Slow Cooker Marinara Sauce with Mozzarella Stuffed Meatballs

November 6, 2014

Slow Cooker Marinara w Mozzarella Meatballs-1

It snowed this past Sunday. #snovember

It’s the first week of November and I’m already over the winter. Done with it. But sadly it is not done tormenting me.

Slow Cooker Marinara w Mozzarella Meatballs-2

While I’ve written about how we are trying to eat more Paleo meals- meaning no pasta- I couldn’t resist making a big batch of sauce and some meatballs to enjoy with some – gasp- pasta!!! Sure, we could have had some spaghetti squash but I just couldn’t resist some stick to your bones food on the first day of snow.

And you know, what… it was damn good!!!

Maybe it’s my Italian half shouting from the roof tops but nothing beats homemade marinara sauce and meatballs. Seriously. Oh man, and to dip pieces of Italian bread into the pot of sauce… bliss. I think I just caught myself drooling a bit.

Side note- Autumn loves pasta and sauce. But I was working on making some garlic bread and gave her some bread that I dipped into the sauce for her. I turned back to my task at hand and .2 seconds later I hear her babbling away. The bread was gone! She just inhaled it and wanted more fast. In the end she ate a decent amount of bread with marinara sauce. Makes a mama proud!

Well, look no further than this recipe the next time you are craving some spaghetti with meatballs. Grab some Red Pack and get ready for an awesome meal. The marinara takes about 10 minutes of active cooking time and then you get to forget about it for the rest of the time.

The recipe below says to cook it for 6-7 hours total but if you can adjust your slow cooker to go at a lower temperature then you can extend that cooking time to 8+ so that you can prepare it and set it up right before going to work and then it will be ready for you when you get home.

And the meatballs are the coolest! They are stuffed with a mozzarella ball so when you cut them open you get some warm ooey gooey cheese that comes flowing out. Like lava, but you’d like this kind of lava. They might look intimidating to make but they take about an extra 15-20 seconds to make each one compared to regular meatballs. That tiny bit extra effort is so worth it.

Slow Cooker Marinara w Mozzarella Meatballs-5

I might just be able to survive this winter.

At least I’ll have some more marinara that I can easily prepare in the morning and it will be all ready when I get home. It will be so delightful to come up to a great smelling house and freshly made marinara.

Slow Cooker Marinara w Mozzarella Meatballs-4

Slow Cooker Marinara Sauce with Mozzarella Stuffed Meatballs

Makes 8 servings

Ingredients

For the marinara sauce

  • 2 Tablespoons Extra Virgin Olive Oil
  • 1 large yellow onion, chopped
  • 6 garlic cloves, minced
  • (28 ounce) can Redpack® Crushed Tomatoes In Thick Puree
  • (28 ounce) can Redpack® Tomato Sauce
  • (6 ounce) can Redpack® Tomato Paste
  • 1 Tablespoon Italian Seasoning
  • 1 Teaspoon black pepper
  • 1 Teaspoon salt
  • 2 Tablespoons sugar
  • 1/2 Cup water

For the meatballs

  • 2 pounds turkey or lean ground beef (I used a blend)
  • 1/2 Cup instant oatmeal
  • 1 teaspoon Italian seasoning
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 2 garlic cloves, minced
  • 2 eggs, beaten
  • 8 ounces small fresh mozzarella balls
  • 2 Tablespoons olive oil

Process

  1. To make the sauce, heat the extra-virgin olive oil over medium heat in a large skillet. Saute the onion and garlic until tender and translucent.  Add all of the sauce ingredients to the slow cooker vessel that has been sprayed with non-stick cooking spray. Stir to combine. Cook on low for 6 to 7 hours.
  2. When your sauce has 1 hour of cooking remaining, begin to prepare your meatballs. In a large mixing bowl, combine all of the meatball ingredients besides the mozzarella balls and the olive oil. Divide the meat mixture into 8 equal portions, then take each of those potions and divide into 2 to create 16 equal portions. Scoop up 1 portion, flatten out the ball to form a patty in the palm of your hand, place a mozzarella ball in the center and then evenly close up the meatball mixture around the cheese. Aside and repeat for all the meatballs.
  3. In a large skillet, heat olive oil over medium heat. In small batches brown all the sides of the meatballs. Be very gentle when flipping as you don’t want to break up the meatballs. Once the meatballs are evenly browned, add them to the slow cooker and continue to cook until the sauce is done.
  4. Serve with 1 pound of the pasta of your choice.

Overnight Apple Pie Breakfast Pudding

OVERNIGHT APPLE PIE BREAKFAST PUDDING

You guys have you seen Daniel Radcliffe rapping?

It has made my life complete.

OVERNIGHT APPLE PIE BREAKFAST PUDDING_01

Seriously, I’ve watched his little performance on  The Tonight Show Starring Jimmy Fallon at least a dozen times since Wednesday.

Obviously, I’ve loved the Harry Potter books and the movies. I don’t care to share how many times I’ve seen them. And we saw Daniel on Broadway in How To Succeed in Business Without Really Trying. Which was amazing. But this has taken things to a whole new level for me. It’s just so cool.

Anyway, it’s Halloween so I’m here with a Trick AND a Treat.

Normally, I post a pie recipe but I wanted to change things up, a Trick if you will, by posting this breakfast recipe. It’s flavors are based upon apple pie so that is where the Treat part comes in. Clever, no?

Well, it’s super simple and I swear that you will love it. I love that it came together in about 5 minutes and then I just had it do its thing in the fridge overnight. I’ve made overnight oats often because I love how I have breakfast ready for me in the morning. I ate plenty of oatmeal while I was on maternity leave since oats are really healthy, filling, and comforting. I was all about warm comforting goodness in the cold months while I was home… hello, Polar Vortex!!

OVERNIGHT APPLE PIE BREAKFAST PUDDING_04 OVERNIGHT APPLE PIE BREAKFAST PUDDING_05

OVERNIGHT APPLE PIE BREAKFAST PUDDING_06 OVERNIGHT APPLE PIE BREAKFAST PUDDING_07

Some days I have the chance to whip up eggs but more often than not I try to have something already prepped, like overnight oats or large batches of precooked steel cut oats, since spending $5 on a breakfast sandwich while I run into work is just annoying. And dumb. And unhealthy.

So while overnight oats are da bomb, I love how the added chia seeds really changes things up and adds a lot of fun flavor and texture to the recipe. I love how they pump up and get really creamy. Chia pudding- a fav! This breakfast pudding is just a great combo of those 2 things.

Cranberry French Toast Casserole

October 27, 2014

Cranberry French Toast Casserole-1

Our mornings are so rushed with getting up, getting ready, getting Autumn packed up for daycare, Kemper out, and getting our stuff packed up that we often get our breakfasts on the way into work or if there are vendor presentations in the morning I’ll be able to get something like a muffin or some fruit. Those hectic mornings mean that I try to take the time to make a nicer breakfast on the weekends. I still don’t have a lot of time but it’s still great to make a nice scramble, bagel sandwiches, Kodiak Pancakes, or some waffles.

The perfect pair: Pear and Apple Pie

October 17, 2014

Pear and Apple Pie

Guys, let’s talk about coke.

Not that coke… jeez I’ve never even had a cigarette.

I’m talking the other addicting form of Coke. Coca-Cola!

Pear and Apple Pie_01

Ignoring the fact that I post a pie recipe every Friday, Price and I have been trying to reshape our diets. We have been shifting more and more to the Paleo diet. As a treat, we have a slice of pie at some point during the week, but the rest typically goes to our dog walker or Autumn’s daycare teachers. It’s been going well with some easy swaps- quinoa for rice, zoodles for pasta, and sweet potatoes with everything when all else fails. Cheese is the hardest to give up but at least the adjustments we have been making have been helping curb the cheese and sweets cravings.

Pear and Apple Pie_04 Pear and Apple Pie_05 Pear and Apple Pie_06 Pear and Apple Pie_07

Like soda. We stopped buying soda. We get seltzer and add some lemon or lime. Or if I am horrible, I go for my drug of choice… Country Time Lemonade Mix. (At least I only put in about a Tablespoon in my 24 oz waterbottle since I don’t actually like lemonade). Which brings me to the point of this story… I grabbed a Diet Coke at work during a Lunch & Learn.

I only drank half of it and felt so gross.

Pear and Apple Pie_08 Pear and Apple Pie_09 Pear and Apple Pie_10 Pear and Apple Pie_11

I couldn’t believe how blah I felt after just half of a soda. I used to feel like I could drink a Big Gulp full and it was refreshing. But now it’s just gross. This actually just makes me happy. Happy that we have been making smart choices to better our diets.Thankfully, as a result we have purged junk from our bodies and have been curbing cravings too.

Pear and Apple Pie_02

While I’m glad that we have been curbing our sugary cravings, I’m still glad to crave some fresh pie straight from the oven. And this is a pie worth craving!

The combination of pears and apples goes together to well. This pie has less cinnamon than your typical apple pie and more ginger so there is a nice complexity to the spices used. I don’t normally do an egg wash on pies but I went for it this time, and added a heafty sprinkling of sugar, which gave it a nice look and added crunch to the top.

Yum!!!

Pear and Apple Pie_03

Pear and Apple Pie

Makes a 9″ pie

Ingredients

Crust

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 cup (2 sticks) unsalted butter, cut into small pieces, chilled
  • 1/4 to 1/2 cup ice water

Filling

  • 4 large Bartlett pears
  • 4 large baking apples, such as Cortlands
  • 1 lemon
  • 1/2 Cup flour
  • 3/4 Cups sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/4 teaspoon nutmeg
  • 1 teaspoon vanilla extract
  • 3 Tablespoons butter
  • 1 egg
  • 2 Tablespoons water
  • 3-4 Tablespoons sugar for sprinkling

Process

  1. To make the crust, in the bowl of a food processor, combine flour, salt, and sugar. Addbutter, and process until the mixture resembles coarse meal, 8 to 10 seconds.
  2. With machine running, add ice water in a slow, steady stream through feed tube. Pulse until dough holds together without being wet or sticky; be careful not to process more than 30 seconds. To test, squeeze a small amount together: If it is crumbly, add more ice water, 1 tablespoon at a time.
  3. Divide dough into two equal balls. Flatten each ball into a disc and wrap in plastic. Transfer to the refrigerator and chill at least 1 hour.
  4. While the dough is chilling, preheat the oven to 425 degrees. Ready your pie plate by placing it on a rimmed cookie sheet.
  5. Peel the pears and apples. Cut the fruit into 1/4″ thick slices. As you add the fruit to a large mixing bowl, add the juice of the lemon to prevent oxidation.
  6. Add the flour, sugar, salt, cinnamon, ginger, nutmeg, and vanilla extract to the pears and apples. Mix gently.
  7. Roll out one of the disks to be large enough to compeltely cover the pie plate. Place the dough into the pie plate. Add the filling to the pie crust. Then add the 4 pats of butter on top. Roll out the other other disk and then cover the filling and crimp the edges.
  8. Mix together the egg and the water. Brush the top of the pie with the egg wash and then sprinkle with sugar.
  9. Bake for 55-65 minutes. Serve hot or let cool on a wire cooling rack. Store in an air tight container for up to 3 days.

Classic Pumpkin Pie

October 10, 2014

Classic Pumpkin Pie

I believe my spirit animal is the Canadian Goose.

Classic Pumpkin Pie-1

They have this whole migration thing down. They are constantly seeking out warmer weather. I, like my brethren, love the warmer weather. I should craft my own plane to ride along side them so I can settle in with them in a prime spot. (Which reminds me of at Anna Paquin movie which makes me ball like a baby.)

Except I can’t do that because are assholes that crap everywhere and eww.

Classic Pumpkin Pie-4 Classic Pumpkin Pie-5

Anyway, in some attempts to embrace in inevitable cold, I’m trying to enjoy every that the season has to offer. I enjoy the things like leaf peeping, pumpkin carving, baking up a storm, eating an unacceptable quantity of hot Apple Cider Donuts, and of course, apple picking.

Classic Pumpkin Pie-6 Classic Pumpkin Pie-7

Basically making pie is a perfect fall activity. We have begun to clear the days/nights when keeping the oven on for 45-60 minutes for a pie was questionable. Like, how much more heat can I have in this house?! But now, the temps are pie perfect.

Classic Pumpkin Pie-8 Classic Pumpkin Pie-9

And pumpkin is such a great pie. A perfect fall pie.

Classic Pumpkin Pie-2

One day I will make it completly from scratch but right now the only squashes in my oven are of the butternut, buttercup, acorn, and spaghetti. I have yet to roast up a sugar pumpkin but the problem with that is that canned pumpkin is so good. Just pop that sucker open and scoop it out. But, hmmm… I used to think that premade pie crusts were ah-maze, but now that I am making my own I have seen the light.

Until I get a sugar pumpkin to roast up, I will be whip up this canned classic. So while it isn’t exactly from scratch (my crust was homemade!!!) it was pretty dang good.

Classic Pumpkin Pie-3

Classic Pumpkin Pie

Makes 1 pie, 8 servings

Ingredients

  • 3/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon nutmeg
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 can (15 oz.) pumpkin puree
  • 1 can (12 fl. oz.) evaporated milk
  • 1 unbaked 9-inch deep-dish pie shell

Process

  1. Preheat oven to 425 degrees.
  2. In a small bowl, combine the  sugar, cinnamon, salt, ginger, cloves, and nutmeg.
  3. Beat the eggs in a large bowl. Stir in pumpkin and vanilla extract.  Mix the sugar-spice mixture until completely combined. Gradually stir in evaporated milk.
  4. Pour the pie mixture into the crust line pie plate.
  5. Bake for 15 minutes. Reduce temperature to 350° F; bake for 40 to 50 minutes more, or until a knife inserted near center comes out clean.
  6. Cool on wire rack for 2 hours. Serve immediately or refrigerate.

Deep Dish Apple Pie with a Cheddar Rosemary Crust

October 3, 2014

Deep Dish Apple Pie with a Cheddar Rosemary Crust-12

I might have had this for breakfast. A slice. Not the whole pie.

And it was gooood. Dang good.

Deep Dish Apple Pie with a Cheddar Rosemary Crust-10

I had such high hopes to whip this pie up last week after we got home from our trip to Raleigh on Tuesday night but it was not in the cards. I was just so zonked after work both Wednesday and Thursday nights from playing catch up and then I was dragging myself out of bed in the morning (as usual) and then it was Friday morning… crap!! So I missed posting a pie recipe last week, which really, really bums me out. But I have to admit that if it means I’ve posted 50 pies instead of 52, I’m still okay with that. 50 pies… wow.

Deep Dish Apple Pie with a Cheddar Rosemary Crust-11

I used the apples from when we went apple picking last weekend with Price’s mom and sister in New Hampshire. It’s a fun activity but it meant more this year as it was Autumn’s first time. She certainly enjoyed herself as she bit right into her apple as it hung on the tree.

Deep Dish Apple Pie with a Cheddar Rosemary Crust-1 Deep Dish Apple Pie with a Cheddar Rosemary Crust-2

Deep Dish Apple Pie with a Cheddar Rosemary Crust-3 Deep Dish Apple Pie with a Cheddar Rosemary Crust-4

If you are going apple picking soon, or just picking up some apples while going grocery shopping, then I strongly suggest that you make a pie. A big deep dish pie. And one with cheddar cheese in the crust definitely doesn’t hurt.

Side note: I used to dread making crusts but now I really enjoy it. I’ve enjoyed all the pies I’ve made this year but my deminished fear related to crusts has been the best part of this whole thing. yay!

Deep Dish Apple Pie with a Cheddar Rosemary Crust-5 Deep Dish Apple Pie with a Cheddar Rosemary Crust-6

Deep Dish Apple Pie with a Cheddar Rosemary Crust-7 Deep Dish Apple Pie with a Cheddar Rosemary Crust-8

We all know that apples and cheddar are a great combination when we are snacking. BUT just because we want dessert we shouldn’t have to miss that combo. So I decided to make a pie using apples and cheddar. I know of some diners that will put a slice of cheddar on top of the slice of pie prior to warming it up when they serve it to you. That’s a fine way to get cheddar to snuggle up to your apple pie, but cheddar IN the crust is so much better than just being on it.

Deep Dish Apple Pie with a Cheddar Rosemary Crust-9

And since we have a rosemary bush on our itty bitty back deck I grabbed some of that to kick up the savory flavors. Kinda like a cheddar rosemary cracker. I think it adds a nice little elements to the crust and pie.

Deep Dish Apple Pie with a Cheddar Rosemary Crust-13

Deep Dish Apple Pie with a Cheddar Rosemary Crust

Makes 1 deep dish pie

Ingredients

For The Crust

  • 2 1/2 Cups flour
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons minced fresh rosemary
  • 12 tablespoons (1 1/2 sticks) cold unsalted butter, cut into small pieces
  • 6 ounces sharp white cheddar cheese, coarsely grated
  • 1/3- 1/2 cup ice water

For the Pie

  • 4 1/2 pounds of granny smith apples
  • 1/2 Cup sugar
  • 1/2 Cup brown sugar
  • 1/3 Cup flour
  • 1 Tablespoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 1/2 Tablespoons unsalted butter

Process

  1. To make the crust, in the bowl of a food processor, combine flour, salt, sugar, and the rosemary. Add the butter, and process until the mixture resembles coarse meal, 8 to 10 seconds. Add the grated cheese and pulse to combine.
  2. With machine running, add ice water in a slow, steady stream through feed tube. Pulse until dough holds together without being wet or sticky; do not process for more than 30 seconds.
  3. On a floured surface, gently work the dough together. Divide the dough into two equal balls. Flatten the balls and  wrap them with plastic wrap and chill in the refrigerator.
  4. While the dough is chilling, combine the sugars, flour, and cinnamon together in a small bowl, set aside.
  5. Peel the apples in about 1 pound batches. Cut the apples into 4 pieces around the core, then slice each piece into 1/4″ thick slices. Add the slices to a large bowl and add some of the sugar mixture, mix well to coat all the pieces. Repeat with all of the apples.
  6. Preheat oven to 400. Line a rimmed cookie sheet with wax paper.
  7. Remove the chilled dough from the refrigerator. On a floured work surface, roll out one of the disks to be large enough to fit your deep dish pie dish. Place the pie dough in the dish and trim so there is an extra 1/2″ beyond the edge of the dish.
  8. Scoop the apple pie filling into the pie plate. Leave any juices behind in the bowl. Top off the apples with a few small pieces of butter.
  9. Roll out second pie crust to be large enough to cover the pie. Carefully lay the crust over the apples. Fold the top layer edge under the bottom edge, then pinch together around the pie. Cut 4 small slits around the pie and make a tiny cross slit at the top.
  10. Place the pie on the prepared cookie sheet. Bake for for 75-90 minutes or until crust is golden and apples are tender.
  11. Place the pie on a cooking rack and allow to cool before slicing and serving. Store any remaining pie in an airtight container for up to several days.

Figgy Piggy Grilled Cheese Sandwiches

October 2, 2014

Figgy Piggy Grilled Cheese-1

So I take most of my blog pictures in the front of our townhouse because I can spread out a bit there, I get natural lighting, and there is a granite ledge is a pretty neutral background for my photos, as opposed to our deck or wooden patio table. But that can lead to some weird situations when my neighbors walk by. For the most part they just ignore me or laugh at me when I bring out food, get set up on the walkway or granite ledge and begin to take picture while basically laying on the ledge.

Sometimes I get questions about what I am doing and what I’ve made (so I share when I can), which happened in the case of these sandwiches.

Some people had just moved in across the street so they were a little bit curious about what I was doing, whereas my other neighbors are used to my ledge laying and picture-taking, so they came over to find out what I was doing. And I’m not talking 2 people came over, like 6 of them. Yep, I had 6 people drooling over these grilled cheese sandwiches as I answered questions as to why I was taking pictures to them and what exactly I had made. The conversation slowly took a new spin though, like ‘oh, so you’re not a chef… but you create food… so do you have people test this food?’ I explained that sometimes I do, but in this case the grilled cheese was for our dinner. They were utterly deflated as they realized they would not be taste testing. ha!

They will just have to make their own!!

Figgy Piggy Grilled Cheese-3

I need more grilled cheese in my life.

While we are trying to go more paleo, I really need to fit more grilled cheese sandwiches in. At least, if I use Kerrygold cheese and butters I’d be using and enjoying a great quality product. All of their products are made from grass-fed cows which makes them taste to good. I figure I can use the quality over the quantity approach in this case.

Figgy Piggy Grilled Cheese-4

That right there is the start of something good. Really good.

I specifically used Kerrygold’s Dubliner cheese to create this grilled cheese as it is a robust aged cow’s milk cheese that has a deverse falvor notes that range from nutty to sharp to sweet. The flavors are directly related to it being made of milk from their grass-fed cows. As the flavors are so pronounced, they can handle standing up to the fig and prosciutto that I was adding to the grilled cheese.

Dubliner has a hard texture similar to a Cheddar, so if you can’t find Kerrygold then get a good quality of cheddar. But I do strongly suggest that you locate Kerrygold’s Dubliner. So good!

Figgy Piggy Grilled Cheese-7 Figgy Piggy Grilled Cheese-8

I normally put mayo on the outside of the bread when I make grilled cheese. (It is worth a try if you havent done it!) But I wanted to change things and use butter since I had Kerrygold’s Salted Butter. Kerrygold butter tastes and looks so good because their cows are grass fed. That is why it’s that nice bright color.

Figgy Piggy Grilled Cheese-9 Figgy Piggy Grilled Cheese-10

Don’t be stingy with the fig jam. It has to stand up to the salty prosciutto and the strong cheese. You definently want to taste the sweetness when you bite into the grilled cheese.

Figgy Piggy Grilled Cheese-11 Figgy Piggy Grilled Cheese-12

I really don’t buy prosciutto as often as I should. Sure, it is pricey but you don’t need much to pack a punch to a dish. I spent $4.95 on this package of prosciutto which for 4 sandwiches isn’t too bad considering how much flavor it adds to it.

Figgy Piggy Grilled Cheese-13 Figgy Piggy Grilled Cheese-14

Be careful not to burn the bread!! I admit that I can get easily distracted so I often will burn my grilled cheese and that is THE WORST.

Figgy Piggy Grilled Cheese-15 Figgy Piggy Grilled Cheese-16

To melt the cheese without burning the bread it’s best to keep the heat low and to cover the skillet. In my case I needed to be creative since I didn’t have a lid large enough. ha!

Figgy Piggy Grilled Cheese-5

I swear this is one of the best grilled cheese sandwiches I’ve ever had. In fact, just looking at these photos again reminds me of this grilled cheese and how I need to make this again. Pronto.

Plus it’s National Cheese Month you basically you gotta. ;-P

  • 8 slices of Italian bread, sliced 1/2″ thick (I used slices that were 3″ x 5″)
  • approximately 5 ounces of Kerrygold Butter, softened to room temperature
  • 4 Tablespoons Fig Jam
  • 8 ounces of Kerrygold Dubliner Cheese
  • 4 ounces of prosciutto (8 slices)

Process

  1. Lay out the 8 slices of Italian Bread on your work surface in 2 rows to pair of the 4 sandwiches.
  2. Very lightly butter each side of the slices.
  3. Put a thin coat of fig jam  on the ‘inside’ side of all of the slices.
  4. Place 1 slice of the prosciutto on top of the fig onto 4 slices of bread.
  5. Slice the block of cheese into very thin slices. Divide the cheese into 4 equal portions and place onto 4 slice of bread.
  6. Place the remaining slices on top of the cheese and top of the 4 slices of bread.
  7. In a large skillet over medium low heat, melt 1 tablespoon of butter. Place the sandwiches in the skillet. Be very careful that the heat is not too hot as you want to slowly brown the bread.
  8. When the one side is golden brown, very carefully flip the sandwiches. After 2 minutes, cover the skillet and continue cooking, flip as needed, until the cheese is melted and the bread has achieved desired doneness. (My sandwiches took about 9-10 minutes total to cook.)

Peanut Butter Banana Bars with a Peanut Butter Cream Cheese Frosting

September 30, 2014

Peanut Butter Banana Bars with Frosting-1

On Sunday night Price, Autumn, and I headed down to Rhode Island to Lincoln Woods State Park to meet our wedding photographer, Lefebvre Photo, for our engagement photo session.

In practice of late, I was not prepared at all. #ugh #storyofmylife

We went out to Kohl’s in the morning to get some coordinating clothes, mainly plaid shirts and a dress for me to wear. Of course, I couldn’t find anything to wear. I don’t mean I couldn’t find anything that I liked since I basically LOVE all of Lauren Conrad’s current line. I mean, I couldn’t find anything I wanted to wear for the photos. Of course!!! So mini meltdown later, I rushed out to Gap Factory Store and Old Navy after lunch and threw together a $6 white tank top, with a $12 (originally $45!) sweater, some jean capris and sperry’s. And wished I had a Xanax.

Thankfully, the photo session was fun since I was a ball of nerves. The location was amazing with shafts of golden light shining through the trees. The leaves were a lovely mix of greens, oranges, and yellows above us and below our feet. Our photographer was great with setting up shots and getting us to joke around when deep down I wanted to throw up from nerves and just the thought of how corny all of it was. I went to college and worked with Danielle years ago so it definitely helped keep me semi calm as we recounted the worse boss in the history of bosses. Plus, we got to talk about our babies as her daughter is just 2 weeks older than Autumn. Besides Danielle’s wedding and engagement photography she also takes newborn and baby photos so incorporating Autumn into our photos was really easy. I’m looking forward to getting our photos in a few weeks. I’ll be sure to share them when I get them 🙂

Anyway, these bars are so delightful! They are the perfect combination of flavors. I think peanut butter and banana are best friends, better than peanut butter and jelly. Yep, I said it!!! Jelly is great but too sweet at times, and you can’t dip jelly into a jar of peanut butter, like how you can with a banana… wait, you don’t do that? Err, me neither…

These Peanut Butter Banana Bars are one of the best ways to use up past their prime bananas. I swear we always have past their prime bananas. I’d assume I should buy less bananas but when I do it’s the week Autumn has decided she wants 2x as many as usual and then I need to get more anyway. It’s like that when we buy milk… if I buy a 1/2 gallon for a month and we run out every week I’ll then buy a gallon and we will only drink a glass before it goes bad. #thestruggle

I loved the texture of these bars that the banana and the oats give it. The oats make it feel like fall. I[‘m sure that doesn’t make any sense but it totally feels like a fall treat. Now, that doesn’t mean you can’t enjoy it all throughout the year but if you have it I’m sure you’ll think “Man, I gotta make these again this fall.”

Seriously, this frosting.

You can skip the frosting but then we wouldn’t be friends as the frosting adds to much to the bars to enhance the flavors and texture. I just love biting into the bar and getting my teeth through the frosting first before getting to the fluffy bar. Plus, frosting always wins.
