Party Pico de Gallo

Price and I recently had a party at our place for my birthday. It was centered around a Mexican theme so I’ll be posting a few recipes from that that works well for a fiesta or just a great gathering. Enjoy!

Pico de Gallo is one of my favorite things to have on hand for topping on our dinners because it’s a great addition to chicken, steak, pork, or even a salad. But I really love to share at a party. Chips and dip are classic party foods and there is a great reason for it. They are filling, great finger foods, and can be centrally located on a coffee table while people are gathered around.

I much prefer poco de gallo over a jarred salsa. There is no comparison really. Pico de gallo has such a fresh, vibrant taste from all the fresh vegetables in the mix. The lime juice really helps all the flavors intensify as well. I feel that little home made touches like this really make a meal so much people. Also when you serve this to guests they notice the homemade touch.

With the Super Bowl coming up this weekend this would be great to throw together for the big game, but really making a big batch works well for any sporting event or gathering, especially Cinco De Mayo. I suggest serving it with some tortilla chips, corn chips, pita chips, or celery at your next party.

Party Sized Pico de Gallo

Serves 20-25 people

Ingredients

  • 4 pounds of Roma tomatoes
  • 2 large red onions
  • 4-6 cloves minced garlic
  • 5-6 jalapeños
  • large handful (approximately half a bunch) of cilantro
  • juice of 2 limes
  • salt and pepper

Process

  1. Dice both onions and put into a large bowl.
  2. Remove the tops of the tomatoes. Halve the tomatoes length wise, halve again. Remove the seeds by sliding you knife along the inner membrane. Cut the flesh into long strips and the run your knife through the strips for a small dice. Add tomatoes to the onions.
  3. Add the garlic.
  4. Mince the jalapeños by cutting off their tops, halving them, removing the seeds (optional), and running your knife along the pieces until they are uniformly small. Add to the mixture in the bowl.
  5. Take your fresh cilantro and evenly chop the pieces, stems included. Add to the mixture.
  6. Squeeze 2 limes over the mixture. Gently mix the pico de gallo.
  7. Add salt and pepper to taste. Give another quick toss to incorporate.

One of my favorite foods to eat while watching football is a jalapeno popper. I love the crunch from the outside breading, the heat from the jalapeno, and creamy, cheesy filling. The perfect bite!

Almost legal

Last night Price and I went to The Rattlesnake‘s 20th Anniversary Party. We had a blast celebrating this occasion at one of our favorite places in Boston. Oh you wonder how did we get on the list? Well I’ll tell you… I WON THE MARGARITA CONTEST!!!!!! w00t w00t!!! I won the contest with the Cranberry Ginger Margarita recipe that I previously posted about. I was so excited to get the email saying that I won. The best part was that part of the contest prize was that a donation would be put in your name to the Dana Faber Cancer Institute. But I asked Chef Brian Poe if it could be made in my mom’s name since she survived breast cancer and he agreed.

We enjoyed the food that included some of our favorite things on the menu, like Grilled Corn Bread, Prosciutto-Wrapped Blackened Tuna, Hudson Valley Duck Tacos, and Horseradish & Red Wine Braised Beef Short Rib Tacos. The beef short rib tacos are only on the menu for a short period of time so I know I will have to get them again before my luck runs out. What I really appreciate about the food there is how well it all comes together, like I would never think a lavender oil would make sense with a lobster stuffed grilled avocado but it really does.

Besides the food, they had an open bar! Since I had a coughing fit the minute we walked in, I stuck with some water at the start of the night. While we were seated and enjoying the food a waitress came up to us asking if we wanted any drinks. I was planning on going with a Raspberry Margarita, one of their “Pink” drinks that was featured. BUT THEN… she went on to tell us about “another margarita that’s really good. A Cranberry Ginger Margarita.” So she is rattling on about the margarita and how it is made with a gingered sugar rim, all while I am trying to tell her that it’s ‘mine’. When she was explaining about the contest I was able to shout over the party’s noise to let her know that I was the winner. So at that point I had to get it. It was really exciting to try it there esp since I didn’t think it was going to be there since the contest said it would be on the menu from 10/20-11/20. Surprises are always good.

Before leaving I got to chat with Chef Brian Poe for a few minutes about the contest, margarita, and how much I love The Rattlesnake. No, I was not a complete kiss ass. We had a real conversation about how the place has really improved since he started there in 2009. For example, I have tweeted and FB msg’d Poe in the past and he has msg’d me through FB and yelp about different ‘issues’. One being that they had shitastic neon paper menus and I told him how that did not properly represent the good quality of his food (he remembered that!). We also discussed the new uniforms for the waitresses there. Yay! No more tight mini black skirts!!!! In general I loved how he actaully remembered the feedback I, and others, have given him and how he has evaluated those things  in order to improve The Rattlesnake. How can you not like a place that is constantly striving to get better?

So that is why Price and I had a great night and why we will continue to go back to the Rattlesnake.

Graduation Part 3: We like to Party!

Last but not least, this is the final installment of my college graduation pictures. We had such a great time having our family and friends over. We had BBQ from Red Bones and have 2 women from Hostess Helper come help to make it all run smoothly. They were great esp when we were about to bring the food out and is started to have a heavy summer shower. They quickly regrouped and we cleared off tables and chowed down on a lot of food inside.

We even had a caricature station set up! I had met Ash Jackson at a party before and loved the work that he does. My nephews loved him and we loved that he was so great for taking the time to whip up dinosaurs and animals for them while getting out caricatures done. I’m going to get our caricature framed this week!!!

A big thank you to our family and friends for all your support and for celebrating with us. And, of course, a big thanks to my mom for organizing such a great party.
