When I was younger, I was a Brownie in the Girl Scouts. I loved being in the Girl Scouts because it was so much fun to do the activities and earn the badges. Plus, I loved to sell the cookies.
Selling at my dad’s office was the best because my order form would fill up quickly. I often needed more than 1 form! Of course, this meant the cookies would overfill our house when they would be delivered to us to then deliver to all my happy customers. It was a blast!
Thin Mint Gooey Cake Bars
Now, I am back in the Girl Scouts as I am a troop mom! I was so excited to sign Autumn up because I love the organization and what it stands for. Plus, I have a great hook up for some cookies!!!
One of my favorite kinds of Girl Scout cookie is the Thin Mint. I love the chocolate and mint combination of flavors. And, I love the crisp texture of the cookies. Keep them in the freezer for a chilly treat!
These Thin Mint Gooey Cake Bars are a fun dessert to make using Thin Mint cookies. They are simple, just use a few ingredients, and so scrumptious!
You start with a cake mix base. Combine cake mix with butter and eggs. The addition of mint extract enhances the minty flavor in the gooey cake bars.
Mix those 4 ingredients together, then press that into a non-stick baking pan.
Next, you layer chocolate chips and sweetened condensed milk. This make for a gooey, chocolaty filling that is so, so good!
Lastly, you top the bars with the chopped up Thin Mint cookies. Then, you pop that pan into the oven for 30 minutes. Let cool before cutting into 24 pieces and enjoying.

What can I do if I can’t find the mint extract?
Now, don’t worry if you can’t find the mint extract, then use some chopped up Andes mints or creme de menthe baking chips. Reduce the amount of chocolate chips to 1 cup and use 1 cup of the mint chocolates instead. And if you don’t want the Thin Mint Gooey Cake Bars too minty, just skip it all together.
Do I actually need to use Girl Scout Cookies?

Thin Mint Gooey Cake Bars
Thin Mint Gooey Cake Bars are a simple way to be creative with a classic Girl Scout Cookie. Loaded with chocolate and mint- yum!
Ingredients
- 15 ounce box of yellow cake mix
- 1/2 Cup of unsalted butter, softened
- 1 large egg
- 1 teaspoon mint extract*
- 2 cups semisweet chocolate chips*
- 1 can sweetened condensed milk
- 20 Girl Scout thin Mint Cookies, broken into pieces
Instructions
- Preheat oven to 350 degrees. Prepare a 9x13 baking dish by coating with non-stick cooking spray.
- Mix together the cake mix, butter, egg, and mint extract in a large bowl.
- Press the dough mixture into the bottom of the prepared baking dish.
- Spread the chocolate chips evenly over the dough. Then pour the condensed milk over the chips and then sprinkle the pieces of the Thin Mint Cookies over it all.
- Bake for 30-35 minutes, until baked through. Let cool completely before cutting into squares.
Notes
If you can't find Mint Extract, feel free to omit it. Substitute 1 Cup of semi chocolate chips for 1 cup Andes mint chips (chopped into small pieces) or creme de menth baking candies
