Happy Friday!!
I hope you are excited about the long weekend just as much as I am!
We have had a very awesome week. It was soo busy, but fantastic. Autumn turned 6 months old on Sunday. Which is why she had her 6 month Dr’s appointment on Monday. Price took her to the appointment and took the day off as well. They had lunch together at Shake Shack, dropped off a milk donation, got her birth certificate, went to home depot, and much more. The best was that he Instragramed pictures along the way to document the day. It was fun following along. Super cute.
And then on Tuesday we picked up our new car! (Imagine saying that like the Price Is Right.) We lasted 6 months with the itty bitty Scion xA but need something bigger so that we can all really fit in there (no one can sit in the passenger seat because it has to be all the way up to fit the car seat in). So we got a Rav4 Limited and we are super excited! Well, I am excited and nervous. It’s a lease so I am extra freaked out about driving it. It has a back up camera but if I managed to never have to parallel park it I would be the happiest person ever… ummm scratched hubcaps are my jam. oh wait… crap.
Then Price was taken out (again) by baby germs and he took Wednesday off to sleep all day. Which is so unlike Price. He has taken 2 sick days since she has been born. I think he took 2 sick days in the 5 years prior. Baby germs are the worst.
Thursday was a night filled with last minute errands, like getting EZ-pass renewed before it expired. Since I was in the mall, I got Autumn the cutest ruffily Minnie Mouse swimsuit ever for the swim class that starts on Sunday. It has a tu-tu. #win But I couldn’t get my eyebrows waxed since none of the damn places accepted a tip on a card. #lose #seriouslynoonecarriescashanymore! But in all it was a great night.
Which brings us to today and before you know it will be Monday. So get to the grocery store and get the few things needed for this pie so you can serve it up for your Memorial Day BBQ.
It’s filled with summery strawberries so it’s perfect for the unofficial start of summer! Plus it’s bright red. So it gets points for being patriotic too!
In all it took me 30 minutes to make. The store-bought pie crust was thawing (per instructions) while the oven was preheating. Then while it baked I cut up the strawberries. Once the pie crust was out of the oven it began to cool while I made the Jell-o filling. Once that was done I put the strawberries into the crust and put the filling right in. Then it just needed to set up, which I suggest you do overnight.

Strawberry Pie
Males a 9-inch Pie
Ingredients
- 1 deep dish 9″ pie shell, homemade or store-bought
- 2 cups sliced/diced strawberries
- 3 Tablespoons cornstarch
- 1 cup sugar
- 1 1/2 cups water
- 3 oz box strawberry Jell-O
Process
- Bake the pie crust according to the recipe or the instructions on the packaging.
- Line the bottom of the pie shell with the sliced strawberries
- In a small saucepan, combine cornstarch, sugar and water. Bring the mixture to a boil and simmer, stirring constantly, until thickened. Add the Jell-O and stir until dissolved.
- Pour over the strawberries and refrigerate until set.

I loved Price’s instagram day with Autumn. It was so cute! You had a crazy busy week. I don’t know how you don’t just sleep all weekend. And I have been wanting pie for WEEKS and this is not helping!
