I grew up by an amazing deli where they made THE BEST bacon, egg, and cheese sandwiches. The 2 eggs were cooked perfectly so they we not runny but still a bit jammy in the middle. The strips of bacon were lightly chewy, slightly crunchy. American cheese getting all melty on those eggs and bacon, rounded out that perfect sandwich. All of that was served on a poppy seed kaiser roll. I’m 1,300 miles away now and I’m still always craving their breakfast sandwiches.

Bacon, Egg, Cheese Bagel Breakfast Casserole
Bacon, Egg, and Cheese Bagel Breakfast Casserole is a hearty and delicious dish. Enjoy this simple breakfast that can be made in advance. Total yum!
Ingredients
- 1 pound bacon, cut into small pieces
- 16 eggs
- 3 Cups milk
- 1 teaspoon hot sauce, optional
- 3 Cups shredded mild cheddar cheese
- 1/2 teaspoon black pepper
- 1 teaspoon salt
Instructions
- Over medium heat, cook the bacon until just crisp. Remove to a paper towel lined plate to cool.
- Halve the bagels and then rough cut into small bite-sized pieces. Arrange on a large baking sheet and broil until lightly toasted. (Stir so you evenly toast the pieces) Let cool.
- Generously spray a 9x13 pan with non-stick cooking spray.
- Beat the eggs and milk together in a large bowl. Add hot sauce, optional.
- Evenly arrange the bagel pieces into the pan, add the eggs and bacon. Stir to evenly combine and press the bagel pieces into the egg mixture, let sit at least 30 minutes to soak up the egg and milk mixture.
- Preheat oven to 350F degrees. Just prior to baking, evenly top with cheese.
- Bake for 45 minutes, until golden brown on top and just set in the middle.
Notes
Using a kitchen scissor makes cutting the bacon really easy.
This can be prepared in advanced. Follow all the steps, with the exception of baking the casserole. Cover and refrigerate over night. Baking may take another 5 minutes to compensate for the chilled casserole.
