemon flavor is just so irresistible! They are so perfect to pair along with a cup of your favorite tea. Savor the cup of tea and enjoy your scone.
What is needed for the scones
The base recipe for a scone uses flour, butter, heavy cream, sugar, baking powder, and a bit of salt. This will produce a good standard scone that will pair well with some jam.
To make these lemony, add lemon extract and fresh lemon zest to the scones. Then top with a lemony glaze that uses fresh lemon juice.
