Even then we want the meals we share together on the weekend to be special, but not complicated. This Banana French Toast Casserole Bake is easy to prepare so it is perfect for us on a busy weekend.
Banana French Toast Casserole Bake
Instead of having to stand at the stove and tend to slice after slice of french toast, this casserole cuts down on the work. Now you get to spend more time with your family as it cooks in the oven. In the nd you have a delicious french toast casserole that is layered with yummy bananas and topped with a sugary, nutty crumble.


In a large bowl, mix together the eggs, milk, cinnamon and vanilla extract. Dip each slice of bread in the mixture to fully coat the bread. Give the bread a moment to soak in some of the mixtures as well so it creates a dense slice.


Spray a 9×13 pan with non stick cooking spray. Then arrange the slices of soaked french toast.
Depending on the size of the bread you use, you might have to cut the slices of bread to create an even layer across the bottom.


Arrange the banana slices of 1 bananas over the layer of french toast.
Repeat adding more slices of soaked bread to create another layer, then add the remaining slices of bananas, and one more layer of the soaked bread. In total you will have 3 layers of french toast and 2 banana layers.


Pour the remaining milk and egg mixture over the compelted french toast casserole.
Sprinkle the top of the French Toast Casserole with the sugar and nut topping.
Bake for 45 minutes, until the casserole is cooked through. If checking the internal temperature, you want the thermometer to read 175-180F.
Serve with syrup, whipped cream, and fresh fruit.

What kind of bread is used?
Regular sandwich bread works well. I do not suggest using anything thin, like Wonder Bread but something that has a thinker sturdy structure works well.
If you opt to use something like a think brioche, you may need to use more eggs and milk to allow it to soak up more of that egg and milk mixture.
How do I make this in advance?
You can prepare this Banana French Toast Casserole Bake the night before you want to enjoy it by assembling it and wrapping it up with some aluminum foil before refrigerating it for the night.
Take the casserole out of the fridge and let us sit at room temperature while the oven preheats. Leave the casserole wrapped for the first 20 minutes in the oven, then remove the foil. Add 10-15 minutes to the overall bake time to account for it being cold when it went into the oven.

Ingredients
For the french toast casserole
- 1 loaf of bread
- 12 eggs
- 3 Cups of milk
- 2 teaspoons vanilla extract
- 2 teaspoons cinnamon
- 2 bananas, sliced thinly
For the Topping
- 1/4 Cup sugar
- 1/4 Cup brown sugar
- 1/2 Cup chopped walnuts or pecans
Instructions
- Preheat oven to 350F. Spray the pan with non stick cooking spray.
- Combine all of the ingredients for the topping, set aside.
- Mix together the milk, eggs, cinnamon, and vanilla extract.
- Soak every slice in the egg mixture to coat both sides while letting the bread absorb some of the mixture.
- Arrange the slices to completely cover the bottom of the pan. Then arrange sliced banana on top of the first layer of the soaked bread.
- Repeat the process to have 3 layers of soaked bread with 2 layers of sliced banana in between the layers.
- Pour any remaining egg mixture on top the casserole. Then sprinkle the topping on top layer.
- Bake for 50-60 minutes. or until the internal temperature is 175-180F. If the casserole is starting to get too dark, cover with foil for the remaining bake time.
- Cool for 30 minutes. Serve with maple syrup, whipped cream, and fresh fruit.
