I know we all drive our parents crazy (sorry, mom & dad!), but her ability to just plain not listen is endlessly confusing and infuriating. It’s like I am talking to the wall, but at least my expectations for talking to the wall would be pretty low.
Like, I have become ridiculously clear in my instructions lately “Before breakfast, you need to get dressed, brush your hair, and bursh your teeth.” I have her repeat it back to me. We confirm it again before she has to do this stuff. Just 3 tasks she has to do every day- simple! I don’t care what order she does them in. I don’t care what she wears. Whatever, there are some pretty interesting outfit combinations some days. Just get those things done.
Well, last week, she did the getting dressed and brushing teeth part, then came down. I reminded her that she needed to brush the birds nest on her head before I would make breakfast. Let the arguing begin. For 10 minutes she argued with me about going back up to brush her hair and get a hair thing for me. Then I lost my sheeeeeet and yelled, and she ran up, finally doing what I asked her to do 100x. I sound nuts at 7.25 in the morning, but come on now!!! Thankfully, my windows were closed that morning so my neighbors didn’t think I was so so horrible, as usual. Ugh!
Then the other day, I say “You can do ANYTHING right now quietly. ANYTHING. I just need to focus and get a few emails out. Okay?” “Okay!” No less than 2 minutes later she is at my side asking me 1 of 100 questions she has of things she can do. My answer is “Yes, you can do it.” “Whatever you want!” “Yes, I said anything. Go, stop asking me questions!!” For real chick, embrace the freedom! Go away!!!!!! Do whatever, you want, stop asking me questions!

And then, she does something so nice that makes my heart burst, and I forget the past 8 hours of hell. Kids and magical abilities to do that to you.

This soup is down right magical. It really is. Cross my heart!
It’s so healthy and delicious. And, best of all, the Chickpea and Spinach Soup is super easy to make. I love when I make something that knocks it out of the park, but I love it even more when it’s simple. Life is busy enough, I don’t need to make it any more complicated with something too difficult.
The biggest time suck involved is just chopping up the onion, a few celery stalks, and a few carrots. Nothing too technical, just chop chop chop. And let’s be real, if you in a bit time crunch or just feeling lazy, you can check out the prepped food areas at your grocery store. Mine has containers of celery, onion, carrot, aka mirepoix.
It has so much flavor and such a great texture that is makes you feel like you are having something super hearty, but it’s just veggies! I swear, it has a heartiness of the a meaty soup, but it’s just veggies. The chickpeas are a great, nutrient-dense food that is packed full of protein and dietary fiber. Plus, they are just so delicious.
Besides, the great flavors and ease in preparing it, I love that it’s really affordable too. It’s all kitchen staples. I have everything in my house for this at all times. Okay, I might not have the spinach, since our rabbit loves it to much, but the rest is almost always on hand. Plus, I like to stock up on things when they are on sale, so I will get a few cartons of stock and a whole bunch of cans of chick peas.
Maybe you are wondering why there is lemon in the soup. Maybe you are thinking of skipping it. DON’T!!! When I am sauteing spinach, I love finishing off spinach with lemon. It brightens the flavors. And the lemon makes it all come together.

- 3 Tablespoons olive oil
- 2 cloves minced garlic
- 1 Cup diced carrot
- 1 Cup diced onion
- 1 Cup diced celery
- 2 Cups diced Zucchini
- 28 ounce can crushed tomatoes
- 6 cups chicken or vegetable stock
- 1 Tablespoon Italian seasoning
- 2-3 Bay Leaves
- 2 15-ounce cans chick peas
- 5 ounces baby Spinach
- juice of a lemon
- salt and pepper
- In a large pot, over medium heat, saute the garlic, carrot, onion, celery in the oil.
- Add the zucchini, crushed tomatoes, stock, seasoning, bay leaves, chick peas.
- Simmer for 30 minutes, stirring occasionally.
- Add the spinach and simmer for another 10 minutes.
- Add the lemon and season with salt and pepper to taste.
- Serve with grated cheese and some crusty bread.
