Mardi Gras is next week so that is why Amanda and I picked a Mardi Gras inspired drink and treat to share this week. And of course I had to make a Hurricane!

Pricer was down in Biloxi in ’07 to work on designing and building houses destroyed from Hurricane Katrina. He left in August and came back in December, and the only time we saw each other was for his birthday in September when we met in New Orleans. It was such a great weekend since we got to see each other, celebrate his birthday and fall in love with New Orleans. We stayed at Le Pavillon Hotel and wandered around the French Quarter finding great bars, fun restaurants, and great shopping. All of it was fantastic from the beignets to the gem & lapidary shop but best was that we could walk around with a bevie in hand. Stark comparison from Boston where you’ll get carded in your 50’s. So we really enjoyed getting to wander around with a drink in hand, most often a Hurricane.

Once we decided to have a Mardi Gras theme I thought of making a Hurricane. It’s really a great drink to enjoy in the hot summer but I just had to make it now in February (on the eve of a massive blizzard) since it reminded me to much of my visit to The Big Easy.

I hope you enjoy a Hurricane and a King Cake Cupcake to celebrate Mardi Gras no matter where you are. I think Amanda should send me some King Cake Cupcakes, right? They look so cute!!

The Hurricane Cocktail

Makes 1 drink

Ingredients

  • 2 oz light rum
  • 2 oz dark rum
  • 2 oz passion fruit juice
  • 1 oz orange juice
  • ½ oz fresh lime juice
  • 1 Tablespoon simple syrup
  • 1 Tablespoon grenadine
  • Garnish: orange slice and cherry

Process

  1. Shake all of the ingredients in a cocktail shaker with ice.
  2. Strain into a Hurricane glass filled with ice.
  3. Garnish with a cherry and an orange slice.

S’mores Chex Mix

S'mores Chex Mix

You know those times on twitter when are you DMing someone about your shared love of s’mores so you guys come up with the idea to do a week of s’mores recipes on your blogs?

Yep, those moments are pure genius.

And that is exactly what happened between Amanda and I after I was complaining to her how I could not stop thinking about the baked s’mores bars that I made after she posted s’mores bars on her blog and the new s’mores pizza she just posted.

So many s’mores, so little time? I don’t think so!!

So that became a springboard for us to post different s’mores themed recipes on our blog everyday this week.

S'mores Chex Mix-2

So here I am bringing you a S’mores Chex Mix while Amanda shares S’mores Ice Cream Sandwiches.

The S’mores Chex Mix is so addictive that you can’t stop munching on and the S’mores Ice Cream Sandwiches are the perfect summer time treat to change up the roasted, toasted routine.

I loved when I made muddy buddies and biscoff muddy buddies before so I used them to inspire me to make this S’mores Chex Mix. I love the texture of muddy buddies with the cereal being coated with a chocolate based mixture and then coated again with powdered sugar so I wanted to do that same for this S’mores Chex Mix. I made a mixture of milk chocolate and marshmallows to coat the cereals before the powered sugar. Then I added more milk chocolate chips and mini marshmallows to the mix for an extra s’mores flavored kick!

S'mores Chex Mix-4

S’mores Chex Mix

Makes 18 servings

Ingredients

  • 4 cups of Corn Chex (120 grams)
  • 5 cups of Golden Grahams (206 grams)
  • 1/4 cup unsalted butter
  • 2 cups of milk chocolate chips, divided in 1 cup portions (123 grams)
  • mini marshmallows, divided
  • 2 cups powdered sugar

Process

  1. Measure out the Golden Grahams and Corn Chex cereals. Pour the cereal out on a large sheet tray.
  2. Combine the butter, 1 cup of milk chocolate chips, and 3/4 cup mini marshmallow in a bowl. Microwave in 15 second increments and mix until the ingredients every time until the mixture is melted together.
  3. Pour the melted chocolate mixture onto the cereals. Gently mix until all the cereals are evenly coated. Sift the powdered sugar in small batches on the cereals and mix every time to incorporate.
  4. Once the coated cereals have cooled, mix in the remaining mini marshmallows and chocolate chips.

What happens when 2 food bloggers hang out for 5 days?

Do they cook a ton? Do they develop recipes? Do they blog a lot?

No! They eat out at restaurants and get take out pizza, drink margaritas and eat chips and salsa for cinco de mayo, go to the zoo and Ikea, watch a lot of Top Chef and other reality TV, and take kids to the ER (well, only once).

Most importantly, they take pictures of their glittery shoes!!!

I really had an amazing time with Amanda having fun, relaxing, and playing around with 3 adorable kiddos.

The shoes I’m wearing (I have the tattoo) are from Mix No 6. in Barbie Glitter Pump. I love them as they are so comfortable and glittery!
