Saturday Winter Cooking Extravaganza

So I went back in time and became a 50’s house wife this weekend. I planned on cooking a lot this weekend but it got a bit crazy. Our freezer and fridge are packed. What started off as some meal planning became a double batch of chicken soup, marinara and meatballs, orange chicken, beef stew, pumpkin whoopie pies, and then making chinese food with my dad. Oh yeah, I snuck in cooking plantains in there.

Saturday was about sleeping in, get some Vietnamese food with Pricer, getting supplies for our models, food shopping and then “SuperFantasticSaturdayWinterCookingExtravaganza !!!” (per Emily). Our poor stove top, slow cooker, oven, and dishwasher got quite the workout this weekend.

All of this deliciousness is packed into our freezer and fridge. (confession…. we already have a turkey in our freezer but they had huge ones on some crazy sale for 47 cents a pound and I wasthisclose to getting one but did not know how I could justify (to price) 2 turkeys and no room) Price helped me along the way but it was still so sweet that he said ‘thanks for making dinner for the next month.’ ha! I really like when we cook together. 

Now I just hope we don’t lose power/fridge magically breaks or I am bringing all this into work and/or invading Emily’s fridge and freezer (you’ve been warned)

A rabbit’s dream come true

While I was out getting veggies at the local asian market for our rabbits last night I saw this GIANT carrot. I almost got it figuring it would last for several days but honestly it was quite scary. It had to weigh well over a pound!

Not sure it was engineered to be that big or it is a natural carrot variety but I did not want to risk giving my rabbits some nuclear carrot. I thought I would ask about it but when I first asked them for fresh or bottled yuzu and really confused them I figured that I would not have luck with this either. (Note: yuzu is a citrus native to China and Japan that I read about on White on Rice Couple).

So while I often struggle to communicate with the people who work there I get some good deals on veggies. I’ll keep looking into this carrot and hopefully I’ll find some yuzu.

New Holiday Cards

Last night I went to a class for card making hosted by a Brookline Scrapbooking Meetup Group member. We had a great time making the cards and eating on the bread that she had from her classes. (Keep up the good work Danielle!) So between chowing down on breads and sipping cider we made 5 cards using A Muse stamps and products.

I learned so much from this class. I learned about Quickie Glue Pen that I just have to get! Plus it was great to meet other scarpbookers/card makers to discuss products and ideas. For example, we discussed how we love the Crop-a-dile but do not like the Big Bite Crop-a-dile since it is hard to handle.

Lizzie was a great teacher since she worked with everyone’s pace and clearly explained all the different steps to each card. All this has inspired to me to make some holiday cards. I have already gone through my stamps and decided I will use an old Stampin’ Up! set that I love. It is of these really cute hedgehogs  that are wearing scarves, ice skating, and  holding candycanes. Hopefully I can get them done (doubtful) so I can send them out so spread some holiday cheer.

Vanilla Extract

I made my first batch of vanilla extract this spring and I’m hooked. I can taste the difference between homemade compared to store-bought. It tastes so much fresher and I love how I can add vanilla seeds to my recipes once I give the extract a good mix. I really love seeing specs of vanilla in whipped cream.

I decided to make more vanilla extract to give as Christmas gifts. Vanilla extract takes about 2 months before it is ready to use to if you want to give it out as gifts start asap. I started my extract on 10/17 so I will have plenty of time to get it all ready for Christmas. If I did not do it then I would have forgotten about it and then I would be out of luck to give the extract as gifts.

When I made my first batch this past spring I used rum since I had it on hand at that point. I think that the extract was good but the rum was quite strong for an extract. I used vodka this time since vodka has no scent, which I like because it won’t compete with the scent of the vanilla.

I suggest that when you purchase your vanilla beans you use Madagascar vanilla beans because they have a smooth flavor which translates well for extract. They are also known as Bourbon vanilla beans because the French first planted the orchid vines on Isle de Bourbon.  Mexican vanilla beans might have the flavor but some manufactures add coumarin, which is banned by the FDA because it can cause liver and kidney damage.  If you decide to use Mexican vanilla beans or products please use a reputable manufacture. While Tahitian vanilla beans can be used for extract they are not as flavorful compared to other varieties. They are more aromatic, so they are better for scent applications as opposed to baking.

I have purchased my beans from Vanilla Products, a store on ebay. I like how they are a high rated seller and offer different types and quantities of vanilla.

Don’t forget to get a good vodka/rum! You cant have a good vanilla and a crap vodka and  expect great results.

Vanilla extract- about 3 weeks

Vanilla Extract

8oz of vodka or light rum
3 vanilla beans
 

Pour 8oz of liquor into a glass container.  Split and open the vanilla beans. You can scrape the beans to loosen the seeds. Place vanilla beans into the liquor. Store in a cool dark place for 2 months.

*I purchased these glass containers from the Container Store.

Wild Mushroom Risotto

Price and I made mushroom risotto last night. It was the first time I ever made risotto. It took so much longer than the recipe said it would but it was worth it because it was so good. I’m now determined to make lots and lots of risotto.

I pulled out my Martha Stewart Classics Cookbook and got to work. It was really easy to prepare, I just had no idea how many pots/dishes it would use… 1 large to cook risotto, 1 pot for broth, cutting board, 2 bowls for prep, wooden spoon, and bowls for eating. I was hoping around grabbing different bowls and things but now I’ll be better prepared next time.

I followed the recipe with the exception that we: 1) did not have shallots so we used 1 small white onion. 2) we did not have wild mushrooms, so we used button mushrooms, and it still was good 3)We had some truffle butter and we used that with a little bit of unsalted butter to total the amount in the recipe. Truffles make me happy 🙂

We have an electric glass stove top so I had to continually play around with the heat because 1 min it was hot and the broth was getting incorporated quickly and then the next it was taking its sweet time.  Oh I wish to have a nice gas range one day. Plus i think I was a bit nervous in doing this since I have the tendency to cook things on a higher temp that what is called for so I overcompensated this time and the cooking part took about 40 minutes instead of 25-30.

Wild Mushroom Risotto

Serves 4
  • 6 to 8 cups Homemade Chicken Stock, or canned low-sodium chicken broth, skimmed of fat
  • 1/4 ounce dried wild mushrooms, such as porcini
  • 9 ounces assorted fresh wild mushrooms
  • 7 tablespoons olive oil
  • 1/2 cup finely chopped shallots
  • 1 cup Arborio or Carnaroli rice
  • 1/2 cup dry white wine
  • 4 to 6 tablespoons unsalted butter
  • 1/2 cup grated Parmesan cheese, plus more for grating or shaving
  • Salt and freshly ground black pepper

Heat stock in pan over medium heat. Add dried mushrooms; cook until tender, about 5 minutes. Remove with slotted spoon; chop finely. Keep stock at a simmer over medium heat.

Remove stems from fresh mushrooms; chop finely. Slice caps 1/4 inch thick. Heat 1 tablespoon oil in heavy-bottomed saucepan over medium heat. Add mushroom caps; cook, stirring occasionally, until golden and soft, about 3 minutes. Transfer to bowl. To pan, add remaining 6 tablespoons oil, mushroom stems, and shallots. Cook, stirring, until translucent. Add rice; cook, stirring, until rice begins to sound like glass beads, 3 to 4 minutes.

Add wine. Cook, stirring, until wine is absorbed by rice. Using a ladle, add 3/4 cup hot stock to rice. Using a wooden spoon, stir rice constantly, at a moderate speed. When rice has absorbed most but not all of liquid and mixture is just thick enough to leave a clear wake behind the spoon when stirring, add another 3/4 cup stock.

Continue adding stock in this manner, stirring constantly, until rice is mostly translucent but still opaque in center. Continue cooking until rice is al dente, but not crunchy. As rice nears doneness, watch carefully; add smaller amounts of liquid. The mixture should be thick enough that grains are suspended in liquid the consistency of heavy cream. The risotto will thicken slightly when removed from heat.

Add dried mushrooms and mushroom caps; warm over low heat. Remove from heat. Stir in butter and Parmesan; season with salt and pepper. Divide among four bowls; grate Parmesan over risotto. Serve immediately.

The photos are horrible! So sorry about that. The risotto looked so much better in real life. Plus it smelled and tasted great. I thought the process was easy and the result was great. I think I am going to try butternut squash risotto next. I really was surprised how much oil and butter were in the recipe. I have to see about cutting that back because 1/4 cup of oil is a lot!

Neurosis #2

I like coupons, really like coupons. I have the Sunday Boston Globe subscription because of the coupons and I love that Price and I get up on Sundays with coffee/tea and lounge for a bit with the paper. I have always loved the idea of making a Sunday morning around the paper and now we have. Like this past Sunday started off with the paper, the Target flyer, and then a trip to target for a 3 in 1 printer that was on some crazy sale for $40 (our old one broke about 2 months ago). Yay!

Well, I go though the coupons, snip them out, and organize them for shopping. I end up with a pretty mean stack of coupons. They are organized by aisle and how the store is laid out. I admit it takes me well over an hour to go shopping, which is why Price thinks I’m crazy and I won’t let him go with me. His idea of shopping it doing a mad sprint though the store getting the things he needs then. So if we are ever at the store together it usually ends with me looking around for Price since he ran off with the cart to make me go faster.

I went food shopping last night and was in my element- I’m such a nerd. So here is the breakdown….

that’s right I save 1/3 of my grocery bill on sales and coupons!
 

Sure, I’m a bit crazy about the coupons but I don’t go so far as signing up for coupons online, I just don’t have time for that. But I take my time shopping and I stock up on things that are on sale… like we probably have 6-8 months with of clothes detergent now, tp, shampoo, and a years worth of toothpaste, etc. Okay, I admit that is bizarre but I can’t pass up $13 detergent that I can get for $8 that will last us for 3 months. Plus, to be quite honest, I enjoyed the annoyed look from the guy last night checking me out. I explained to him that I separated the items to make things easier because i have a lot of coupons but he just rang one item in and changed its total quantity, when I gave him the coupons he had some major issues since the coupons are very specific. Serves you right for trying to cut corners.

This insane bulk shopping might run in my family since my grandma likes to call up Keurig and buy about a lot of coffee and tea at once. I mean A LOT! Luckily she likes to share so Price and I have a major stash of coffee and tea… 28 boxes, and in each box is 25 servings of coffee/tea. So we have about 1 1/2 years’ worth at this point. Hehe

Mysteries of Me class: Progress

I am taking Elizabeth Kartchner’s Online class called Mysteries of Me. I love it since I ordered the kit and received fabulous products and the lessons are great. The kit included great paper, digital files, ribbons, brads, Tim Holtz’s Distress Crackle paint, & much more. I got the Crackle Paint in Worn Lipstick- I had never used it before but I know I will used it a lot since I just love the crackles that it makes.

I love the idea of a book hidden inside another book. I bought 2 books but Pricer said I should used this one since it had a cool illustration on the cover. I still need to add my lettering to it- must find gold rub-ons.

I added my initials to the boo using rub-on from the kit before I mod podge’d it to make all the pages stuck together.

I love the cover with the layered tag, papers, flower, charm, and ticket. I sponged the ticket with SU!’s Pink Passion ink.

 I still have a  lot of work to do but I think the book is coming a long nicely. I need to focus on getting my pictures together to edit and have them printed.

I’m hoping to have this all done next weekend.. I just have stupid things in my way, like a 10- page paper due on Wed. Oh well, school has to come first.

Piper-do

Last night my Mom sent me some pictures of our dog Piper enjoying a new bone. I had a rough week with lots of homework and little sleep for a degree project review on Thursday night, so it was nice to check my email after class and see Pipes. Totally cheered me up.

My Mom got Piper for my 13th birthday… such a great present!!  She was high-strung, hyper, and jumpy when we first got her- her first vet visit revealed she was abused before we got her. Through love and hard work she is good now. Which I find impressive since she really did not pass dog school. Our teacher made us promise to keep working with her as we got the diploma, basically Piper was such a handful in class that she was slowly the rest of the dogs down and making them act up. Since then she has calmed down, plus gotten more mature now that she is 12. It’s hard to see her more sluggish and sleeping more but I love when she acts like a puppy and attacks a bone or playfully runs after Cobi, our 4-year-old chocolate lab.

I named Piper but she really has several names. When she and my mom’s friend’s son were young he used to call her Hyper or Hyper Piper. Now she is Pipes, Piper-do, and Piperdoiloveyou. This is the case with Cobi also, his name is from the cigar brand Cohiba. I call him Chewbacca since he makes this wookie like sound when he wants to go out.

Piper has stayed at home since I moved to Boston for college and I miss her terribly. When I first would come home she used to be excited to see me but now she is more excited to see Price. I go in the house first and she jumps and greets me giving my hands kisses and stretching up on my legs, then she sees Price come in and she gets 100x more excited to see him and she ditches me. After all this excitement  she lays down and stares at me. I call her over to the sofa and she just stares. I call her over and over again. Prices says ‘Piper Come!’ and she flies across the living room to him, sits down and leans on him. She is much better when he is not with me but generally now I get the cold shoulder since she has figure out I show up for 2 days and then I’m gone for 1-2 months. It excites me to no end if she actually stays in my room and sleeps with me or stays with me on the boat.

My mom has brought Piper up for overnights when she visits but I had Pipes up to Boston 2x for stays, once for several weeks and for a week. She sorta taught my old roommate’s puppy that it is not acceptable to bark so much. It was great to have her up and for a break from a howling beagle puppy. On the last day of her last visit I brought her into work. We were in our old space so things were a little less strict there. I still ‘snuck’ her in by putting her in a bag so security would not see her. This has to be one of my all time favorite pictures of her. It has been my desktop image for over 2 years now.
