Things are certainly better now that our oldest is 6 and can figure out the TV and pour herself some milk for cereal. So, there have been a few times, recently, when they both will head downstairs to make bowls of cereal and watch TV.
Then my husband and I can sleep in for an extra 15-20 minutes on the weekends. Bliss!
Blueberry Lemon Stuffed French Toast
When we do big weekend breakfasts we love to make french toast.
It’s a family favorite. Plus, we can easily jazz it up by adding in some lemon zest or serving with a fruit infused syrup and vanilla bean whipped cream. It feels like the possibilities are endless.
Personally, my favorite way to enjoy french toast is to stuff it. And, a cream cheese based filling it my favorite. It sorta reminds me of a cheesecake filling, especially when I add fruit in.
This Blueberry Lemon Stuffed French Toast has lemon zest and a bit of lemon juice. And of course, fresh blueberries. Slather that berry & cream cheese mixture onto a slice of bread, top with another to create a sandwich. Dip into beaten eggs. Cook on a buttered skillet. Super Simple but super delicious!

I used the Sara Lee® Honey Wheat because it has a great sweetness that will be highlighted as a french toast. Plus, it has no high fructose corn syrup, just a touch of honey. Perfect!
I suggest serving the french toast with a pat of butter, some warm maple syrup, and some extra blueberries. You’ll love to cut a piece of the french toast revealing the filling, before swirling your piece into the syrup on you plate. Then your first bite… oh joy!!

Blueberry Lemon Stuffed French Toast
Blueberry Lemon Stuffed French Toast is a great way to make a decadent, but easy, breakfast. The blueberry lemon filling takes it to the next level.
Ingredients
- 8 ounces of cream cheese, at room temperature
- 2 Tablespoons sugar
- zest of 1 lemon
- 1/2 teaspoon lemon juice
- 1/2 Cup blueberries
- 4 eggs
- 3/4 Cup milk
- 12 slices of bread, I suggest Sara Lee® Honey Wheat Bread
For serving
- Maple syrup
Instructions
- In a large bowl, beat together the cream cheese, sugar, lemon zest, and lemon juice until light and fluffy. You want to really incorporate a lot air into the mixture in this point. Then, gently fold in the blueberries. set aside.
- In a shallow bowl, beat the eggs and milk together. Set aside.
- Arrange 4 slices of bread on a work surface. Evenly spread the cream cheese mixture onto each slice of bread. Top with the remaining slices of bread, to sandwich the filling.
- Spray a flat griddle with non-stick cooking spray, heat over medium low heat.
- Dip the french toast sandwiches into the egg mixture, coating both sides well. Then directly place on the griddle. Cook for a few minutes, flip when golden brown, continue to cook until the other side is golden brown.
- Serve with butter, syrup, and more fresh blueberries. Enjoy!
