Raya and the Last Dragon came out yesterday and we rented it on Disney+ to watch with our neighbors in our driveway. I love our weekly Friday night driveway hangs. Usually, it’s just the adults hanging, but we have done some movie nights with the kids too. We had a lot of fun watching Hocus Pocus, Hamilton, and Mulan this past year.
Anyway, so back to Raya. It was a great movie. The story was great and the animation was beautiful and with great style to it. Plus, I love Awkwafina so the fact she was in there was a plus.
We enjoyed the movie (in fact the kids are watching it again right now) but I have a lot of questions about it… plot holes? I don’t know how to describe them, but I have questions about a few things. I def need to do a deep dive into google to answer some of them.
But my number one question is how do I get that furry pillbug bear thing that she rides on. I want it!!
Instant Pot Creamy Chicken Pasta
It’s a chilly rainy day today so it was a great day to have a movie day (besides rewatching Raya, they watched Onward again). It’s also the kind of day that requires a comfort style meal. Pasta = comfort food for me.
Instant Pot Creamy Chicken Pasta is the perfect dish to whip up when you want dinner on the table quickly. It is a dinner you can have on the table in less than 20 minutes!
Plus, I love that it is an easy clean up as it’s all prepared in the Instant Pot. Yep, you sauté the chicken aright in there and then change the function of the pressure cooker to then cook the pasta. Easy peasy!
Start by trimming the chicken breast, and then cutting into bite sized pieces.
Set your Instant Pot to the sauté function so you can brown the chicken first. Add the chicken and seasoning. Sauté until the chicken is evenly browned.
Note: You can make this recipe without an Instant pot. See notes below on how to make it on the stovetop.
Once the chicken is browned, you will then add in the pasta, broth, and minced onion. You can use fresh onion, but I love using dried onion because it makes the preparation even easier. Similarly, I suggest using a penne rigate or a rotini pasta so it is roughly the same size as the chicken and has a great texture to it.
Set the Instant Pot on Manual for 3 minutes to cook the pasta.
When pasta is done, you add in the cream cheese, heavy cream, and Parmesan cheese. Give that all a good mix!
Instant Pot Creamy Chicken Pasta is going to become a family favorite in no time. You’ll love that they love it and they will love that it tastes so good. Your family will be hooked with the very first bite!
Can this be made on the stovetop instead of in the pressure cooker?
Absolutely! I love making one pot pasta dishes, like One-Pot Sausage and Broccoli Pasta, so you would use the same ingredients but instead of using a pressure cooker, you would just cook it in a pot.
Begin by sautéing the chicken with the seasoning in a large pot. Then you will add in the broth and let the pasta simmer until it is cooked through. When there is little liquid left, add in the remaining ingredients.
Can I use ground beef instead?
Substitute the same amount of ground beef for the chicken. Ground turkey works just as well too.
You will brown the ground beef, and then drain off any fat, before going to the next steps.
Would this pasta be good with shrimp?
Enjoying this pasta with shrimp is another great idea! The preparation is a bit different but the end result is still so good.
Star by mixing together the spices. Prepare the pasta in the instant pot with the broth, pasta, and onion, with half of the seasoning. Reserve the rest of the seasoning to season the shrimp. While the pasta is cooking, sauté the shrimp. When the pasts is done, add in the heavy cream, cream cheese, and Parmesan cheese. Top with the shrimp.
