The week always seems to speed by for us. In some ways, it drags along, but for the most part I can’t believe that I blinked and it’s already Friday morning. Every day seems to have some activity to do so it all speeds by during the week. So, when the weekend comes along, we are ready to relax.
And by relax, it means tackle the to-do list that didn’t get completed during the week. Nothing says ‘leisure’ like folding and putting away like 6 loads of laundry on the weekend. LOL! Before we get to diving into that to-do list, or head off to a birthday party, we start the weekend with a delicious breakfast. I love to make pancakes and always serve them with fruit. My whole family loves them and they are very easy to make. Yum!!!
Super Easy Greek Yogurt Pancakes
For years, I made pancakes with sour cream, but then I started to switch over to tasty, healthy Greek yogurt. It provides the same great tangy flavor and moisture to the pancakes, but now it’s healthier! I figured out that if I used a flavored yogurt, instead of plain, I would be adding in tons of flavor, without having to add in extra ingredients. By using Dannon® Light & Fit Greek Vanilla Nonfat Yogurt, I would give the pancakes a delicious vanilla flavor. If I used a berry flavored Greek yogurt, I would be adding in that fruity sweetness. The possibilities are really endless.
Lately, I’ve been using Dannon® Light & Fit Greek Vanilla Nonfat Yogurt. But their other mouthwatering flavors are wonderful to enjoy too. We love the Strawberry Cheesecake and Blueberry flavors. It’s sold in a 4 pack so it’s perfect for my family. We use it in our pancakes or just enjoy the cups with breakfast or lunch or a snack. We all love the rich and creamy taste, but I love that I get to give my family a snack that has 12 grams of protein per serving. Plus, a 5.3 ounce cup has 80 calories. The Cereal Crunch
For the cereal inside the pancakes, I used Kellogg’s® Special K® Vanilla Almond Cereal for a fun crunch in the pancakes. I love playing around with texture for my recipes so it was fun to mix in the crunchy, yummy cereal. It added a fun crunch to the fluffy pancakes. If you want some berries in the pancakes, then use the Kellogg’s® Special K® Vanilla Almond Red Berries Cereal instead. That would still be so yummy.

The Secret to Perfect Pancakes
When making pancakes you don’t want to over mix the batter. Keeping lumps and air bubbles in your batter is key to making pancakes with a light texture. If you over mix your batter you will be knocking out the air in the batter. This would make them flat and stiff. By keeping the lumps and air bubbles you will keep the pancakes very fluffy.
Using Yogurt in Your Pancakes
Using yogurt in your pancakes will help make the pancakes very light and fluffy. It adds a lot of moisture to the batter, which is what steams up and creates air pockets in your pancake. This, along with not over mixing your pancakes, makes the texture of your pancakes perfect.

Super Easy Greek Yogurt Pancakes
These Super Easy Greek Yogurt Pancakes just need 5 ingredients! You'll love the flavors from the Greek Yogurt and the fun crunch from the cereal. Great for breakfast & brinner!
Ingredients
For the Pancakes
- 3 eggs
- 1 Cup Vanilla Greek Yogurt, I used 2 5.3 ounce cups of Dannon Light & Fit Greek Yogurt
- 1 Cup 2 Tablespoons flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 Cups Kellogg’s ® Special K ® Cereal, I used Kellogg’s ® Special K ® Vanilla Almond Cereal
For Serving
- Butter
- Syrup
- Fresh Fruit
Instructions
- Beat the eggs in a small bowl, set aside.
- In a medium sized bowl, mix together the yogurt, flour, baking soda, and salt. Gently fold in the eggs.
- Over medium low heat, melt butter on a griddle.
- Using a 1/4 Cup measuring cup, portion out the pancake batter on to the hot skillet.
- Sprinkle a bit of the cereal into the pancakes. Once the pancakes are bubbly flip. Cook for another minute or 2 to cook through and the edges are golden.
- Serve with butter, syrup, and fresh fruit.
Notes
Instead of using vanilla yogurt, you can use a flavor, such as cherry or strawberry. If you use that, add a splash of vanilla extract.
