It’s the last day of S’mores Week 2017!!!

Amanda and I have hoped that you enjoyed the fun S’mores recipes that we shared this week. We have always had a blast sharing these recipes. I an’t believe it was already our 5th year doing it.

I wanted to really go all out this year with fun things like S’mores Monkey Bread, the Boozy S’mores Milkshake I shared yesterday and I wanted to end the week with a bang! So I decided to hit the scales hard with a fun combination of elements to make this crazy treat.

Let’s go… Chocolate chip cookies! Nutella! Marshmallow! Ice Cream!

S'mores Chocolate Chip Cookie Ice Cream Sandwiches

S’mores Chocolate Chip Cookie Ice Cream Sandwiches

Makes 4

Ingredients

  • 8 chocolate chip cookies
  • 1/4 Cup nutella
  • 4 large marshmallows
  • 4 scoops of ice cream, vanilla is suggested

Process

  1. Arrange 4 chocolate chip cookies on a baking sheet. Spread a Tablespoon of Nutella on each cookie.
  2. Place a scoop of ice cream on each cookie and immediately put into the freezer.
  3. Roast the marshmallows and put them on the other cookies.
  4. Sandwich together while the marshmallow is still warm.

It’s our 3rd S’mores week! That means we have shared 20 s’mores recipes together. And you better brace yourself for another 10!!!

We have been joking that we have been keeping Hershey’s in business since we have been doing so many trips to the grocery store for chocolate, graham crackers, and marshmallows. SO MANY MARSHMALLOWS!!

Even my Dad has been enjoying the goodies I have been making for the past few weeks as even though he hates marshmallow. He reminds me that often as he eats another treat filled with marshmallows. I guess the point is that s’mores hook people. They just get ya and suck you into their sugary coma inducing deliciousness.

This S’mores Cheese Ball is the perfect change up to your average cheese ball that is a hit appetizer. Now you can enjoy a cheese ball for dessert!!

It’s so simple to make and is so delicious. Plus, it’s just fun.

The only real tip I have related to making this cheese ball is that you don’t want a lot of the mini marshmallows on the outside of the cheese ball as the coating won’t stick to them. So take a minute to push them in and keep the cream cheese on the outside so the coating will stick nicely.

I went on a mission to find the marshmallow bits since my local grocery store didn’t have them, but Target did. Target to the rescue. That is why I love Target so dang much.

Also, I found graham cracker dippers at my local grocery store, which are just graham crackers that are in long shapes to make dipping easy. If you don’t have them where you live, then just use graham crackers that you break off into segments.

Be sure to make this for your next party! It will be a hit!

S’mores Cheese Ball

Makes 1 large ball, will feed a crowd of 8-12

Ingredients

For the cheese ball

  • 16 ounces cream cheese, at room temperature
  • 1/3 Cup powdered sugar
  • 1 teaspoon vanilla bean paste or vanilla extract
  • 1 Cup marshmallow Fluff
  • 1/2 Cup mini marshmallows
  • 1 cup mini chocolate chips

For the outer coating

  • 1/3 Cup graham cracker crumbs
  • 1/4 mini chocolate chips
  • 1/4 cup marshmallow bits
  • graham cracker dippers

 Process 

  1. In the bowl of a stand mixer, beat together the cream cheese, powdered sugar, and vanilla bean pasta. Add in the marshmallow Fluff and beat well.
  2. Using a rubber spatula, mix in the mini marshmallow and mini chocolate chips.
  3. Dump out the mixture onto a sheet of parchment paper. Using the parchment paper, sculpt the mixture into a ball. Push the mini marshmallows into the ball. Place into a round bowl.
  4. Freeze for 20 minutes.
  5. While cheese ball is chilling, combine the graham cracker crumbs, chocolate chips, and marshmallow bits on a large plate and mix.
  6. Remove cheese ball from the freezer. Remove the cheese ball from the parchment and roll in graham cracker mixture and refine further into a call using your hands.
  7. Refrigerate the coated cheese ball least 30 minutes before serving. Server with graham cracker dippers.

Last night, I went to my first spin class and I not only didn’t die, but I loved it!!!

It was so freaking fun. It was intense but I was looking for that. I loved the music and the instructor. I went with my co-worker Nancy so I had a buddy and wouldn’t chicken out once I got there. I’m glad that I went and stuck it out. I didn’t stop at all for the 45 minutes. Next time I have to work on increasing the resistance more every time the instructor guided up over those ‘mountains’.

The only issue is that it isn’t cheap. Oh dang. But that just means you need to visit my blog A LOT so I can go get some moolah to go to more classes so I can then eat these fun things like this S’mores Banana Bread. ha! But really…

I have an addiction to banana bread. I buy bags and bags of ripe bananas at our local grocery store at a discount. It’s really quiet brilliant. I get tons of bananas at a cheaper price and I don’t have to wait days and days for them to get ripe for banana bread.

And since it’s S’mores Week for Amanda and I, I had to make a version of my favorite banana bread that was s’mores-a-fide.

I really had tons of fun making this banana bread!!

It was all about getting the fun s’mores ingredients IN and ON the banana bread. It’s quite intense, but in a good way.

The trick to this bread is that you need not to freak out when you’re baking it. The marshmallows will get melty, bubbily, and brown while it bakes. They are basically just caramelizing. Super yum. But I’m just clarifying that so you don’t go ‘OMG! It’s all ruined’ and hate me when you are baking it.

I believe that you need to find some balance in your life, and the best way to do it is to eat some of this S’mores Banana Bread and then take a spin class! At least that’s my plan!

S’mores Banana Bread

Ingredients

For the Bread

  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 4 overripe bananas
  • 1/2 Cup sugar
  • 3/4 cup (1 1/2 sticks) unsalted butter, melted and cooled
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 3/4 Cup mini marshmallows
  • 3/4 Cup dark chocolate chunks/chips
  • 3 1/2 Graham Cracker Crackers, broken into small pieces

For the S’mores Topping

  • 1/2 Cup mini marshmallows
  • 1/2 Cup dark chocolate chunks/chips
  • 1 1/2 Graham Cracker Crackers, broken into small pieces

Process

  1. Preheat oven to 350 degrees.
  2. Prepare a 9 by 5-inch loaf pan by lightly greasing the surfaces. Lay a piece of parchment in the pan with ‘wings’ hanging out the sides. Then set on a baking sheet.
  3. In a large bowl, combine the flour, baking soda, and salt; set aside.
  4. Put 2 bananas and the sugar in the bowl of a stand mixer. Mix together for 3 minutes; you want a light and fluffy banana cream.
  5. Add the melted butter, eggs, and vanilla extract; beat well and scrape down the sides of the bowl.
  6. Mix in the dry ingredients until about 50% incorporated.
  7. Add in the 2 remaining bananas with the mini marshmallows, chocolate, and graham cracker pieces. Mix together until the bananas are broken up and the rest of the ingredients are more incorporated.
  8. Pour the batter into the prepared loaf pan. Give the pan a good rap on the counter to get any air bubbles out. Sprinkle the mini marshmallows, chocolate chunks, and pieces of graham cracker on the top of the bread.
  9. Bake for about 1 hour and 15 minutes, until golden brown and a toothpick inserted into the center of the loaf comes out clean. Rotate the pan periodically to ensure even browning. The top will get all bubbly as the marshmallows melt and get caramelized.
  10. Cool the bread COMPLETELY in the pan for before removing by picking it up with the parchment paper wings. Slice and enjoy!

You know that old Youtube video called “David after the Dentist, and how it’s just the funniest thing ever. Well, I had my own special animal version of that the other night.

So our dog Kemper had to go to the vet yesterday for a yearly exam and dental cleaning. They knock him out for his dental exam so when I picked him up he was all doped up still. He normally comes barreling out of the back all excited to see us, but this time he was carried out and when he saw me he almost lick/bit/headbutted me. So uncoordinated.

I put him down twice outside to pee before getting in the car but he just stood there was droopy head like “Lady, not happening.” Then in the car he kept falling over when he was trying to sit up so most of the time I was telling him to just lay down. He couldn’t even hold his head up all the way. Oh my goodness so funny and cute.

At home, he did manage to go to the bathroom but almost fell over doing so. Ha! He was basically out of the night but was back to his normal nutty self the next morning. At least we had some mellowness and fun for a few hours.

Anyway, it’s Waffle Wednesday and its S’mores Week so of course I’d have to make a S’mores Waffle. #duh

And since I’m focusing on Puffles (waffles made with puff pastry) this month, it’s a S’mores Puffle Waffle. It’s so awesome.

I attempted these once before with chocolate chips and marshmallows inside but it failed miserably. The chocolate didn’t melt evenlt throughout so you’d never get consistent chocolate flavor in every bite. The worst part were those dang marshmallows. They just melted from the heat of the waffle iron and busted out for an escape. So no marshmallows inside the puffle any longer and just a disgusting mess for me to clean up in the waffle iron.

But this way is so much better!!! Hooray!!!

The chocolate is spread evenly throughout so you get nice chocolately bite after chocolately bite. The marshmallow Fluff on top gets nice and melty on top from the warmth of the puffle. Lastly, the graham crackers pieces add nice pops of flavor.

Enjoy the crunch for the puffle waffle with each bite and savor the S’mores flavors as you take a big bite!

S'mores Puffle Waffle-4

S’mores Puffle Waffles

Makes 8 puffles, 4 servings

Ingredients

  • 1 17.5 ounce box of puff pastry (preferably, all-butter)
  • 4 hearty spoonfuls of Nutella, plus more for drizzling
  • 4 hearty spoonfuls of marshmallow Fluff
  • 2 graham crackers, broken into small pieces

Process

  1. Thaw the puff pastry according to the instructions on the box. (Typically 40 minutes at room temperature prior to use)
  2. Roll out the puff pastry on a lightly floured work surface to be 12″ x 12″. Work the dough to eliminate the seams. Cut the dough into 4 equal sized pieces. Score each piece in half.
  3. Leaving 1/2″ boarder, spread a heaping spoonful of Nutella on half of each piece.
  4. Fold the other half of the puff pastry over the filling, crimp the edges to seal the Nutella inside the pastry dough.
  5. Repeat with the other sheet of puff pastry dough to make the other 4 puffles.
  6. Preheat your waffle iron at this point. Place the puffle dough on the waffle iron. Cook for 3-4 minutes, or until golden brown. The dough should no longer be expanding and puffing up when you open the waffle iron.
  7. Gently remove, and place on a cooling rack until ready to serve the puffles.
  8. Plate 2 puffles, drizzle some warmed marshmallow Fluff and Nutella on the puffles. Sprinkle with the pieces of graham cracker pieces. Enjoy!!

S’mores Campfire Banana Boats

When I was growing up I used to go to sleep away camp at Camp Hazen in central Connecticut.

I have some of my best memories from the fun times I had during the 30 weeks I spent at camp over 5 years. It was such a blast with swimming, horse back riding (the horse I rode was named Cadallic), playing rounds and rounds of the cup game in the mess hall, eating fresh baked bread, and staying up way too late.

I won’t even get into the time my friend and I got in trouble for dying our hair there… obviously I would get in trouble for that!

Endless amounts of fun, which was often focused around the campfire singing J J Coolay and doing skits.

Other great things to do around a campfire is to roast marshmallows, make s’mores, ‘bake’ orange cakes, and make campfire banana splits. So I combined s’mores and campfire banana splits to make these s’mores campfire banana splits.

Sadly, I was not sitting on a log around a campfire when I made these S’mores Campfire Banana Splits. I made these in the oven but you can easily make them on your grill after dinner as well.

They are so simple but so good. Which is perfect for the kid in all of us.

S’mores Campfire Banana Boats

Makes 2

Ingredients

  • 2 bananas
  • 2 fudge covered graham crackers
  • 2 dozen mini marshmallows

Process

  1. Preheat oven or grill to 425 degrees. Prepare 2 pieces of aluminum foil (approx 12″x12″) by spraying with cooking spray.
  2. Slice each banana peel length wise. Carefully open the banana peel and slice the banana diagonially and lenthwise. Spread out the banana with your knife.
  3. Stuff broken peices of 1 graham cracker and a dozen mini marshmallows in each banana.
  4. Bake for 12-14 minutes or until the marshmallows have melted. Carefully unwrap and enjoy!!
