It’s the last day of S’mores Week 2017!!!

Amanda and I have hoped that you enjoyed the fun S’mores recipes that we shared this week. We have always had a blast sharing these recipes. I an’t believe it was already our 5th year doing it.

I wanted to really go all out this year with fun things like S’mores Monkey Bread, the Boozy S’mores Milkshake I shared yesterday and I wanted to end the week with a bang! So I decided to hit the scales hard with a fun combination of elements to make this crazy treat.

Let’s go… Chocolate chip cookies! Nutella! Marshmallow! Ice Cream!

S'mores Chocolate Chip Cookie Ice Cream Sandwiches

S’mores Chocolate Chip Cookie Ice Cream Sandwiches

Makes 4


  • 8 chocolate chip cookies
  • 1/4 Cup nutella
  • 4 large marshmallows
  • 4 scoops of ice cream, vanilla is suggested


  1. Arrange 4 chocolate chip cookies on a baking sheet. Spread a Tablespoon of Nutella on each cookie.
  2. Place a scoop of ice cream on each cookie and immediately put into the freezer.
  3. Roast the marshmallows and put them on the other cookies.
  4. Sandwich together while the marshmallow is still warm.

They were here for the whole day doing set up and getting overall kitchen pictures and pictures of the products in use. It was such a cool experience.

Anyway, have you made cake mix cookies before?

I am so addicted to them and how easy they are to whip up. They are my new go to sweet treat activity with Autumn. I now stock up on cake mix when they are on sale. If the timing is right I can get them 10 for $10. Just a few affordable ingredients that just need mixing that a 3 year old can easily go.

Obviously, making cake mix cookies is fun but the best part with these S’mores Cake Mix Cookies is the fun goodies you add ino the mix and on the top. How can you resist a chocolate cookie with chocolate chips, pieces of graham cracker, and itty bitty marshmallow bits??! You just can’t!

The cookie base has a nice fudgy texture and the added s’mores fix-in’s are the best finishing touch to bring that camp fire experience indoors. Be sure to grab a glass of milk and enjoy a cookie or two.

S’mores Cake Mix Cookies

Makes 22-24 Cookies


  • 1/2 Cup vegetable oil
  • 2 eggs
  • 15.25 ounce package of chocolate cake mix
  • 2 graham crackers, crushed
  • 1 Cup chocolate Chips
  • 1/2 Cup Mini Marshmallow Bits


  1. Preheat oven to 350F degrees. Place a non-stick silicone baking mat on a large cookie sheet.
  2. Whisk together the oil and the eggs until combined. Mix in the cake mix.
  3. Once the cake mix is completely moist and lump free, mix in the graham crackers, chocolate chips, and marshmallow bits.
  4. Scoop heaping tablespoon sized dough balls on to the baking sheet.
  5. Bake for 8-10 minutes. Let the cookies cool on the cookie sheet for a few minutes to allow of them to set up. Remove to continue to cool on a cooling rack.

They are the perfect mix of sweet and salty! A yummy mix of crispy rice cereal and golden grahams are coated in peanut butter and melted marshmallows and then tossed with crispy bacon and chocolate chunks.

But it’s been worth it. How can it not be?!?!

Chocolate… check!

Marshmallow… check!

Graham Cracker… check!

And I really needed to step my game up this year as it is the 5th (!!!) year that Amanda and I have done S’mores week together. Holy cow!!

The funniest part of this whole thing is that I used to hate S’mores and now I love them. I just never liked the traditional S’more that much  since the graham cracker was so crunchy and the chocolate never melted much so it was just blah. The real star of the trio was the marshmallow, but now that I have mastered my S’more making techniques and have been having a blast making all these different variations.

Now that we have been doing this for 5 years, we have each made 25 S’mores recipes. Plus, some extras that are just in our S’mores Addiction Ebook, that we created last year. Clearly, we love s’mores. Maybe that should be our next matching tattoo that we get together? ha!

This S’mores Monkey Bread doesn’t disappoint!

I made this monkey bread and had to get it out of my house ASAP for fear of eating way, way too much of it. The flavor and texture was great from the S’mores mix in’s that are combined throughout the monkey bread. But then it gets even better from the toppings. That quick fudgy sauce is the real deal finisher for this bread.

Don’t say I didn’t warn you!

S’mores Monkey Bread

Makes 12 servings


For the monkey bread

  • 2 biscuit cans (1 lb each)
  • 1/2 Cup sugar
  • 1/2 Cup brown sugar
  • 1 Tablespoon cinnamon
  • 6 graham crackers broken into small pieces
  • 1 Cup chocolate chips
  • 1 Cup mini marshmallows
  • 1/2 Cup marshmallow bits
  • 12 Tablespoons unsalted butter, melted

For the topping

  • 1/2 Cup chocolate chips
  • 1/4 Cup heavy cream


  1. Preheat oven to 350F degrees. Grease a 12-cup bundt pan.
  2. Cut each biscuit into 8 pieces. (I suggest using kitchen shears)
  3. Combine the sugar, brown sugar, cinnamon, graham cracker pieces, chocolate chips, and marshmallows to a very large bowl.
  4. Add the biscuit pieces in batches and mix to coat.
  5. Pour the coated biscuit pieces into the bundt pan with the s’more mixture. As you do this you want to make sure the graham cracker pieces, chocolate chips, and marshmallows are evenly distributed throughout the bundt pan.
  6. Pour the melted butter evenly over the monkey bread mixture.
  7. Bake for 40-45 minutes, until the top is golden brown. Rotate in the oven half way through.
  8. Just prior to the monkey bread being done baking, make the sauce by combining the chocolate chips and heavy cream. Heat over low heat, stirring as it melts. (You can even do this in the microwave by heating for 15 second intervals at 50% heat, stirring until smooth).
  9. When the monkey bread is done, immediately flip it out onto your serving dish.
  10. Top with the chocolate sauce, graham cracker crumbs, and mini marshmallows.

Over the years we have done plenty of joint blogging things together from our Thirsty Thursday posts to our S’mores Weeks posts. It’s been a blast to have such a friend in Amanda and do these fun things with her.

As we decided to do another week of S’mores recipes on our blog this summer (for the 3rd time!) we decided to amp things up and self publish an ecookbook of all things S’mores.

So we bought insane amounts of chocolate bars, graham crackers, and marshmallows and got elbow deep in the s’mores madness. Chocolate of all kinds from chocolate bars to chocolate chips and milk chocolate to dark chocolate. Graham crackers and graham cracker crumbs. And marshmallows of all shapes, sizes, and flavors!

At this point my husband doesn’t want to see a S’more for a very long time since I tested so many recipes. ha!!

While my family has been enjoying some treats (I actually share most with neighbors and our coworkers), they are thankful that S’mores week is wrapping up so I can fully clear off the kitchen counter of all the s’mores goodies. I get it, nothing worse than being surrounded by sweets and they are all off limits to you. ha!

The bars consist of layers of a graham cracker base, chocolate chip cookie layer, and a roasty, toasty marshmallow and chocolate layer.

How can you beat the combination of S’mores and Chocolate Chip Cookies?!?!

You can’t!!!

That is why you just have to make these delicious treats!

 S’mores Chocolate Chip Cookie Bars

Makes 24 bars


For the graham cracker crust

  • 2 Cups graham cracker crumbs
  • 1/2 Cup sugar
  • 1/2 Cup butter, melted

For the cookie layer

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup (2 sticks) butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups (12-oz. pkg.) of semi sweet chocolate chips

For the top layer

  • 2 Cups mini marshmallows
  • 2 Hersey Bars, broken into segments


  1. Preheat the oven to 375 degrees. Grease a 13×9 glass pan.
  2. Make the graham cracker crust by combining the graham cracker crumbs, sugar, and melted butter. Mix well.
  3. Evenly spread in the pan
  4. Combine the flour, baking soda, and salt in small bowl; set aside.
  5. Beat the butter, sugars, and vanilla extract in large mixer bowl. Add the eggs, one at a time, beating well after each addition.Gradually beat in flour mixture. Stir in the chocolate chips and nuts.
  6. Spread into the prepared pan.
  7. Bake for 25 minutes or until golden brown.
  8. Immediately add the marshmallows to the top. Place under your broiler for 1-2 minutes (keep an eye on it!) to melt and lightly toast the marshmallows.
  9. Sporadically place the chocolate pieces. Cool in pan on wire rack. Cut into 24 bars.
