I am just about all done with Christmas shopping. Well, I have just 1 more person to get a gift for, then I am all set. I am so excited about it.

Whipping up a batch of Cake Mix Cookies is a fun way to make a batch of cookies in under 5 minutes. Plus you can’t beat it that you only need 4 ingredients!
Baking cookies shouldn’t be hard to do because there are more important things to stress about. Cookies should be nice and easy. You’ll quickly see that these Peppermint Chunk Chocolate Cake Mix Cookies are perfect cookie to whip up whenever the craving hits.
Besides satisfying your chocolate cravings, they are great for making during the holidays. You can easily make these when you are participation in a cookie exchange. yum!
I used Ghirardelli’s Peppermint Chunks. They are seasonal, so if you can snag them, be sure to do so. Grab some extras because they are great.
Now, if you can’t find them, then chopped up Andes mints for the cookies. (That’s what my neighbor did when she made these!)

I don’t like peppermint, can I just use chocolate chips?
Absolutely! Just just 12 ounces of chocolate chips instead of the peppermint chunks.

Peppermint Chunk Chocolate Cake Mix Cookies
Peppermint Chunk Chocolate Cake Mix Cookies- soft, chewy cookies that are easy to make with just a few ingredients. Perfect for the busy holidays.
Ingredients
- 2 eggs
- 1/2 Cup vegetable oil
- Devil's Food Cake Mix (I used Duncan Hines)
- 10 ounce peppermint chunks (I used Ghirardelli)
Instructions
- Preheat oven to 350F. Line large baking sheets with nonstick liners.
- In a large bowl, beat the eggs and oil together. Add the cake mix, mix just to combine.
- Mix in 3/4 of the peppermint chunks into the cookie dough.
- Portion out 22 equally sized cookies on the baking sheets. Top each cookie with 3-4 piece of peppermint chunks.
- Bake for 10 minutes. Let cool for 5 minutes prior to removing to finish cooling.
Notes
Store in an air tight container for up to 3 days.
If you can't find the peppermint chunks, you can substitute with Andres peppermint chips or creme de menthe chips.
