I bought an Instant Pot just after Thanksgiving while it was on sale on Amazon. It came quickly (thanks Prime… I love you!) but then I didn’t know what to do with it. I was scared to touch it.

Well, there are instructions but I didn’t know about what recipe to start with. Once my dad brought home a pot roast I knew that I needed to try that. I love cooking with the slow cooker but wanted to give the pressure cooker a try this time.

S’mores Crack

S'mores Crack

Hopefully, our house will be ready before Christmas.

That is, if it stops raining!!! It’s really not that bad but they were supposed to start on Monday but I stopped by yesterday and nothing was done. Nothing! Well, except for the big mound of dirt that was on our lot that belonged to our neighbor’s from when they cleared her lot. So I guess, some progress?

I am really looking forward to seeing the foundation laid out so we can see where our house is on the lot. We have the plot plan, but just want to ‘see’ it in place. It will then start to feel real.

I’ve been in a cooking funk.

I’m currently in a ‘nope don’t wanna cook anything’ phase. Basically, all I make anymore is pies. And that is just to have something to post on Fridays. I guess I could post about making Bacon Egg and Cheese sandwiches since I’m a rock star at at making them. But I should be since that is about all I’ve been making lately- breakfast sandwiches, bowls of cereal, and making calls for take out.

Shouldn’t I be super inspired to make some great meals now since some much is in season and we love summer time grilling? It be great for some BBQ chicken breasts with some grilled veggies. Or some of these pork kabobs? What about a juicy steak? Or skip the grill and at least make a great fresh salad, no?

But truthfully, we’re beat. Autumn hasn’t been sleeping that well. Thanks teething. And whatever else is going on. Blah.

And I recently got a Fitbit Flex so I’m all about walking while it’s still nice (I shudder thinking about winter already) and before Autumn’s bedtime so getting out of the house for a 2 1/2- 3 1/2 mile walk at night it my top priority. It’s sooo nice to be able to get out to stretch our legs. But it just means something has to give and that has been making a real dinner.

At least all that walking has helped balance things out when I shovel mouthfuls of warm ooey gooey pie into my mouth. RIGHT?!? That’s what I figure when I walk over 15,000-18,000 steps in a day.

When I was taking photos of this pie in front of our house (best lighting) my neighbor started to say hi and ask what I was doing. He doesn’t know English that well, so instead of trying to explain what blogging is to him I told him to go back inside and get a plate. He then came over with this plate and I slapped a piece of warm pie right on it. I think his eyes bugged out of his head a bit when he really saw this baby.

And then a guy driving by in a truck slowed down and stopped saying “You taking a picture of a pie?” I shouted back “Yep!” He still looked a bit confused but went with it “Okay…” and then drove on.

That’s right, this pie is attention getting!!

How could anyone ignore this Reese’s Cup Marshmallow Peanut Butter Cookie Pie?!?! I mean, come on, a peanut butter cookie crust, chocolate chips, Reese’s Cups, and mini marshmallows. Ridiculous.

The crust is easy to make but if you find a roll of refrigerated peanut butter cookies at your grocery store then feel free to give that a try. Then it’s all about raiding the candy aisle and dumping that into this pie. The candy make the filling ooey gooey so just accept some sloppy slices, but it’s worth the mess. I swear.

Reese’s Cup Marshmallow Peanut Butter Cookie Pie

Make a 9″ deep dish pie

Ingredients

For the Crust

  • 1/2 cup of unsalted butter
  • 3/4 cup brown sugar
  • 1/2 cup smooth creamy butter
  • 1 egg
  • 1 1/2 cups self rising flour

For the Filling

  • 1/2 cup chocolate chips
  • 12 Reese’s peanut butter cups
  • 1 1/2 to 2 cups of mini marshmallows

Process

  1. Preheat the oven to 350 degrees. Prepare a deep dish pie plate by spraying with non stick cooking spray.
  2. To make the crust, cream together the butter and brown sugar together. Add the peanut butter, egg, and flour and mix to thoroughly combined. Press 2/3 of the dough into the bottom and up sides of the pie plate. Place the remaining dough into the refrigerator. Bake for 5 to 8 minutes or until it’s just starting to set up.
  3. Sprinkle the chocolate chips evenly over the semi-cooked bottom. Place the peanut butter cups over the chocolate chips. Lastly, sprinkle the marshmallows over the top.
  4. Roll out chunks of dough to create 1″ round balls of remaining dough into the palm of your hand, press to create a 1/4″ thick disk. Create the top crust by placing the pieces on top of the marshmallows (pieces can overlap).
  5. Bake for an additional 18-20 minutes or until golden brown. The center of the pie will still be very jiggly as the filling should be very gooey.
  6. Cool for at least 30 minutes for the perfect piece to come out. Serve warm.

S’mores Cinnamon Rolls

S'mores Cinnamon Rolls

It is Day 4 of S’mores Week! Are you sick of Amanda and I yet? Hope not! Just one more day of great s’mores recipes. hint hint… I have a cocktail for you tomorrow!

Anyway, I originally planned on making mini cheesecakes today but then at the very last minute decided to change my mind resulting in some late night and early morning baking. how early? well this dumb-dumb got up at 4.30a.m. I am crazy. obvi.


 

 

 

I’m so glad that I put in the extra effort to make these because they are incredible. I honestly would not eat them for breakfast but I think they are perfect for a fun, different kind of dessert. It would totally shock someone if you served this for dessert. A big rich cinnamon roll jam packed full of s’mores goodness. The marshmallows get toasty, the chocolate chips get melty, and the graham adds a fun different crunch to it all. Addicting!

S’mores Cinnamon Rolls

makes 12 rolls

Ingredients

Dough

  • 1 cup warm milk (skim works)
  • 1 packet dry active yeast
  • 1/2 cup sugar
  • 2 eggs
  • 1/3 cup unsalted butter melted
  • 4 cups bread flour, 1/2 cup reserved
  • 1 teaspoon salt

Filling

  • 1/4 cup sugar
  • 1/4 cup of brown sugar
  • 2 tablespoons cinnamon
  • 1/3 cup unsalted butter, melted
  • 4 cinnamon graham crackers, broken into small pieces
  • 3/4 cup milk chocolate chips
  • 1 1/2 cups mini marshmallows

Glaze

  • 4 ounces marshmallow Fluff
  • 1/4 cup milk

Process

  1. To prepare the dough, sift together the flours and salt, set aside. Heat the milk per yeast instructions. Once the milk has reached the right temperature (between 100-110F) add the yeast and let proof per instructions. In a large bowl or using a stand mixer, beat 2 eggs. Mix in the sugar and melted butter into the eggs. Gently pour the milk into the bowl. In half cup intervals mix in the bread flour until 3 1/2 cups has been incorporated. With the remaining 1/2 cup, dust a clean smooth surface and coat your hands. Kneed the dough into a ball incorporating the remaining flour. Place into a greased bowl, cover, and let double in size (several hours).
  2. While your dough is rising prepare the  filing by combining the cinnamon  and sugars together in a bowl and the marshmallows, chocolate chips, and graham cracker pieces. in another bowl.
  3. Preheat oven to 350 and grease baking pans.
  4. Roll out dough into a 16 by 21 inch rectangle. Spread the melted butter evenly over dough. First add the sugar mixture to the cover the dough, then add the s’mores mixture. Roll up dough jelly roll style and, cut in half, then cut each section into 6 pieces.  Arrange evenly in pan
  5. Bake for 22-25 minutes or until golden brown.
  6. While rolls are baking combine the fluff and milk. Spread frosting over warm rolls before serving.

S’mores Chex Mix

You know those times on twitter when are you DMing someone about your shared love of s’mores so you guys come up with the idea to do a week of s’mores recipes on your blogs?

Yep, those moments are pure genius.

And that is exactly what happened between Amanda and I after I was complaining to her how I could not stop thinking about the baked s’mores bars that I made after she posted s’mores bars on her blog and the new s’mores pizza she just posted.

So many s’mores, so little time? I don’t think so!!

So that became a springboard for us to post different s’mores themed recipes on our blog everyday this week.

S'mores Chex Mix-2

So here I am bringing you a S’mores Chex Mix while Amanda shares S’mores Ice Cream Sandwiches.

The S’mores Chex Mix is so addictive that you can’t stop munching on and the S’mores Ice Cream Sandwiches are the perfect summer time treat to change up the roasted, toasted routine.

I loved when I made muddy buddies and biscoff muddy buddies before so I used them to inspire me to make this S’mores Chex Mix. I love the texture of muddy buddies with the cereal being coated with a chocolate based mixture and then coated again with powdered sugar so I wanted to do that same for this S’mores Chex Mix. I made a mixture of milk chocolate and marshmallows to coat the cereals before the powered sugar. Then I added more milk chocolate chips and mini marshmallows to the mix for an extra s’mores flavored kick!

S'mores Chex Mix-4

S’mores Chex Mix

Makes 18 servings

Ingredients

  • 4 cups of Corn Chex (120 grams)
  • 5 cups of Golden Grahams (206 grams)
  • 1/4 cup unsalted butter
  • 2 cups of milk chocolate chips, divided in 1 cup portions (123 grams)
  • mini marshmallows, divided
  • 2 cups powdered sugar

Process

  1. Measure out the Golden Grahams and Corn Chex cereals. Pour the cereal out on a large sheet tray.
  2. Combine the butter, 1 cup of milk chocolate chips, and 3/4 cup mini marshmallow in a bowl. Microwave in 15 second increments and mix until the ingredients every time until the mixture is melted together.
  3. Pour the melted chocolate mixture onto the cereals. Gently mix until all the cereals are evenly coated. Sift the powdered sugar in small batches on the cereals and mix every time to incorporate.
  4. Once the coated cereals have cooled, mix in the remaining mini marshmallows and chocolate chips.

Snowman Cupcakes

I have not been the holiday mood this year. We don’t even have a tree. We just have a simple advent calendar I made but it keeps falling down. Go figure. The only ornaments I have up are at my office on my cube. (I do love looking that them all day- Thanks Erin!)

So I have been a bit Grinchy lately and I decided that I had to get out of this by making something fun. What’s better than cupcakes? Cupcakes topped with snowmen! I’m not a big fan of the cucpakes that are filed high with frosting so I decided to use marshmallows for the snowmen. And I’d use chocolate covered pretzels as twiggy arms. hehe

So began my baking at 5.45am on Wed morning. I prepped the night before but I did not feel like baking then so I just decided to make them in the morning. I made a chocolate cupcake with an eggnog frosting. The chocolate was the frozen ground, frosting was the fresh snow where the happy snowmen sat.

These little guys were well received in my office. We were totally maxed out on sweets with a lot of furniture vendors giving us brownies, cookies, candy, cake, and pie, but some people made room for them or brought them home to their kids.

Snowmen Cupcakes

recipe makes 24 cupcakes

Chocolate Cupcake

1/2 cup of unsweetened cocoa power
3/4 cup of coffee
1/2 cup of cold milk
1 tablespoon of vanilla extract
2 1/2 cups of flour
1 1/2 teaspoons baking soda
1 /2 teaspoon salt
2 sticks of unsalted butter, softened to room temperature
1 1/2 cups of sugar
3 large eggs
6 ounces of unsweetened chocolate, melted.
 

Preheat oven to 350. Line 2 12-cup cupcake pans with liners.

Combine the first 4 ingredients together in a small bowl, set side.

Combine the flour, baking soda, and salt together, set aside.

Using a mixer, beat the butter and sugar together until creamy.

Add the eggs to the butter/sugar mixture one at a time. Beat in the melted chocolate, mix thoroughly.

Add in the dry ingredients in thirds, alternating with the liquid ingredients.

Mix all until thoroughly combined. Divide the batter evenly into the 24 cupcake liners.

Bake 16-20 minutes, or until a toothpick is cleanly removed.

Once the cupcakes have cooled frost them and decorate.

 

Eggnog Frosting

2 sticks of unsalted butter, softened to room temperature
1 tablespoon vanilla extract
1/4 cup eggnog
approximately 1 1/2 pounds of confectioners sugar
 

With a mixer, beat the butter until it is light and fluffy. Add in the vanilla  extract and continue to beat it.

Add in 1/2 the eggnog and then add in small batches of confectioners sugar. As the frosting begins to combine, add in the rest of the eggnog and then add enough sugar to reach the desired consistency.

 

Snowmen

12 10″ skewers, cut in half
72 marshmallows (2 packages)
Black and Orange- foodoodlers, gel icing, or markers
24 chocolate covered pretzels (1 package of Flipz is enough)
 

Using a scissor, cut all dowels in half to get 24 “spines” for the snowmen.

Put 3 marshmallows on each skewer. Do not pierce the end of the top marshmallow since it is the head.

Draw face on top marshmallow.

Cut 2 pretzel arms from each pretzel. Using a paring knife or scissor, cut 2 deep slits on each side of the middle marshmallow. Insert each arm into knife slit, marshmallow will “self heel” around pretzel arm.

Insert 1 snowman into each cupcake.

**If you don’t have edible food markers (aka foodoodlers), or forget your stuff at home like me, just use a marker and warn people about the top marshmallow.**
