Valentine’s Day Cake Pops

Valentine’s Day is just 1 week away!!

Are you celebrating with someone you love?

Or are you single and ready to mingle?

Or do you fall in between like me and my husband… certainly not single but not really doing anything? Hello… it’s a Wednesday night and we have 2 kids. Too much to juggle.

But, no juggling required when it comes to these cake pops.

Baking a box mix cake is pretty dang easy, so it mixing in the frosting, and then forming the balls. The most complicated part is dipping them into the Candiquick, which is a confectionery coating, or melted chocolate that sets pretty quickly. And, even then, the only hard part about that is the messy drips. That’s a silly complication. Like a #firstworldproblem issue. ha!

 

 

 

While they have cake pop molds for you to bake the cake in, then coat. We decided to get our hands messy and dive right into rolling the cake with the frosting to create the cake balls for the pops.

Autumn loved helping out. She scooped out the cake and rolled the balls, proudly placing them on the tray as she went. We then brought some over to a friend’s party and she told EVERYONE that she made them. So cute.

They are very easy to make- even a 4 year old can make them!

Be sure to enjoy these with someone that you love. Or eat them all. Whatever works for ya. ha!!

Valentine’s Day Cake Pops

Makes 30 Cake Pops

Ingredients

  • 1 Box Cake Mix and required cake mix ingredients
  • 1/2 – 2/3 Can of Red or Pink Frosting
  • powdered sugar
  • 1 pound of Candiquick or chocolate
  • 30 treat sticks, 4″ long
  • sprinkles

Process

  • Bake the cake according to directions in a 9×13 pan. Let cool completely.
  • Trim away the edges of the cake. Discard (into your mouth!)
  • Cut the cake into small pieces, put into the bowl of a stand mixer. Using the whisk attachment, beat until crumbly.
  • Add HALF the can of frosting to the crumbly cake. Beat again. Add a tiny bit more to get a moist, dough like texture that will form a ball. Do not make it too wet and tacky.
  • Dust your hands with powdered sugar. Form 30 equally sized balls.  Suggestion: Divide the dough in half, then divide each half into 3 equally sized portions. From each portion, create 5 balls.
  • Insert a lollipop stick into each ball.
  • Freeze all of the cake pops for at lest 30 minutes.
  • Melt the Candiquick or chocolate. Pour into a tall cup. Quickly dip each cake pop into the candiquick/chocolate, let excess chocolate drip off. Then set onto a non-stick silicon lined baking sheet. Immediately drop sprinkles on to the coating before it sets.
  • Store at room temperature.

5 Minute Chocolate and Strawberry Shortcake

I originally was going to miss Valentine’s Day with the Hubs. Ya see, I was planning on moving on Saturday, the 13th, to give us time to get settled before I start work on the 16th, but the flights were INSANE that day. It would have cost us about $1,100 dollars for Autumn and I to fly 1-way to Tampa. ONE WAY! Stupid school vacation week!!!!! So I jiggered things around and picked flights for Monday, the 15th, for $630. So much better!

Plus, it would give me an extra weekend with Price and the dogs. I’d like to say that I’m excited about Valentine’s Day but we aren’t too into it. I can’t even exactly remember what we did last year off the top of my head. I’m good like that…

But I think we will do something fun this weekend since we won’t see each other for a few weeks until he moves and arrives. Ah crazy times.

I was browsing Trader Joe’s recently and spotted a Chocolate Pound Cake and I knew I just had to have it. I had no plans other than just eat it. But then I saw big, beautiful strawberries and I knew what I had to do!

Strawberry shortcake is one of my favorite desserts so I ran with it and whipped up this 5 Minute Dessert subbing out the shortcake biscuit for the pound cake. I quickly cooked the strawberries instead of letting them macerate for a long time. Then just topped it off with whipped cream and some salted caramel sauce.

Yes, you can totally make the pound cake, caramel sauce, and whipped cream yourself, but I say there are times when you should give yourself a break!

With Valentine’s Day right around the corner, it’s time to plan your menu and this dessert should be on it. Take the time to plan out and make your appetizer and entree but keep dessert simple. You’ll already have a sink full of dishes and plenty of better things to do than add more dishes to it.

5 Minute Chocolate and Strawberry Shortcake-04

The Best 5 Minute Dessert Ever

Makes 2 servings

Ingredients 

  • 4 slices of chocolate pound cake
  • 1 1/2 Cups strawberries, tops removed and then thinly sliced
  • 1 Tablespoon sugar
  • 2 teaspoons vanilla extract
  • warmed salted caramel sauce
  • whipped cream

Process

  1. In the low broiler setting, toast the pound cake until just toasted.
  2. Combine the strawberries, sugar, and vanilla extract in a skillet over medium heat. Stirring occasionally, cook for 3-4 minutes.
  3. Shingle 2 slices of pound cake per plate. Spoon the strawberries over the pound cake then top with whipped cream and warm caramel sauce.

This Cutie Pie is a rather sweet dish. I say if you’re going to indulge on something sweet then you should just go all out.

Makes 2 servings (for mommy and daddy)

Ingredients

  • 1 Super Adorable Baby
  • lots of Squishable Hugs
  • tons of Sloppy Kisses
  • endless Snuggles
  • infinite Love

Process

  1. Combine all of the ingredients and enjoy!

I hope that you have a fantastic Valentine’s Day!

Valentine's Tulips

My special valentine sent me flowers today at work. Tulips are my favorite and I just love how they brighten up my mood whenever I look over to them.

We are relaxing and getting some Chinese take-out tonight. We haven’t had Chinese food in months and I’ve been craving it. I can’t wait to go home and have a spring roll. It’s the little things in life, esp sharing those things with the people you love.
