It’s a big week!

A lot is going on. It’s awesome. It’s crazy. It’s wonderful. It’s horrible. I love it. I hate it. I’m tired. I’m energized. When was the last time I washed my hair? Let’s not think about that. ugh

And yesterday was a really big day!

The Purchase and Sale agreement for our house was signed!!!!! And the house is officially sold next Wednesday. Hip Hip Hooray!

And all our tons of crap was picked up to make it’s journey down the east coast. And when I say TONS, I mean it. It’s not like “literally, guys, omg we have tons of stuff!!” We really do. They weighed it, and we were charged for it.

I think it’s all my pyrex. yep… ha!

Plus, at this point it’s T-minus 5 days until The Hubs and the pups are in FL!!!!

I’m giddy with excitement. I’m excited for Autumn to have her world complete again too. The move without Price was hard for me, but extra super-duper tough for her. But it was just a month in the grand scheme of things so we all sucked it up and made it work.

But life had to keep on chugging, so I just kept on going to work, enjoying the warm weather, and eating all the strawberries I laid my eyes on.

Quick Dessert Quesadillas

It’s strawberry season here in Florida so we’re all up to our kneecaps in strawberries. No exaggeration. Okay, maybe a little. But I wouldn’t mind if that was a real thing.

But I’ve been eating strawberries like crazy and one of the things I whipped up were these Quick Dessert Quesadillas. I had mine with strawberries and my Dad requested his with bananas. I should have made one with both. And then extra Nutella. Just because.

Quick Dessert Quesadillas

You’re just 3 ingredients away from a great dessert!

Quick Dessert Quesadillas

Quick Dessert Quesadillas

Makes 4 quesadillas

Ingredients

  • strawberries or bananas
  • 8 fajita sized tortillas
  • Nutella

Process

  1. Dice the strawberries and thinly slice the bananas.
  2. Toast fajita sized tortillas over an open flame with
  3. Spread a thin layer of Nutella on one side of each of the tortillas. Press some fruit into the Nutella on one of the tortillas. Sandwich with another tortilla with the Nutella side down. Cut into 4 wedges. Repeat with remaining tortillas and then enjoy!

5 Minute Chocolate and Strawberry Shortcake

I originally was going to miss Valentine’s Day with the Hubs. Ya see, I was planning on moving on Saturday, the 13th, to give us time to get settled before I start work on the 16th, but the flights were INSANE that day. It would have cost us about $1,100 dollars for Autumn and I to fly 1-way to Tampa. ONE WAY! Stupid school vacation week!!!!! So I jiggered things around and picked flights for Monday, the 15th, for $630. So much better!

Plus, it would give me an extra weekend with Price and the dogs. I’d like to say that I’m excited about Valentine’s Day but we aren’t too into it. I can’t even exactly remember what we did last year off the top of my head. I’m good like that…

But I think we will do something fun this weekend since we won’t see each other for a few weeks until he moves and arrives. Ah crazy times.

I was browsing Trader Joe’s recently and spotted a Chocolate Pound Cake and I knew I just had to have it. I had no plans other than just eat it. But then I saw big, beautiful strawberries and I knew what I had to do!

Strawberry shortcake is one of my favorite desserts so I ran with it and whipped up this 5 Minute Dessert subbing out the shortcake biscuit for the pound cake. I quickly cooked the strawberries instead of letting them macerate for a long time. Then just topped it off with whipped cream and some salted caramel sauce.

Yes, you can totally make the pound cake, caramel sauce, and whipped cream yourself, but I say there are times when you should give yourself a break!

With Valentine’s Day right around the corner, it’s time to plan your menu and this dessert should be on it. Take the time to plan out and make your appetizer and entree but keep dessert simple. You’ll already have a sink full of dishes and plenty of better things to do than add more dishes to it.

5 Minute Chocolate and Strawberry Shortcake-04

The Best 5 Minute Dessert Ever

Makes 2 servings

Ingredients 

  • 4 slices of chocolate pound cake
  • 1 1/2 Cups strawberries, tops removed and then thinly sliced
  • 1 Tablespoon sugar
  • 2 teaspoons vanilla extract
  • warmed salted caramel sauce
  • whipped cream

Process

  1. In the low broiler setting, toast the pound cake until just toasted.
  2. Combine the strawberries, sugar, and vanilla extract in a skillet over medium heat. Stirring occasionally, cook for 3-4 minutes.
  3. Shingle 2 slices of pound cake per plate. Spoon the strawberries over the pound cake then top with whipped cream and warm caramel sauce.

This recipe is a perfect example of ‘do as I say, not as I do’…

Well, not exactly.

You see, the recipe part is fine. But when you look at my process pictures you might notice how slapped down a piece of parchment on the baking sheet. Well, I didn’t properly cover the baking sheet when I did that. Nope, I should have ripped off another big ass piece of parchment to cover the ENTIRE baking sheet. If you don’t then the juices will make a mad dash to the edge of the parchment and hop onto the baking sheet. And that lovely, sugary syrup will toil and boil on your baking sheet and cement itself on there.

So, cover the ENTIRE baking sheet with a big ass piece of parchment so you won’t have to throw out your baking sheet like how I had to throw out mine. Okay, so I probably could have scrubbed with all my might to get the cemented on syrup off but 1) I have no time for that crap 2) I probably would have just scraped off the non-stick coating making the pan just about useless.

Anyway, the strawberries are incredible. They are juicy, full-bodied, and down right scrumptious. The combination of the strawberries, sugar, lemon, and bourbon all work so well together. The sugar makes the strawberries even sweeter and helps make the best syrup ever. The lemon makes all to pop and enhances the sweetness too. And the bourbon… well, the bourbon just makes them all the better to the 10th power.

The concentrated flavor in the mushy berries are perfect for topping a cup of yogurt, bowl of oatmeal, slice of toast, adding to smoothies or milkshakes, piling on a scoop of ice cream, or layering in parfaits. And, of course, awesome for piling on pancakes or waffles. Yep, you’re damn right I was gonna say waffles. #WaffleWednesday

I used vanilla sugar, which is just sugar that has been infused with scraped vanilla beans. I have a big ‘ol container of this that I use in tea or things like this. But plain granulated sugar is just as fine as well. And if you have a vanilla bean lying around then scrape that and add it to the while mess of ingredients when you are mixing them up.

You’ll love these strawberries. I insist that when you have the chance stock up on this beautifully ripe summertime fruit when you have the chance. Fill your cart up and then make loads and loads of roasted strawberries. They won’t last long in the baking sheet or in your fridge.

Roasted Strawberries

Makes 1/2 Cup

Ingredients

  • 2 pounds fresh strawberries
  • 1/4 cup sugar
  • 2 Tablespoons Bourbon
  • 1 Tablespoon lemon juice

Process

  1. Preheat oven to 375 degrees. Cover your entire rimmed baking sheet with a large piece of parchment paper or a non-stick baking liner.
  2. Hull the strawberries. Halve the strawberries. Only quarter them if they are really large.
  3. Combine all of the ingredients together in a large mixing bowl.
  4. Pour the strawberries on the baking sheet.
  5. Bake for 50-60 minutes. Store in an air-tight container for up to 1 week. Serve on pancakes, waffles, oatmeal, quinoa, or yogurt. Enjoy!

Quick and Easy Cinnamon Roll Waffles

So funny story…I wrote the whole post to the recipe that I was going to post today. And then I tossed it.

Yep. Yep, I just wiped it clean. Ugh!

I had written about how I was dedicating the recipe to my blogging buddy Amanda and how she is so amazing and inspiring. We often make each other’s recipes, like how I recently made her Paleo Coconut Flour Waffles and she has made my Waffled Hashbrowns. In addition to Amanda trying them as directed, she also tried them with Sweet Potatoes and it was a bust! Twice!

I felt bad about that and wanted to figure it out so I go to work!

But I couldn’t consistently make them work well enough to share. I had amazing waffles and then ones that completely fell apart and stuck to the waffle iron. I just didn’t feel confident enough to share the recipe for the “Sweet Potato Waffles with a Triple Berry Sauce” that I had been working so hard on.

So, I said, “EFF IT!!!! LET’S MAKE CINNAMON ROLL WAFFLES!!!”

Yep, I went from homemade Sweet Potato Waffles with warm sauce made of strawberries, blueberries, and blackberries to these 1 ingredient Cinnamon Roll Waffles. Ha! It might be lazy but it’s damn delicious!

It’s exactly what you think it is…
Open up the package> put cinnamon roll on waffle iron> close> cook> drizzle frosting

Thankfully, Amanda NAILED a waffle using sweet potatoes this week. I cracked up as soon as I saw the post because it felt like ‘great minds think alike’ moments. You seriously have to check out her Paleo Sweet Potato Waffles.

Quick and Easy Cinnamon Roll Waffles

Makes 5-8 waffles, depending on the can of cinnamon rolls you purchase

Ingredients

  • 1 Can of cinnamon rolls ( I used the Cinnabon Cinnamon Rolls)

Process

  1. Preheat your waffle iron.
  2. Spray with non stick cooking spray then put down 2-4 cinnamon rolls, depending on the size of your waffle iron.
  3. Cook for 2 to 2 minutes and 30 seconds.
  4. Remove from waffle iron and drizzle the icing immediately over the waffled cinnamon rolls.

While we were in Maine last weekend, Price made blueberry pancakes for breakfast one day. Of course they were Maine blueberries. On a whim we gave Autumn some. I say ‘on a whim’ because she is not a breakfast person baby. Her morning bottle is eaten in 2 parts and it’s the smallest bottle of the day. So I didn’t think she would be interested in it.

Well, I was wrong. Really wrong. She gobbled it up. And then we made more and saved them for lunch for her and she ate them up too. (Just to clarify there was no syrup involved!)

We had occasionally given her berries prior to this but this has definitely awakened something in her because since then she eaten a lot of blueberries and had some

So I can see that she is going to L-O-V-E this Mixed Berry Rustic Pie when she is older.

There are 4 different kinds of berries in this pie- blueberries, raspberries, blackberries, and strawberries. It’s loaded up with berry goodness. When Price had his slice (for breakfast- better lighting!) he said it was ‘berry good’. ba-dum-tss!

Because there is not much too it I would really urge you to make homemade crust for it as it adds to much good texture and flavor. Plus, I think it would just look better with its handmade edges vs its factory cut circle-y edge. I am a big fan of store-bought crust, but I think this one needs a handmade one.

As well, I tend to err on the side of caution when it comes to putting in cornstarch to thicken the filling.  I think it’s sooo much worse to have a soupy pie than one that is a bit too thick. It affects the bottom of the crust and how you get the slice out of the plate. So if you think you’ve used enough, add some more!

Mixed Berry Rustic Pie

Makes a 9″ Pie

Ingredients

  • 1-1/4 cups flour
  • 1/2 teaspoon salt
  • 1 Tablespoon sugar
  • 1/2 cup cold butter
  • 1/8-1/4 cup ice water

For the Filling

  • 1 pint blueberries
  • 6 oz raspberries
  • 6 oz blackberries
  • 12 oz strawberries
  • 1/4 cup sugar
  • 2-3 Tablespoons cornstarch (depending how juicy the fruit is)
  • 1 Tablespoon lemon juice

Process

For the Crust

  1. In a medium bowl, mix flour, salt and sugar. Cut the cold butter into very small pieces, put back into the refrigerator to keep extra cold.
  2. Using a food processor/pastry cutter, or your hands, incorporate the butter into the flour mixture until the mixture crumbly and looks like sand.
  3. Slowly add in the water until the mixture holds together.
  4. Pat and form into a loose ball. If the mixture is too warm at this point then put it back into the refrigerator for a few.
  5. Flour work surface and roll out crust two inches larger than pie pan. Place crust in the pie pan.

To make the Pie:

  1. Preheat oven to 400 degrees.
  2. Combine berries, sugar, cornstarch, and lemon juice in large bowl.
  3. Add berries to pie crust. Then fold edges of crust over filling, creasing as needed.
  4. Bake at 30-40 minutes or until filling is bubbling and the crust is golden brown.
  5. Serve warm with ice cream!
