Fresh Summer Cherry Cobbler

I know I am late to the party when I say this, but I love the show “Suits.”

While I am working, I always have a podcast or show streaming for backgrounds noise. I have powered through so many podcasts from start to current episodes (Young House Love) or shows that way. I primarily use Hulu, but I just recently “discovered” that Amazon has a bunch of great movies and shows on there. Sure, I watched plenty of B movies on there. Like Hallmark Channel style movies, that are so simple and sappy. But, I saw that Suits was available and I decided to give it a try. Now, I’m almost done with season 4 and it’s been just 2 weeks.

HOLY SMOKES!!!! I’m excited and nervous. Not nervous about marriage, no I’m exited about that! I’m nervous about the ceremony and the reception. We have so much still to do and still to coordinate.

The jam favors need to get labeled, the gifts need to be packaged up, the centerpieces need some work. But it is getting there!

Thankfully, my dress is all done with. I had the final fitting last week. It needed a bit more of adjustment to fix two things but I hung around for that and was able to take my dress home that night. YAY!

On the other hand Price had his final fitting and they had to take his pants in another 3/4″ of an inch! Yep, he lost another 3/4″ since his first fitting in Mid March. He’s been working so hard and it’s really paying off by sticking doing another round of Whole30 (in April) and Whole30-ish foods since. Like right now, we are doing Whole30 most of the time with a daily cheat thing. It’s a good balance for us.

So making these Cherry Crisp Waffles the other day meant that we were really treated our selves. But let me tell you, it was worth it!!

The sweet, yet tart cherries were the perfect accompaniment to the sweet waffles. The honey flavor in the Honey Wheat waffles paired so nicely with the cherries and the cinnamon flavor in the crisp topping. I never used to be a fan of crisp toppings as I didn’t love the texture of the toasted oats but I’ve begun to change my tune as it really adds a fun crunch.

This just screams summer to me. Makes for a great brunch-y breakfast. Or even a dessert. Wouldn’t it be fun to change things up and do a real breakfast for dinner night and finish it off with one of these waffles.

As the recipe makes 6 waffles I called up Autumn’s daycare teacher, who lives than a block away, to offer them breakfast. Autumn and I delivered them before they headed off to church. Autumn of course didn’t want to wear pants for our walk over! HA!!

Cherry Crisp Waffles

Makes 6 waffles

Ingredients

  • 1/2 of a 10oz package of Krusteaz’s Crisp Topping Mix
  • 3 tablespoons butter, melted
  • 2 1/2 Cups of Krusteaz’s Honey Wheat Pancake Mix
  • 1 Cup Water
  • 20oz can of cheery pie filling
  • whipped cream & syrup, optional

Process

  1. Preheat oven to 375 degrees. Preheat your waffle iron as well.
  2. Mix together the crisp topping mix with the butter. Mix until all of the topping is moist. Sprinkle onto a cookie sheet. Bake for about 7-8 minutes and mix the topping, return to the oven for another 6-7 minutes. Let cool.
  3. While the topping is baking, combine the honey wheat mix with the water in a large bowl. Mix until just combined.
  4. Scoop out a 1/3 Cup of batter into your waffle iron. Bake until your waffle iron beeps, at this point steam  should have stopped escaping and your waffle is golden brown. Place on a cooling rack while you make the rest of the waffles.
  5. Serve your waffles by adding a big scoop of the cherry pie filling to the waffle, and then sprinkling the topping crumble on the pie filling. Add whipped cream or syrup, if you wish.

Cherry White Chocolate Chip Cookies

It was so chilly the other night that I couldn’t help but thinking of how summer is winding down and that I just have to deal with it. Fall is approaching whether I want it to or not. Don’t get me wrong, I love fall, but it’s that evil winter that follows that hurts. But on the positive side turning on the oven for roasting and baking will warm the house and smells will fill it up with love.

While I had really considered making meat pasties, a Michigan favorite, I couldn’t resist making another sweet cherry treat for this week’s edition of Sprint Cup Snacks for this weekend’s race at Michigan International Speedway. Especially since I’ve been craving sweets lately. So the idea of the sweet smell of cherries filling up the house was just too irresistible to pass up.

I had so much fun looking up desserts using cherries and while the idea of making coffee cake, blondies, and hand pies all sounded awesome I decided on making cookies. I have had cookies on the mind for weeks so I finally got to stretch my baking legs and but my mixer to use.

These Cherry White Chocolate Chip Cookies are some big cookies! I don’t think anything gets better than big fresh from the oven cookies. Well, maybe world peace but cookies can be homemade in under an hour so let’s just go with that. So grab a big glass of milk and a cookie (or a few) and enjoy!!

Cherry White Chocolate Chip Cookies

Makes about 24 large cookies

Ingredients

  • 4 1/4 ounces cake flour (1 cup)
  • 4 1/4 ounces all purpose flour (1 cup)
  • 1/2 teaspoons baking soda
  • 3/4 teaspoons baking powder
  • 3/4 teaspoons Kosher salt
  • 10 tablespoons unsalted butter, room temperature
  • 5 ounces light brown sugar (scant 3/4 cups packed)
  • 4 ounces granulated sugar (1 cup, plus 3 tablespoons)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 8 oz white chocolate chips
  • 5 oz dried cherries

Process

  1. Preheat theoven to 350 degrees. Line insulated baking sheets with parchment paper; set aside.
  2. Sift the flours, baking soda, baking powder, and salt into a bowl with a wire whisk. Set aside.
  3. In bowl of electric mixer, cream together the butter and sugars until very light, about five minutes. Add in the egg and vanilla extract, mix well. With the mixer on low, add the dry ingredients and mix just until combined. Stir in the white chocolate chips and dried cherries with rubber spatula.
  4. Use a cooking scoop or spoons to drop dough onto prepared baking sheet. Bake 13-15 minutes, or until golden brown and set in the middle.
  5. Allow cookies to cool on sheet for 5 minutes before transferring to cooling racks to cool completely.

Super Simple Mini Cherry Pies

Okay, okay! So this recipe isn’t really a recipe. But hear me out…

They are just so cute not to share! Plus, I just love simple things that you can throw together from start to finish in like 25-30 minutes.

I picked this summery recipe for this week’s edition of Sprint Cup Snacks because I wanted to take a picture and use these new napkins in it. NO!!! It’s because this weekend’s race is at Michigan International Speedway, and Michigan is known for their cherries. I mean, come on, the National Cherry Festival is held Michigan. Perfect!

Some helpful tips along the way. Basically don’t do what I did the first time I made these…

  • Do not over fill. They can easily bubble out all over the muffin tin.
  • Do not over bake. They are tiny so they are quick baking therefore don’t go up stairs to do laundry (out of range to hear the buzzer) and then run downstairs frantically when you remember you have something in the oven.
  • Let them cool a lot before you try to take them out of the well greased muffin tin.

Since this is a basic recipe feel free to change up the fruit or even the design on top. Just remember they are so super cute no matter what since they are teeny tiny 🙂

Super Simple Mini Cherry Pies

Makes 18 mini pies

Ingredients

  • 2-9″ pie crusts
  • 1- 14 ounce can of cherry pie filling
  • 1 egg, plus 2 tablepsoons water
  • sugar
  • Need a 2″ circle cookie cutter and a very small star cookie cutter

Process

  • Preheat your oven to 425. Grease a mini muffin tin.
  • Use a 2″ circle cutter to cut circles out of the pie dough. Place one circle in each opening.
  • Place 2 tablespoons of the filling in each tart shell. (I placed 3 cherries per pie)
  • Cut the stars tops out of the remaining pie dough and top each tart with a star.
  • Make an egg wash by beating one egg with the water. Brush the top of each tart and then sprinkle with a bit of sugar.
  • Bake for 12-15 minutes on the upper rack.
