I love watching Dancing with the Stars. LOVE IT. I can’t dance to save my life. So I love watching people dance. It amazes me that people can move their bodies like that. And I can’t resist DWTS because there are people to support and cheer for. And this year… Nick Carter… I just can’t handle it. He was my boy band crush for years. Cheering him on now is like reliving my middle & high school years watching him on TRL and award shows, except now I’m drinking wine while watching.

I can’t wait to watch the rest of this season.

if I had to pick only one ice cream to have for the rest of my life it would be Cookies and Cream. It’s an obvious choice. I love it. My hands down favorite.

So when I was scheming to make another recipe for my #WaffleWednesday posts I started to think about making a waffle to celebrate my love of the best ice cream flavor of all time And that’s how I came up with this Cookies and Cream Waffle.

Cookies and Cream Waffle

Makes 4-6 waffles, depending on amount of batter you use for each waffle

Ingredients

For the waffles

  • 8 Oreo cookies, crushed
  • 1 egg
  • 1 Cup all-purpose flour
  • 3/4 Cup + 2 Tablespoons milk
  • 1/4 Cup vegetable oil
  • 1 Tablespoon sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

For the whipped cream

  • 1 Cup heavy whipping cream
  • 8 Oreo Cookies, crushed

Optional Toppings

  • Vanilla Ice Cream
  • Chocolate Sauce
  • Roughly chopped Oreo Cookies

Process

  1. Preheat waffle iron.
  2. Vigorously whisk the egg, milk, and oil in large bowl.
  3. Mix in flour, sugar, baking powder, salt, and vanilla extract until just smooth. Fold in the crushed Oreo Cookies.  
  4. Spray the preheated waffle iron with a non-stick cooking spray.
  5. Ladle 1/3-1/2 cup of the batter the onto hot waffle iron. Cook until golden brown. Remove and place on a cooling rack
  6. While the waffles are cooking, make your whipped cream by beating in a large bowl or in a stand mixer until you have stiff peaks. Fold in the crushed Oreo Cookies.
  7. Assemble your waffle by topping one with whipped cream, ice cream, chocolate sauce, and more Oreo Cookie pieces.

Chocolate Chip Cookie Bars

This weekend Price and I went to visit a wedding venue location in the Berkshires. I guess we should do some sort of wedding planning… only been together 9+ years and engaged since Sept. Oh, yeah… and we have a baby together. Been kinda busy with her.

Well, Crissey Farm has beautiful details, great menu options and price points, and it’s in a  great location. Unless something incredible jumps out to us this week it seems like that is the place. Plus they have availability in August, November, and this winter.

The owner suggested a New Year’s Eve wedding as they have had so fun ones in the past. He explained that we could get married in front of one of their fire places. I love that idea, but I loved the idea of getting married on 1/2/15 even more as that would be our 10 year anniversary together. But once Price and I thought about the logistics of everyone traveling from WA, AZ, PA, NY, NH, CT, AND FL it became to risky in dealing with travel issues. This winter sucked, and it snowed 8″ inches on our anniversary, so we ultimately decided that was not a risk we would want to deal with.

So that leaves August and November. We quickly ruled out November as all the leaves have fallen at that point so it just won’t be as pretty for pictures. Plus, we would be juggling with Autumn’s first birthday and then Thanksgiving. Just too much going on there.

Now if you look at the calendar you would see that there are only a few months between now and August. So if we decide on that things will be fast passed. That really is okay since the simpler the better for us. Plus Crissey Farm is basically 1 stop shopping since they handle everything so we don’t need to worry about silly suff like linen rentals.

Anyway, if we’re actually cracking down and getting married this year I better stop eating sweets like this!

Well, honestly, breast-feeding and it’s associated weight loss is THE BEST thing ever. hehe! So, I’ll get to enjoy a few of these every now and then.

I used the Nestle Toll House Spring Time Baking Morsels instead of just a bag of semi-sweet chocolate chips. The Spring Time bag is only 10oz so jut be sure to add another 2oz of chocolate chips to get to the 12 oz needed for the recipe.

These are basically just cookies but they have a softer texture because there is less surface area to them in the bar form compared to the cookie form. Love that. Just like I love the sugar cookie bars I made before.

Chocolate Chip Cookie Bars-3

Chocolate Chip Cookie Bars

Makes 24 bars

Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup (2 sticks) butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups (12-oz. pkg.) of semi sweet chocolate chips
  • 1 cup chopped nuts (optional)

Process

  1. Preheat the oven to 375 degrees. Grease a 13×9 metal pan.
  2. Combine the flour, baking soda, and salt in small bowl; set aside.
  3. Beat the butter, sugars, and vanilla extract in large mixer bowl. Add the eggs, one at a time, beating well after each addition.Gradually beat in flour mixture. Stir in the chocolate chips and nuts.
  4. Spread into the prepared pan.
  5. Bake for 25 minutes or until golden brown. Cool in pan on wire rack. Cut into 24 bars.

Andes Mint Chip Brownies

Andes Mint Chip Brownies

I’m kinda hooked on brownies.

I have been baking them up like crazy lately and have plans on several more different kinds of batches to bake up in the next few weeks. I kinda can’t wait!

Anyway, I whipped up these Andes Mint Chip Brownies up right after Christmas so that I could start to feel a bit more normal after having my typical life (showering, cooking, baking, eating, thinking) had been flip flopped after having Autumn. They are so quick and easy to whip up that even I can do them with new mommy brain!

The base for these brownies might just be my favorite. It might be the butter. Or the chocolates. Or maybe it’s the butter AND the chocolates. Maybe it’s the combo of it all. Probably that all together they create a soft, yet sturdy, brownie. I’ve made plenty of really soft brownies that just about need a spoon to eat them (de-lightful!) but these are bake sale brownies. What I mean by that is that you can cut them easier from the pan and could easily package them up to sell at the bake sale. Or toss into a lunch. Or delicately place on the rim of a glass of milk awaiting its sweet demise.

Adding the Andes Creme de Menthe Chips add such a great kick to the brownies. I just love this flavor. It just screams winter to me.

Since we’re still locked into this deep freeze from the “Polar Vortex” I think it would be a great idea to whip up a batch of these brownies to help you get through these cold days and nights. Days like this just call for a brownie and some hot chocolate.

Andes Mint Chip Brownies

Makes 24 brownies

Ingredients

  • 12 ounces of semisweet chocolate chips, divided
  • 1 cup (2 sticks) unsalted butter
  • 1/4 cup cocoa powder
  • 2 cups sugar
  • 2 teaspoon vanilla extract
  • 6 eggs, beaten
  • 1 1/2 cups flour
  • 1/2 teaspoon salt
  • 10 ounces Andes Creme de Menthe Baking Chips

Process

  1. Preheat oven to 350 degrees. Prepare a 9×13 baking pan by buttering/spraying with non-stick cooking spray the bottom and sides and lining the bottom with parchment paper or tin foil.
  2. In a large microwavable safe bowl, melt 8 ounces of the chocolate chips and the butter together, stirring every 30 seconds until completely melted and combined.
  3. Add the cocoa powder and sugar, mixing completely.
  4. Add in the beaten eggs and vanilla extract.
  5. Stir in the flour, salt, remaining chocolate chips, and the Creme de Menthe chips to gently incorporate.
  6. Pour into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted in the center is clean upon removal. Do not over bake. Let cool prior to cutting into 24 pieces.

Cherry White Chocolate Chip Cookies

It was so chilly the other night that I couldn’t help but thinking of how summer is winding down and that I just have to deal with it. Fall is approaching whether I want it to or not. Don’t get me wrong, I love fall, but it’s that evil winter that follows that hurts. But on the positive side turning on the oven for roasting and baking will warm the house and smells will fill it up with love.

While I had really considered making meat pasties, a Michigan favorite, I couldn’t resist making another sweet cherry treat for this week’s edition of Sprint Cup Snacks for this weekend’s race at Michigan International Speedway. Especially since I’ve been craving sweets lately. So the idea of the sweet smell of cherries filling up the house was just too irresistible to pass up.

I had so much fun looking up desserts using cherries and while the idea of making coffee cake, blondies, and hand pies all sounded awesome I decided on making cookies. I have had cookies on the mind for weeks so I finally got to stretch my baking legs and but my mixer to use.

These Cherry White Chocolate Chip Cookies are some big cookies! I don’t think anything gets better than big fresh from the oven cookies. Well, maybe world peace but cookies can be homemade in under an hour so let’s just go with that. So grab a big glass of milk and a cookie (or a few) and enjoy!!

Cherry White Chocolate Chip Cookies

Makes about 24 large cookies

Ingredients

  • 4 1/4 ounces cake flour (1 cup)
  • 4 1/4 ounces all purpose flour (1 cup)
  • 1/2 teaspoons baking soda
  • 3/4 teaspoons baking powder
  • 3/4 teaspoons Kosher salt
  • 10 tablespoons unsalted butter, room temperature
  • 5 ounces light brown sugar (scant 3/4 cups packed)
  • 4 ounces granulated sugar (1 cup, plus 3 tablespoons)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 8 oz white chocolate chips
  • 5 oz dried cherries

Process

  1. Preheat theoven to 350 degrees. Line insulated baking sheets with parchment paper; set aside.
  2. Sift the flours, baking soda, baking powder, and salt into a bowl with a wire whisk. Set aside.
  3. In bowl of electric mixer, cream together the butter and sugars until very light, about five minutes. Add in the egg and vanilla extract, mix well. With the mixer on low, add the dry ingredients and mix just until combined. Stir in the white chocolate chips and dried cherries with rubber spatula.
  4. Use a cooking scoop or spoons to drop dough onto prepared baking sheet. Bake 13-15 minutes, or until golden brown and set in the middle.
  5. Allow cookies to cool on sheet for 5 minutes before transferring to cooling racks to cool completely.

Caramel Apple Crumble Bars

Now that we have unofficially hit summer, I’m gearing up to get ready for some BBQ’s this year. We always end up going to quite a few but I’m hoping that we do our fair share of hosting this summer as well. (Maybe we should buy a patio set? eek!) So I’m looking to get creative with our summer fare this year. We have great, fresh meat, fruits, and veggies at our fingertips so why not have some fun with them?

That there alone is justification to spend plenty of time on Pinterest, no? Oh, man so addicted to that damn site! But it’s so much fun to find interesting recipes to make on the grill or to serve along side of your burger, grilled sausage, or chicken. I love giving anything a try, especially if it’s a twist on something. After making a wing sauce with apple butter I’m all of trying anything because you can be surprised with anything. Really, apple butter in a wing sauce? Trust me, so good.

Well, when Musselman’s contacted me again to work with them so I can try a recipe that would be great for summer time BBQ’s I jumped at the chance. I browsed through their recipes and while their bacon baked beans and their BBQ sauces sounded great I wanted to make something that I could easily share now. So that means I turn to something I can bring into work… which means sweet treats! This recipe for Caramel Apple Crumb Bar would be perfect!

These were so easy to make and the result was a really good caramel-y apple packed bar. They were a hit with everyone that had a piece. Don’t you just love when that happens? 🙂 I swear I’ll be making these again but next time I’ll definitely remember to grease the pan this time. FACEPALM! Other than that a total success.

Caramel Apple Crumble Bars_01

Caramel Apple Crumble Bars

Makes 32 bars

Ingredients

Crust

  • 1 18.25 ounce box of yellow cake mix
  • 2 sticks butter, softened
  • 3/4 cup Musselman’s Apple Butter
  • 1 egg

Caramel Layer

  • 1 14-ounce package of vanilla caramels, unwrapped
  • 2 tablespoons butter
  • 3 tablespoons Musselman’s Apple Butter

Topping

  • 2/3 of a cup of chopped walnuts
  • 2/3 cup shredded coconut
  • 2 tablespoons melted butter

Process

  1. Preheat oven to 350 degrees. Grease a 13×9 baking dish.
  2. Beat the cake mix and butter on low speed until the mixture is crumbly. Remove 1 cup of the mixture, set aside. 
  3. Add the apple butter and egg to the remaining cake mixture. Beat on medium speed until smooth. Spread into the prepared baking dish and bake for 20 minutes, or until it’s starting to brown and set.
  4. While the crust is baking, combine the vanilla caramels, butter, and apple butter in a microwave safe bowl. Microwave on high for 3-4 minutes, stirring every 30 seconds until melted and smooth.
  5. Combine the topping ingredients with the cup of the reserved cake mixture until crumbly.
  6. Pour the caramel mixture over the partially baked crust. Evenly sprinkle the crumbly topping over the caramel. (Some of the caramel will show through.)
  7. Bake for 16-18 minutes, or until the topping us starting to brown. Cool completely prior to cutting into 32 bars.

Caramel Chocolate Kiss Cookies

So Price and I are having some issues lately. It all boils down to the impulses I have related to buying tons of candy for cookies and other treats and his impulses to eat every candy that comes into the house. I can barely care that we have baskets full of candies like m&m’s, peanut butter cups, and kisses at arms reach. But for Price and his sweet tooth it’s pure torture. So he stares longingly at the bags and bags of candy that hang around until I get a chance to incorporate them into some baking. And he knows that if he eats that candy before I get around to baking… trouble. ha!

When I got around to making these I thought he was going to do some cart wheels in the living room. Or maybe a Carl Edward’s like back flip off the sofa. I have to put him to work every now and then so I got Pricer involved to squish the kisses into the just baked cookies.  And then in a blink he was trying a freshly baked cookie. They are best warm from the oven since the center caramel is soft and melty. To enjoy that after they have cooled just pop them in the microwave for 10-15 seconds.

I adapted the Cookie Trio recipe to create the cookie base part. I browsed all of the different cookie recipes on Hershey’s to figure out the recipe to use with the Caramel Kisses. I wanted to keep things simple so I kept with a chocolate base to pair well with the chocolate and chocolate candy. The result are a pop-able bite sized cookie that is perfect for  the holidays, cookie swaps, and bake sales.

Caramel Chocolate Kiss Cookies

Makes 48 cookies

Ingredients

  • 1/2 cup (1 stick) butter or margarine , softened
  • 1/2 cup shortening
  • 1 cup sugar
  • 1  egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup unsweetened cocoa powder
  • 48  Hershey’s caramel kisses, unwrapped

Process

  1. Preheat oven to 350 degrees. Line baking sheets with parchment paper.
  2. In a bowl, combine the flour, baking powder, salt, and cocoa powder. Set aside.
  3. Cream together the butter, shortening and sugar.  Add in the egg and vanilla extract. Gradually beat the flour mixture into butter mixture.
  4. Divide the dough mixture into 4 equal portions. Then from each portion create 12 1-inch balls. Place each ball on the parchment lined baking sheets.
  5. Bake 9 to 11 minutes or until cookies are just set. Remove from oven and immediately press a chocolate kiss into the center of the cookie. Cool 1 minute prior to removing to cool on a wire rack.
