Spring Time Bird’s Nest Cookies

Easter is my favorite holiday. I don’t go to church so I love everything else that has been slapped onto Easter. Dresses are pretty and frilly. Pastels are everywhere. There are no gifts- except candy. Cute animals decorate everything. I just about *squeee!!!* every time I see a cute little bunny on something. Plus flowers are blooming. I love how (to me) Easter celebrates spring and a new beginning. Everything is shedding winter’s greys and is layering on color. Flowers are starting to bloom everywhere from beneath your feet to above your head from overarching tree branches. And on those branches sit nests that have lovely speckled eggs on them.

These nest cookies are a perfect way to celebrate spring time! They are so easy too! The coconut part is super easy to bring together. The baking time might sound like a long process of checking them every 5 or so minutes or so but it’s just to ensure they will achieve a nice golden brown color while not letting the bottom burn. Other than that it’s super easy and so good. Coconut and chocolate go together so well so it ends up being a perfect pairing.

Spring Time Bird’s Nest Cookies

*makes 15 cookies*

Ingredients

  • 1 14oz package of shredded coconut
  • 1 14 oz can of condensed milk
  • 1 teaspoon vanilla extract
  • 1 stick unsalted butter
  • 1 cup confectioners sugar
  • 2 tablespoons cocoa powder
  • 1 tablespoon vanilla extract
  • 1 tablespoon water
  • 1 bag Cadbury Mini Eggs

Process

  1. Preheat oven to 350. Line baking sheets with aluminum foil or parchment paper
  2. Combine the shredded coconut, condensed milk, and vanilla extract together in a large bowl.
  3. Create 15 mounds of the coconut mixture. Using a spoon or your fingers, create each mound into a bowl shape to resemble a nest.
  4. Bake for 10 minutes, turn the oven down to 325 and bake for 5-8 more minutes, until golden brown. Turn the oven off and then let them sit for another 5 minutes prior to removing from the oven. Gently remove the cookies from the sheet to let them cool.
  5. As the nests are cooling, mix the frosting together. Using a mixer, beat the butter until light and fluffy. Sift the sugar and cocoa powder into the butter and continue mixing. Add vanilla extract and the water and mix until completely incorporated and the frosting is fluffy.
  6. Put the frosting in a small piping bag or a sandiwch bag and cut the tip so you can pipe the frosting onto the coconut nests.
  7. Pipe approximately 1 tablespoon of frosting into the nests. Then place 4 mini eggs into the frosting to secure them into the nests.

Spring Shoes

Help me pick out some spring shoes!!!

The majority of my shoes have had years of abuse so it’s time for some shopping to get some new ones. I really need a pair of sneakers but that’s not as fun to look at as pretty heels, platforms, and flats.

These are the ones I currently have my eye on.

Kate Platform

Would be great for work. I don’t have a neutral shoe.

Skip N Jump

I like them in this print. I love wedges. Walking in Boston is so damn hard with all the bricks so this would make it a bit easier.

Milly Authentic Original 2-Eye

How do I not own a pair of Sperry Top Siders now? I had them growing up, which just got so beat up from being on the boat that I destroyed them. And by then I just started to go barefoot. My boating days are sadly over but I still need a pair. A green pair. Obviously.

Or how about these Sperry’s? The are HOT PINK!!!! Okay, the color is called neon azalea, which makes me love them even more.

Not super springy but they could work as a good transition shoe that I can wear with skirts.

I love shoes that provide a peak at my mermaid tail tattoo.

Nesting

Price and I were back in his hometown over the weekend to celebrate his Mom’s birthday. His family came over on Saturday to have a BBQ. We first set up the in the front of the house, which allowed the kids to play on the lawn and ride their bikes. Typically we would head out on the back porch to eat but we stayed inside to give this little lady some peace and quite.

This dove has set up her nest in a tree right off the back porch. Elaine has some beautifully weathered window panes hanging off the porch roof, which creates a barrier between the tree and the porch. So she didn’t mind me taking a few photos of her but I was quite and zoomed in a much as I could to keep my distance.

 

Hopefully she is enjoying the warm weather and appreciated that we respected her needs and let her and her eggs be.

A good day

yesterday was a good day

It was gorgeous out. We set a new record! It hit 90 degrees in Boston!!!! (granted it dropped like 40 degrees overnight for today’s high) The city was alive with people riding bikes, selling their artwork on the street, eating ice cream, and walking around- overall just being outside.

I had a meeting at school and I’m now a level 8- the level of performance, knowledge, and responsibilities at work required to graduate. wOOt!

When I got off the T I saw the most incredible sunset. In the minute it took to cross the street and get my camera it already changed so much, but it still was such a pretty, vibrant color combination.

Price got a rate increase for the drafting work he just started. So cool since it’s like seeing the light in the end of the tunnel in terms of getting money, paying off CC debit, and splitting bills again.

So we sorta celebrated my final approval to graduate and his increase with a simple sushi dinner at Privus. We took a walk at night and headed down the road for something quick and cheap for dinner and ended up at Privus. Such good sushi! Price got their Crispy Dragon Roll and I got their Treasure Island Roll.

 once we got home we had a call with my mom discussing the graduation party. We picked a caterer and menu and then I went online and we picked out invites that I have to edit and order tonight.
