My husband and I are hooked on this dinner. I saw it on TikTok one day and knew I had to try it. Since it was just a window, I winged and and since then I have worked on refining the recipe.
My favorite way to enjoy it is with a halved burrata along side of the pasta. I break up parts of the ooey gooey cheese as I scoop up the yummy soft, yet crispy pasta.
Easy Sheet Pan Potato Gnocchi
Sheet pan meals are great, but the fact that you can make pasta on a sheet pan- game changer!
The gnocchi cooks and gets tender in the macerated tomatoes and oil. Then when you get it crispy by flipping on the broiler. It’s intensely flavored and has the best texture.
The only prep you need to do with this recipe is chopping up an onion and some garlic. That’s i! The prep literally takes a few minutes, then the rest is just adding to the sheet pan and giving it a good mix before it goes into the oven.
If you are adding on other vegetables like mushrooms, peppers, and broccoli, then chopped them up at this point as well.
The grape tomatoes crack open, releasing their juices to make a wonderful sauce. The pasta is infused with that flavor as it cooks directly in those tomatoes, herbs, and oil
I’ve made this with several brands of potato gnocchi and all come out really well. From Trader Joes to store brand boxes., and it all goes out so well as the key are the fresh tomatoes and generous amount of oil.

Can I add other vegetables?
Yes! You can add other vegetables like bell peppers, mushrooms, and broccoli. Cut the vegetables to be bite sized and give them an extra drizzle of oil to be coated well.
Can I add a meat to this recipe?
Sausage is a great addition to this recipe. You can use the precooked sausage that you can slice and add to the sheet pan before cooking. Or you can crumble raw Italian sausage to the sheet pan. Make sure the pieces are not too large so they will cook through.

Ingredients
- 1 yellow onion, chopped
- 3 cloves are garlic, minced
- 1 1/2 pounds grape tomatoes
- 1 17.5 ounce package of gnocchi
- 1/4 Cup Olive oil
- 1 teaspoon Italian seasoning
- 1 teaspoon Kosher salt
- 1/2 teaspoon black pepper
- generous pinch of crushed red pepper flake, optional
- Serve with Parmesan cheese or burrata
Instructions
- Preheat oven to 425F.
- On a very large rimmed sheet pan, combine all of the ingredients. Stir well to evenly coat with the oil drizzled over all sheet pan.
- Bake for 25 minutes, stirring mid way through.
- Switch the oven to broiler, and broil for 3 minutes, until some of the gnocchi and tomatoes are crispy and browned.
- When serving top with cheese and red pepper flake for some heat!
Notes
Instead of topping with Parmesan Cheese, you can serve some Burrata along side of your pasta.
