Zucchini is a great vegetable to enjoy in so many recipes. It doesn’t have much flavor at all so it can be used in sweet and savory recipes. It adds great texture and moisture to the recipes. It’s popular in quick breads, like my Blueberry Buttermilk Zucchini Bread or Chocolate Chip Zucchini Banana Bread.
Besides enjoying it in baked goods, one of my favorite ways to enjoy it is by making zucchini chips. I think the zucchini chips have a great texture. They take in all the great flavors from the spices you use as well because the zucchinis are fairly neutral in flavor.
These Oven Baked Za’atar Zucchini Chips are simple to make because you just need to slice the chips, then coat them with a spice infused olive oil. Bake them for about 25 minutes and then you’ll have a really tasty snack.
These oven baked zucchini chips are loaded with flavor from Za’atar. Za’atar is a spice blend that is traditional in Egyptian and Middle Eastern cooking.
The preferred method to slice the zucchini is with a mandolin because it will keep the thickness of the zucchini even. However, you can simply use a very sharp knife and steady hand, if you don’t have one.

What is Za’atar?
Za’atar is a spice blend that has been traced back to Ancient Egyptian times. It is enjoyed like a condiment, often seasoning prepared food, like hummus and salads. It is generally made of ground dried thyme, oregano, marjoram, or some combination thereof, mixed with toasted sesame seeds, and salt, though other spices such as sumac might also be added. Some commercial varieties also include roasted flour.
Is this Gluten Free?
Yes, but, because some varieties of Za’atar can include roasted flour, be sure to check with the brand you purchase.
How long can you store these chips?
Prior to storing the chips, you will want to let them cool completely. Then you want to transfer them to an air-tight container. Store for up to 2 days.

Ingredients
- 3 large zucchinis, sliced into 1/4" thick rounds
- 1/4 Cup olive oil
- 2 Tablespoons za'atar
- kosher salt
Instructions
- Preheat oven to 425°F. Line a baking sheet with nonstick liner.
- Arrange the zucchini rounds on the baking sheet.
- In a small bowl, combine the olive oil with Za'atar. Brush the zucchini rounds with the oil.
- Bake for 18-20 minutes, until golden brown, then flip the zucchini rounds and continue to bake another 5-10 minutes. Sprinkle with kosher salt and serve.
Notes
It is optional to peel the zucchini.
