Just last week, I took a great virtual cooking class hosted by TheFeedFeed where we made this awesome pasta. The instructor was Chef Marc Murphy. He shared stories and techniques that he learned from growing up in Itay.
His class was fun and fast paced because we were having a great time learning how to make this wonderful pasta sauce. I couldn’t wait to dig right in.
It’s 42 days until our cruise. I’m super amped about it. SUPER AMPED!!!! This will be our first vacation as a family of 4, so I am really excited about that.
We are leaving out of Tampa and are going to Key West and Cozumel. While we have been to both places previously, I am still really looking forward to the cruise. Like, we want to see how Key West is doing post Hurricane Irma – hopefully well! Also, the last time we were in Key West was for our Babymoon with Autumn. So fun, but I need a drink in hand this time, especially from The Rum Bar.
We have had a Royal Caribbean Credit Card for awhile and I just recently noticed that we had some points expire. Unacceptable! So I started to look into cruise that we could take and how I could redeem the points that we have before they died off. I was looking for a really affordable cruise and ending up stumbling across one that had a BOGO 1/2 OFF deal with a Kids Sail Free deal. That means the 4 of us are taking a cruise for the cost of 1 1/2 fares. WIN! And I redeemed a ton of points to cut that price in half. I nearly had a Brandi Chastain moment when I got off the phone after I booked the cruise. AHHHHHHHH!!!!! GOAAAAAAAAAAAAAL!!!!!
I am so excited about the cruise, but I am also really excited to share about these awesome cake mix cookies.
White Chocolate Chip Lemon Cake Mix Cookies
Cake mix cookies are simply that- cookies made with cake mix. Instead of following the recipe on the box to make cake, you just use 2 eggs and 1/2 Cup oil. From there you can add whatever you want to the cookies.
These cookies use lemon cake mix that gives it a wonderful vibrant lemon flavor. The addition of white chocolate chips is fun and adds a nice sweetness to the cookies.
Like any good chocolate chip cookie, bake them until they are just set. Be sure to set that alarm!
Check them at that 8 minute mark. If it looks like they need a minute more, stand there and yank them out when they are perfect. Let them cool for a bit on the sheet pan, before moving them to a cooling rack.
This will help keep the cookies so soft that you won’t be able to resist them.
I’m warning you, these White Chocolate Chip Lemon Cake Mix Cookies are incredible. They are super quick and easy to make, and I swear will disappear just as quickly. Cake Mix cookies for the win!!!!!

Cake mix, of course! And oil and eggs. Omitting the water in the cake mix recipe, you end up with a delicious cookies. It’s just about as simple as that.
Can I use semi sweet chocolate chips?
Sure, but I think that the white chocolate is much better than using semi sweet chocolate chips because f the lemon cake mix base.
- 1/2 Cup vegetable oil
- 2 eggs
- 15.25 ounce package of lemon cake mix
- 2 Cups white chocolate chips
- Preheat oven to 350F degrees. Place a non-stick silicone baking mat on a large cookie sheet.
- Whisk together the oil and the eggs. Mix in the cake mix.
- Once the cake mix is completely moist and lump free, mix in about 3/4 of the white chocolate chips.
- Scoop heaping Tablespoon sized dough balls on to the baking sheet, allowing room for some spreading. Using the remaining chips sprinkle a few chocolate chips on each of the cookies.
- Bake for 8-10 minutes, until just set. Let the cookies cool on the cookie sheet for a few minutes to allow of them to firm up in the center. Remove to continue to cool on a cooling rack.
- Repeat for the rest of the cookies.
